Easy Oven Braised Pot Roast With Garlic and Thyme image

This is an easy, flavorful oven-braised pot roast with garlic and thyme, along with optional mushrooms, red wine, and potatoes.

1 pot roast (about 2 1/2 to 3 1/2 pounds - chuck or other suitable pot roast)
5 medium cloves garlic (halved)
Dash salt
Dash pepper
2 tablespoons olive oil
1 tablespoon unsalted butter
1 medium onion (quartered and sliced)
Optional: 4 ounces mushrooms (small whole or sliced)
3 tablespoons flour
1 1/2 cups red wine (such as pinot noir or cabernet)
1 cup beef broth
1 tablespoon fresh thyme leaves (or 1 teaspoon dried leaf thyme)
2 pounds potatoes (cut in 2-inch chunks)

Steps:

  • Gather the ingredients.
  • With a small sharp knife, cut 8 to 10 deep slits in the pot roast, spacing them evenly. Push half of a garlic clove into each cut. Heat the oil in a braising pan or large sauté pan or Dutch oven over medium-high heat.
  • Sear the roast, turning to brown all sides. Remove the roast from the pan and set aside.
  • Add butter to the hot pan and reduce heat to medium. When butter is foamy, add the onions and cook, stirring, until tender and lightly browned. Add mushrooms, if using, and cook for 2 minutes longer. Stir in flour and cook, stirring, for about 1 to 2 minutes longer. Stir in the red wine and beef broth. Continue cooking, stirring, until the liquids are thickened and bubbly.
  • Preheat the oven to 325 F.
  • Put the roast back in the pan and sprinkle with thyme. Cover with a lid or cover the pan tightly with foil and transfer to the oven. Cook for 2 hours.
  • Add the potatoes, cover, and continue cooking for 1 to 2 hours longer, or until the potatoes are fork-tender.
  • Serve and enjoy!

4-5 lb chuck roast
8 large cloves of garlic
1 Tbsp thyme (2 Tbsp is using fresh)
1 Tbsp parsley (2 Tbsp if using fresh)
8 medium red potatoes, quartered
4 medium onions, quartered
1 small bag baby carrots, cut in half
4 stalk(s) celery, chopped
1 can(s) diced tomatoes (14 oz)
2 Tbsp olive oil
3 c water, divided
sea salt and cracked pepper to taste

Steps:

  • 1. Preheat oven to 425 F. Put 2 Tbsp of olive oil in a skillet. Brown both sides of the chuck roast.
  • 2. Then put into a roaster pan. Next, peel and slice the garlic. Put into the same skillet with drippings and saute until lightly browned. Now put the garlic on top of the roast. Add 2 cups of water to the skillet to loosen any remaining drippings. Pour this over the roast. Sprinkle the thyme and parsley on top of the garlic.
  • 3. Cover and cook for 2 hours at 425 F. While this is cooking prepare your veggies to add to the roast.
  • 4. After 2 hours, add 1 more cup of water, the vegetables and diced tomatoes to the roasting pan. Stir gently.
  • 5. Cook roast for 1 more hour checking for the tenderness of the meat (it's done when the meat shreds with a fork and potatoes are tender, not mush).

My friend, Kendra, gave this to me and we like it too. Time given does not include the marinating. I use the snack size of tomato juice-trying to wash fewer dishes. LOL! A charcoal fire is tricky so you should check it.

5 1/2 ounces tomato juice
2 teaspoons brown sugar
1/2 teaspoon celery salt
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/8 teaspoon salt
3 lbs beef chuck roast, about 2 to 2 1/2 inches thick
salt, to taste
pepper, to taste
2 medium potatoes, cut into eighths
1 onion, sliced
2 parsnips (optional)
2 stalks celery, cut into 1 inch pieces (optional)
3 medium carrots, cut into 1 inch pieces
4 garlic cloves (or more)
1/3 cup beef broth
1/4 teaspoon thyme
1/4 teaspoon salt

Steps:

  • Pop tab of tomato juice, add through opening brown sugar, celery salt, garlic powder, pepper, and salt--shake it up.
  • Pierce roast several times and put into ziplock bag.
  • Pour tomato juice marinade over beef chuck roast.
  • Refrigerate for at least 5 hours.
  • Preheat grill for 10 minutes if it is a gas grill, or if it is a charcoal grill try to get coals to MEDIUM HIGH fire.
  • Discard marinade from roast.
  • Grill roast at MEDIUM HIGH directly on grate with hood down until well seared, about 20 minutes.
  • Line foil pan with enough foil so that later you can SEAL it.
  • In small bowl, mix beef broth, thyme, and salt.
  • Place seared meat, veggies, and garlic in pan; pour broth mixture over all.
  • SEAL with foil, grill for about 75 minutes-hood down.
  • Remove roast, let rest for 10 minutes, and then slice meat and serve with veggies.

This recipe is my personal favorite for pot roast. It tenderizes the toughest meats and produces a wonderful, flavorful gravy. It's best when cooked in a cast-iron Dutch oven. This is a whole meal in one pot, my favorite kind of meal.

