SESAME CRACKERS - THIN AND CRISPY

1 1/2 tsp active dry yeast ((7 g; see notes))
1 3/4 cups warm water ((420 ml, 105° to 115°F))
1 Tbsp diastatic malt or honey ((15 ml))
1/2 oz kosher salt ((15 g))
2 ½ Tbsp Asian sesame oil ((40 ml))
6 oz whole wheat flour ((170 g))
20 oz bread flour ((568 g))
1/2 lb sesame seeds ((228 g; a mixture of black and white))

Steps:

  • In the bowl of an electric mixer, dissolve the yeast and the honey in the warm water. Let it sit for 10-15 minutes, until the yeast activates and a foam cap forms.
  • Mix in the salt and the sesame oil. Using the dough hook attachment, incorporate the whole wheat flour and all but a handful of the bread flour. Knead until a smooth, elastic dough develops. Keep adding more flour if necessary. Incorporate the sesame seeds. Remove the bowl from the mixer, cover and place in a warm place for 1 hour to proof.
  • Cut the dough into 4-6 pieces. Flatten each piece with your hands or a roller to about ¼ - inch thick. Cover the dough pieces with a piece of plastic wrap and let relax for 15 minutes. Roll each piece out to #6 setting on the KitchenAid pasta roller attachment, which is about 1/64 inch or about 0.5 mm thick (see notes).
  • Lay the rolled out dough on a large baking sheet lined with parchment paper. Cut the dough sheets into crackers of the desired size and shape. Large triangles or wedges work particularly well. Bake immediately (do not let them rise, or the crackers will be thick instead of thin and crisp) at 375°F (190°C) until deep golden brown (see notes). Rolled out to #6 they need 14-15 minutes of baking.
  • Store in airtight containers.

  • Heat oven to 400°F. Grease cookie sheet.
  • In medium bowl, stir Bisquick® mix and water with fork until soft dough forms. Pat dough into 10-inch circle on cookie sheet. Brush with margarine. Sprinkle with sesame seed; press firmly into dough with rubber spatula. Cut dough into 12 wedges.
  • Bake 15 to 20 minutes or until golden brown. Serve warm.

1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
8 tablespoons (1 stick) unsalted butter, room temperature
1 cup packed light-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup hulled sesame seeds, toasted

Steps:

  • Heat oven to 350 degrees. Line four baking sheets with parchment paper, and set aside. Sift together flour, salt, and baking soda, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy. Add egg and vanilla, and beat until combined. Add reserved flour mixture, and beat until combined. Add toasted sesame seeds, and beat until incorporated.
  • Using a spoon, drop cookie batter, about 1 tablespoon at a time, onto prepared baking sheets, allowing at least 2 inches between cookies for spreading.
  • Bake until golden, 6 to 8 minutes. Remove from oven, and cool on a wire rack.

100g medium oatmeal
100g plain flour , plus extra for dusting
1 tsp bicarbonate of soda
2 tsp poppy seed
2 tbsp sesame seed

Steps:

  • Heat oven to 200C/180C fan/gas 6. Melt the butter in a small pan, then allow to cool slightly. Tip all the dry ingredients into a bowl, with ½ tsp salt, then pour in the butter. Add 5-6 tbsp boiling water and combine to make a firm dough.
  • Turn out the dough onto a lightly floured surface, then roll out until about 0.5cm thick. Cut into small squares, then bake for 12-15 mins until golden. Leave to cool for a few mins, then transfer to a wire rack and cool completely.

  • Stir together all ingredients (dough will be crumbly).
  • Turn dough out onto a lightly floured surface.
  • Knead 3 or 4 times.
  • Pat or roll dough to 1/2 inch thickness; cut with a 2 1/2 inch round cutter, and place on a lightly greased baking sheet.
  • Bake at 400°F for 18 to 20 minutes or until golden.

1 1/4 cups self-rising flour
1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes
1/4 lb chilled Roquefort cheese such as Le Vieux Berger, Société, or Le Papillon, crumbled (1 cup)
1/3 cup sesame seeds (2 oz)

Steps:

  • Pulse flour and butter in a food processor until mixture resembles coarse crumbs. Sprinkle cheese into mixture and pulse a few times to incorporate. Transfer mixture to a work surface (it will be crumbly) and knead briefly to distribute ingredients (do not overwork), then press together to form a dough and roll into a 7-inch log (about 2 inches in diameter). Wrap tightly in plastic wrap and chill until firm, at least 1 hour.
  • Put oven rack in middle of oven and preheat oven to 350°F. Grease a large baking sheet.
  • Put sesame seeds on a plate. Cut dough into scant 1/4-inch-thick slices with a thin sharp knife, then gently press both sides of each biscuit in sesame seeds to coat and arrange 1/2 inch apart on baking sheet.
  • Bake until golden, 10 to 15 minutes. Cool biscuits on baking sheet on a rack 2 to 3 minutes, then transfer with a spatula to rack to cool completely.

1kg red-skinned potato , such as Desirée, skins left on and cut into wedges
2 tbsp olive oil
1 tsp dried oregano
1 tsp garlic granules (we used Bart)
juice 2 lemons
150ml vegetable or chicken stock
2 tbsp sesame seed

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the wedges in a single layer in a roasting tin. Whisk together the olive oil, oregano, garlic granules, lemon juice and stock. Pour the liquid over the potatoes, ensuring they are well coated. Season and bake for 1 hr, stirring every 15 mins so they don't stick to the tin.
  • Add the sesame seeds, increase the heat to 220C/200C fan/gas 7, and bake for a further 10 mins.
