Crock Pot Bourbon Chicken is easy and delicious! Tender juicy chicken is cooked in a rich bourbon ginger sauce for a delicious meal. We love this Crock Pot meal served over rice with a side of steamed broccoli.

3 lbs boneless skinless chicken thighs
3 tablespoons cornstarch
¼ cup sliced green onions ((or more to taste))
½ teaspoon fresh grated ginger
4 cloves garlic (, minced)
½ teaspoon crushed red chili flakes
⅓ cup apple juice
1 ½ tablespoons honey
¼ cup brown sugar
¼ cup ketchup
3 tablespoons cider vinegar
¼ cup water
¼ cup Bourbon
¼ cup soy sauce
salt & pepper to taste

Steps:

  • Mix all sauce ingredients in a small bowl.
  • Place chicken in slow cooker, pour sauce over top. Cover and cook on low 6-7 hours or on high 3 hours.
  • Remove chicken and chop into bite sized pieces and cover to keep warm.
  • Meanwhile, combine 3 tablespoons water with cornstarch. Turn slow cooker up to high. Whisk cornstarch slurry into the sauce. Cover and allow to thicken, stirring occasionally (about 10 minutes). Stir chicken back into the sauce and add in green onions.
  • Serve over rice.

2-3 lb chicken breast halves, skinless and boneless
1/2 tsp ground ginger ( can use less if you like a liighter ginger flavor
1/4 tsp cayenne pepper (more if you like it spicy) i have to keep it somewhat mild for my hubby
1/4 tsp sea salt or kosher salt
2 Tbsp cornstarch
2 clove garlic, crushed
1/3 c brown sugar, light
2 Tbsp olive oil, extra virgin
2 Tbsp applesauce, unsweetened
2 Tbsp ketchup
1 Tbsp cider vinegar
1/4 c bourbon ( i used jim beam )
1/3 c soy sauce, light
1/2 c water

Steps:

  • 1. Cut chicken breast into bite size pieces and add to crock pot.
  • 2. In a medium bowl add the remaining ingredients and whisk until well blended; pour over the chicken in the crockpot and give a quick stir.
  • 3. Cook on low for 8 hours or 4 hours on high. Serve over steamed Jasmine Rice with a side of steamed broccoli and carrots.
  • 4. Will post an actual picture later. My camera battery died last night before I could get a picture of finished product. ;(

2 lb boneless chicken breasts cut into bite-size pieces
2 Tbsp cornstarch
2 Tbsp extra virgin olive oil
2 garlic clove crushed
1/4 tsp ginger
3/4 tsp crushed red pepper flakes
1/4 c light apple juice
1/3 c light brown sugar
2 Tbsp organic ketchup or chili sauce (depending on how hot you like stuff)
1 Tbsp cider vinegar
1/2 c water
1/3 c reduced sodium soy sauce

Steps:

  • 1. Whisk all ingredients into crock pot and add chicken.
  • 2. Cook on low for 8 hours or high for 4.
  • 3. Serve over rice or mashed potatoes.

1 lb dark chicken meat
4 ounces soy sauce
1/2 cup brown sugar
1/2 teaspoon garlic powder
1 teaspoon powdered ginger
2 tablespoons dried onion flakes
1/2 cup Jim Beam bourbon whiskey
2 tablespoons white wine

Steps:

  • Either pull apart or cut chicken meat into bite size chunks.
  • Mix all the marinade ingredients and pour over chicken pieces in a bowl.
  • Cover and refrigerate (stirring often) for several hours (best overnight).
  • Bake chicken at 350 for one hour in a single layer, basting every 10 minutes.
  • Remove chicken.
  • Scrape pan juices with all the brown bits into a frying pan.
  • Heat, and add 2 Tbs. white wine.
  • Stir and add chicken.
  • Cook for 1 minute and serve.

  • Optional: marinate the chicken thighs by placing them in a shallow baking dish. In a small bowl, stir together the soy sauce, apple cider vinegar, bourbon, brown sugar, maple syrup, garlic, ginger, and black pepper. Pour over the chicken. Cover the dish tightly and refrigerate for as long as time allows (a few hours or overnight).
  • Lightly coat a 4-to-6-quart crock pot with cooking spray and arrange the chicken thighs in the bottom of the slow cooker. Pour the sauce (marinade) over the top, cover the crock pot, and cook on low for 6-7 hours or on high for 2 1/2 - 3 hours, until tender and cooked through.
  • Remove the chicken from the crock pot to a serving plate and cover to keep warm. Strain the cooking liquid into a small sauce pan and place on the stove.
  • In a small bowl, whisk together the cornstarch with 2 tablespoons water to create a slurry. Heat the saucepan on medium high, then whisk the slurry into the cooking liquid until evenly combined. Cook, stirring constantly, until the sauce bubbles. Continue cooking and stirring until glossy and thickened, 1-2 minutes. Remove from heat. Pour the sauce over the chicken, then sprinkle with green onions. Serve warm with rice.
