Steps:
- Peel bananas and cut in half.
- Sift flour, cornflour, baking powder and salt into bowl.
- Mix to smooth batter with the milk.
- Beat egg white until soft peaks form, fold lightly into batter.
- Drop banana pieces into batter, then deep fry in hot oil until golden brown.
- Remove and drain on absorbent paper.
- Toss in sugar.
- (frying time is approx) Serve hot with ice cream or whipped cream.

- In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
- Heat the oil in a large skillet to 365 degrees F (180 degrees C).
- Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

MA'S SECRET JAMAICAN BANANA FRITTERS
My Ma (grandma) has been making these banana fritters for me all my life and she's never given the recipe out to any one but me! Others in the family have tried, but they just don't come out the same. Even though these are probably really fattening, I love to eat them in moderation throughout the year because they're so addictive! Plus, it's a great way to get dh and the kids to eat a fruit!

Steps:
- Peel bananas and place into a large bowl. Smash them with a fork until they start to get somewhat runny. Add sugar, vanilla, milk, salt, and flour and mix until the "batter" just barely runs off of the spoon (just a little thinner than the consistency of pancake batter). If it is too thick, it will be too airy, like pancakes.
- Heat oil in a frying pan on medium heat.
- Once the oil is HOT, drop tablespoons of the batter in at a time, as if you were making mini pancakes.
- When the edges are firm, turn over and cook the opposite side. The fritters should be a medium-brown color, not light and not burnt. Drain onto paper towels and serve warm. Mmm -- .

I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

- In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
- Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

Very Quick, very simple dessert for those last minute need a dessert times. Choose firm bananas. These can be dressed and plated up to look very impressive. Serve with fruit of choice and ice cream.

- In a mixing bowl, mash the bananas with the sugar, salt (if using), flour and coconut cream into a sticky, slighty moist batter.
- Heat the oil in a wok or large saucepan until very hot (365 degrees).
- Using very moist fingers, pinch about 1 heaped tablespoons of the batter, roll it into a ball and glenty lower it into the hot oil Deep-fry for 3 to 5 minutes, turning occasionally , until crispy and golden brown on all sides. Do not overcrowd the pan with the batter or temperature of the oil will drop. Remove from the hot oil and drain on paper towels

- In large bowl, stir the flour and sugar together. With an electric mixer, beat in eggs one at a time while adding 1/3 cup of milk with each egg. Mix until the batter is smooth and stretches like a ribbon.
- Coarsely chop the bananas and place them in a bowl. with fork, mash the bananas into a smooth puree. Stir the puree into the batter and let the mixture rest for at least 30 minutes in a warm place before frying.
- Pour the oil into a deep saucepan to a depth of 2 to 3 inches and heat to 365 degrees (really important) Drop 2 tablespoons banana batter into the hot oil, deep-frying 2 or 3 fritter at a time leaving enough space so they can spread.
