This is an easy and delicious casserole. You can use a rotisserie chicken from the grocery store. Also, if you like, you could substitute cut-up cooked pork in place of the chicken. 1 teaspoon sugar
1/2 cup thick & chunky salsa
1 (19 ounce) can mild enchilada sauce
1 (11 ounce) can whole kernel corn, drained
2 cups tortilla chips, coarsely broken
1/4 cup green onion, sliced
1 medium tomatoes, chopped (3/4 cup)
1 cup monterey jack and cheddar cheese blend, shredded (try to use the kind with jalapeno peppers cheese blend)

Steps:

  • Heat oven to 350 degrees F.
  • In medium bowl, mix chicken, sugar, salsa, enchilada sauce and corn.
  • Place tortilla chips in an ungreased 8-inch square glass baking dish.
  • Top with chicken mixture.
  • Sprinkle with onions, tomato and cheese.
  • Bake 35-45 minutes or until hot and bubbly.
  • If desired, arrange additional tortilla chips around edge of dish.

2 cloves garlic, minced

1 tsp chili powder
1 can (28 oz) diced fire-roasted tomatoes

2 tbsp Better Than Bouillon Roasted Chicken Base
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn
1.5 cups shredded cooked chicken (or rotisserie chicken)
2 cups corn chips, divided
1 cup shredded Cheddar cheese
2 green onions, thinly sliced

Steps:

  • Preheat oven to 425˚F. Heat oil in large skillet set over medium heat; cook garlic, cumin and chili powder for about 1 minute or until fragrant. Stir in tomatoes, green chilies, Roasted Chicken Base, black beans and corn; bring to boil. Stir in chicken; return to boil.
  • Sprinkle half of the corn chips into bottom of greased 11- x 7-inch baking dish. Layer chicken chili mixture over top. Sprinkle with cheese and top with remaining corn chips.
  • Bake for 15 to 20 minutes or until cheese is melted and filling is bubbling. Sprinkle green onions over top.

1 ¼ cups milk
½ cup shredded processed cheese

3/4 cup egg substitute

  • Preheat oven to 425°. Drizzle butter in a 13x9-in. baking dish. In a shallow bowl, combine the cornflakes, flour and seasoned salt. Place egg substitute in another shallow bowl. 750ml (3 cups) good-quality chicken stock
2 x 200g skinless chicken breast fillets, trimmed, cut in half lengthways
1 tbsp vegetable oil
4 spring onions, thinly sliced, white and green parts separated
1 garlic clove, crushed
2 tsp finely grated fresh ginger
250ml (1 cup) water
3 to 4 corn cobs, kernels removed
420g tin creamed corn
2 tbsp light soy sauce
1 tbsp Chinese rice wine
1 tbsp cornflour
2 tsp sesame oil

Steps:

  • 1. Bring the stock to simmering point in a small saucepan. Add the chicken and simmer, covered, for 5 minutes. Remove the chicken with a slotted spoon and allow to rest for 10 minutes. Strain the stock and set aside. Finely shred the meat with two forks. 2. Heat a wok over medium-high heat, add the vegetable oil and swirl to coat the side of the wok. Add the white part of the spring onion, the garlic and ginger and stir-fry for 30 seconds. Add the stock, water, corn kernels, creamed corn, soy sauce and rice wine. Stir until the soup comes to the boil. Reduce the heat and simmer for 10 minutes. 3. Meanwhile, stir the cornflour, sesame oil and 1 tablespoon of water together in a small bowl until smooth. Add a little of the hot stock, stir together, then pour this mixture into the soup. Bring to simmering point, stirring constantly for 3 to 4 minutes, or until slightly thickened. Add the chicken meat and heat through. Season to taste with salt and freshly ground black pepper. Serve immediately, topped with the spring onion greens.

1 lb boneless skinless chicken breast (cut into small pieces)
1 cup chopped white onion
1 can cream of chicken soup
1 can chicken broth
1 can Rotel Tomatoes (your preference on hotness)
1 package corn chips (your preference)

Steps:

  • Melt butter over medium heat, add chicken and onions.
  • Cook chicken until it is just cooked through.

1 bell pepper ((any color), chopped)
2 garlic cloves (minced)

1 ¾ cups low sodium chicken broth ((one 14.5 ounce can))
1 cup salsa*
2 cups cooked shredded chicken*

6 ounces crumbled tortilla chips ((about 4 cups), divided)
1 ½ cups shredded Monterey jack and/or cheddar cheese (divided)
2 tablespoons chopped fresh cilantro (for garnish)

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook, stirring often, until softened, about 3 minutes. Add the garlic, cumin, paprika, oregano and cayenne pepper and stir for 30 seconds.
  • Stir in the chicken broth and salsa. Add the cooked shredded chicken, corn, black beans and half of the tortilla chips. Stir. Cover, reduce heat to low, and cook at a low simmer for 8 to 10 minutes, stirring occasionally, until almost all of the liquid has been absorbed. Remove pan from the heat.
  • Stir in 1 cup of the cheese. Add the remaining tortilla chips and stir them in just a little, leaving some on top of the casserole. Sprinkle the remaining ½ cup of cheese on top.

3 pinches salt
3 pinches ground black pepper

1 (10.75 ounce) can cream of mushroom soup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season chicken with salt and pepper.

2 tablespoons rice vinegar
¼ teaspoon Asian sesame oil

Steps:

  • Preheat the oven to 350°F.
  • Place the cashews on a baking sheet in a single layer. Toast in the oven until fragrant, about 5 minutes. Set aside; they will crisp up as they cool.
  • Meanwhile, prepare the sauce: in a small bowl, whisk together the water, cornstarch, hoisin sauce, and soy sauce. Set aside.
