Perfect Red Beans and Rice image

Provided by Penny Stettinius

Categories     One Dish Meal

Time P1DT5h

Yield 30 serving(s)

Number Of Ingredients 17

2 lbs red kidney red beans, preferably Camellia brand, washed and drained
2 large onions, chopped
4 celery ribs, chopped
6 bay leaves
24 drops Tabasco sauce or 24 drops hot sauce
1 tablespoon italian seasoning
1 teaspoon italian seasoning
1 tablespoon creole seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon Worcestershire sauce
1 teaspoon Worcestershire sauce
2 teaspoons soy sauce
2 teaspoons Kitchen Bouquet
20 cups water
2 -3 lbs ham seasoning, cut up
cooked long-grain rice, for serving

Steps:

  • In a very large mixing bowl (or a 12-quart non-reactive pot, or two 6- to 8-quart pots), combine all ingredients except ham, sausage and rice. Cover and refrigerate for 24 hours.
  • When ready to cook, place all in a pot with the ham and sausage.
  • Bring to a boil, then lower heat, cover, and strongly simmer (preferably without skimming), for 1 hour; stir as needed to keep beans from sticking.
  • Reduce heat and slowly simmer, covered, between 2 and 4 hours, or until mixture is very thick and beans are tender.
  • During the slow-simmering process, stir frequently, especially toward end of cooking time, adding more water to pot only if dish seems too dry.
  • About 1 hour before done, periodically mash some of the beans with a potato masher, scraping pan bottom clean after each mashing; try to mash about 40 percent of the beans.
  • Serve immediately over rice or, preferably, let beans cool and refrigerate overnight.
  • Reheat for serving.

RED BEANS AND RICE

Red Beans and Rice image

Provided by Food Network

Categories     main-dish

Time P1DT3h45m

Yield 6 to 8 servings

Number Of Ingredients 22

1 pound dried red kidney beans
8 cups vegetable or chicken stock, plus more as needed
2 tablespoons vegetable oil
1 large onion, chopped
3 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 1/2 pounds seasoning meats, such as tasso, ham ends, ham bone or pickled pork, chopped
1 clove garlic, chopped
1/4 cup liquid smoke
1/4 cup Worcestershire Sauce
2 tablespoons granulated garlic
1 tablespoon granulated onion
1 tablespoon freshly ground black pepper
1 tablespoon brown sugar, optional
2 to 3 dried bay leaves
Kosher salt
8 ounces pecan- or hickory-smoked andouille sausage, sliced on the bias
1 1/2 cups long-grain white rice
1/2 cup chopped green onions
1/2 cup roughly chopped fresh parsley
Louisiana-style hot sauce, for serving
Yellow or Creole mustard, for serving

Steps:

  • Put the beans in a large bowl and add enough stock to cover by about 1 inch. Cover and refrigerate for 24 hours. (Water is not recommended for soaking the beans as it adds nothing to the flavor and does not soften the beans quite as well as stock does.)
  • Add 1 tablespoon of the vegetable oil to a large saute pan over medium heat. Add the onions and cook until translucent, 2 to 3 minutes. Then add the celery and bell peppers, and cook until softened, slightly brown and giving off a pleasant aroma, about 3 minutes. Then add the seasoning meats and chopped garlic, and cook until browned, 4 to 5 minutes. Divide in half and reserve.
  • Remove the beans from the refrigerator (they will have expanded nicely and their skins should be bursting by now). Add the beans and soaking liquid to a large stockpot, and add additional stock to cover the beans by several inches.
  • Set the stockpot on the stove, bring it to a slight boil and reduce to a heavy simmer. Stirring vigorously, add the liquid smoke, Worcestershire sauce, granulated garlic, granulated onion, black pepper, brown sugar if using, bay leaves and half of the seasoning meat mixture. Simmer for 2 1/2 to 3 hours. (To get "New Orleans cream-style" beans, which are preferable, you can continue to simmer until the beans break down, about 1 hour more.) Season with salt, remove from the heat and let cool in the stockpot to room temperature. Refrigerate overnight. (The beans can be eaten after seasoning with salt, but refrigerating them overnight improves the flavor of the dish.)
  • Remove the stockpot from the refrigerator and gently reheat on the stove, stirring in 1/2 cup stock to loosen up the coagulated bean mixture. When the beans reach a boil, reduce to a heavy simmer, stirring frequently as to not let the beans at the bottom of the pot burn. Taste and adjust the seasoning as desired.
  • Heat the remaining 1 tablespoon vegetable oil in a small saute pan over medium heat. Add the andouille sausage and cook until brown on both sides, about 1 minute per side.
  • Bring 3 cups water to a boil in a small stockpot. Add the rice, bring it back to a boil and cook for 3 minutes. Cover the stockpot, remove from the heat and let steam for 15 minutes. Remove the lid and transfer the rice to a small baking sheet to cool slightly.
  • Reheat the remaining seasoning meat mixture. Divide the seasoning meat mixture, beans and andouille sausage among bowls, top with a scoop of rice, and sprinkle with the green onions and parsley. Serve with hot sauce and mustard.

RED BEANS AND RICE

Red Beans and Rice image

Categories     Beans

Time 2h

Yield 8 serving(s)

Number Of Ingredients 13

1 lb red kidney beans, dry
1 large onion, chopped
1 bell pepper, chopped
5 celery ribs, chopped
4 -5 garlic cloves
3/4 lb smoked ham, diced
1 lb andouille sausage, sliced on the bias
1 teaspoon dried thyme leaves, crushed
1 -2 bay leaf
2 -3 dashes Worcestershire sauce (to taste)
1 tablespoon ground red pepper (to taste)
1 teaspoon ground black pepper (to taste)
4 -5 dashes Crystal hot sauce (to taste) or 4 -5 dashes Tabasco sauce (to taste)

Steps:

  • Soak the beans overnight. Drain the water and cover the beans with a double volume of fresh water in the pot. Bring the beans to a rolling boil. Boil the beans for about an hour, until the beans are tender but not falling apart. Make sure the beans are always covered by water, or they will discolor and get hard. Drain when done.
  • While the beans are boiling, sauté the onions, celery, and bell pepper until the onions turn translucent. Add the garlic and saute for 2 more minutes, stirring occasionally.
  • After the beans are boiled and drained, add the sautéed vegetables to the beans, then add the ham, sausage, seasonings, and just enough water to cover.
  • Bring to a boil, then reduce heat to a low simmer. Cook for 2 to 3 hours, until nice and creamy. Adjust seasonings as you go along. Stir occasionally, making sure that it doesn't burn and/or stick to the bottom of the pot. [Note: old beans -- older than six months to a year -- may not get creamy. If this happens, take a cup or so out and mash them, then return them to the pot and stir].
  • Serve generous ladles-ful over hot, long-grain, white rice.
  • In some New Orleans restaurants, it's traditional to serve Red Beans and Rice with chopped, pickled onions. The addition of the vinegar from the pickled onions really makes the beans "pop".