1 tablespoon vegetable oil
1 (3 1/2) pound boneless beef chuck roast
salt and ground black pepper to taste
1 large onion, finely chopped
1 clove garlic, chopped, or to taste
2 ½ cups beef stock
1 (16 ounce) can diced tomatoes
¼ cup red wine vinegar
1 tablespoon brown sugar
2 bay leaves
¾ pound carrots, cut diagonally into 1-inch-thick slices
1 pound small red potatoes, quartered lengthwise
1 (6 ounce) jar mushrooms, or more to taste
1 ½ tablespoons cornstarch
1 ½ tablespoons cold water
1 pinch celery salt, or to taste
1 pinch dried basil, or to taste
1 pinch dried thyme, or to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Heat vegetable oil in a large, heavy pot or cast-iron Dutch oven over medium heat. Brown chuck roast in the hot oil completely, 5 to 8 minutes per side; season with salt and black pepper and transfer to a platter. Reserve oil in pot.
  • Cook and stir onion and garlic in the oil until onions are golden, about 15 minutes. Stir beef stock, tomatoes, red wine vinegar, brown sugar, and bay leaves into onions and garlic; bring to a boil and place chuck roast into the mixture. Cover pot.
  • Cook in the preheated oven until meat is very tender, 4 to 4 1/2 hours. Scatter carrot slices around the beef and bring to a boil over medium heat; return to oven for 30 more minutes. Distribute potatoes around the beef and vegetables, bring to a boil again over medium heat, and bake until potatoes are tender, about 30 more minutes.
  • Transfer beef to a serving platter, cover loosely with a tent of aluminum foil, and set aside to rest for 10 minutes.
  • Stir mushrooms into pan drippings; bring to a simmer over low heat. Whisk cornstarch into cold water in a small bowl and stir into the drippings. Season with celery salt, basil, and thyme. Simmer until thickened, about 5 minutes. Remove and discard bay leaves. Slice beef; serve on a platter surrounded by vegetables. Pour gravy over beef.

This hearty dish is the perfect fall meal -- loaded with sweet root vegetables and a roast made flavorful and tender from hours simmering in a rich brew of red wine, tomatoes and beef base.

One 3- to 4-pound beef chuck roast
Kosher salt and freshly ground black pepper
1 tablespoon all-purpose flour
3 tablespoons vegetable oil
5 cloves garlic, smashed
1 large onion, sliced
One 14.5-ounce can whole peeled tomatoes
1/2 cup red wine
2 teaspoons beef base
3 sprigs fresh thyme or 2 teaspoons dried
2 bay leaves
1 tablespoon cornstarch mixed with 2 tablespoons water, optional
1/3 cup coarsely chopped fresh flat-leaf parsley, optional
3 carrots, peeled and cut into 2-inch chunks
2 medium red onions, peeled and quartered, or 6 shallots, peeled and halved
2 medium parsnips, peeled and cut into 1/2-inch coins
1 medium turnip, peeled and cut into 8 wedges, or 1 medium celery root, peeled and cut into 8 large chunks (or both)
About 5 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the beef: Preheat the oven to 350 degrees F.
  • Heat a large Dutch oven, with a lid, over medium-high heat. Season the beef generously with salt and pepper and sprinkle lightly with the flour. Add the oil to the pot, and sear the beef on both sides until a deep mahogany brown, about 10 minutes total.
  • Transfer the beef to a plate. Pour off all but about 2 tablespoons of the oil from the pot.
  • Add the garlic and onion to the pot and cook, stirring occasionally, until fragrant and soft, about 5 minutes. Add the tomatoes, breaking them up with your hands as you add them, and cook until a deep brick red, about 5 minutes more; reserve the tomato juice in the can.
  • Add the wine to the pot and use a wooden spoon to scrape up any browned bits that cling to the bottom. Add the reserved tomato juice, beef base, 2 cups water, thyme and bay leaves and bring to a boil. Return the beef to the pot, nestle it in the liquid, cover and transfer the pot to the oven.
  • Cook until the beef is just tender, about 1 1/2 hours. Remove the lid and continue to cook, uncovered until tender, about 1 hour more.
  • For the roasted vegetables: Meanwhile, toss the carrots, onions, parsnips and turnip with the olive oil and some salt and pepper in a large bowl. Spread out the vegetables in a single layer on a baking sheet. You may have to use 2 baking sheets. Once the beef comes out of the oven, raise the temperature to 450 degrees F. Roast the vegetables, turning halfway through cooking, until caramelized and tender, 30 to 45 minutes.
  • Transfer the beef to a plate and cover loosely with foil. Skim the fat off the surface of the sauce in the pot and discard. Bring the sauce to a boil over medium-high heat and cook until thickened, about 5 minutes. For a thicker sauce, whisk in the cornstarch mixture and bring to a boil. (Test the thickness of the sauce by spooning some onto a plate and checking the consistency). Stir in the parsley, if using. Taste and adjust the salt and pepper as needed. Keep the beef warm in the sauce until ready to slice.
  • Slice the pot roast, lay it on a platter and surround it with the vegetables. Spoon some of the sauce on top and serve the remaining sauce on the side.

Thanks to TheWickedNoodle blog for sharing original recipe and photo. This roast is flavorful, moist & yields a delicious gravy. And making a pot roast is all about the gravy, right? !

4 lbs chuck roast
1 lb small red potato
1 bunch baby carrots
5 sprigs fresh thyme
1 yellow onion, chopped
2 -2 1/2 cups beef stock, divided
1/3 cup balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons canola oil
kosher salt, to taste
fresh ground pepper, to taste
2 -3 tablespoons flour

Steps:

  • Preheat oven to 300°F.
  • Heat oil in a large Dutch oven over med-high heat. Season chuck roast well with salt and pepper, add to pan and brown well on all sides (a few minutes on each side). Remove roast and set aside.
  • Add chopped onion to drippings in pot and reduce heat to medium. saute onions until soft, about 5 minutes. Add balsamic vinegar, increase heat to medium-high and boil until reduced and slightly syrupy, abiut 4-5 more minutes. Stir in Dijon.
  • place onion mixture in bottom of Pampered Chef Deep Baker (or your favorite Dutch Oven). Set seared roast on top of onions. Pour in beef broth in a quantity to submerge 1/2 of the roast for Braising. (Too much broth will Boil your roast.) Place thyme sprigs on top of roast. Cover and place in oven for 2 hours.
  • Add carrots and potatoes to pot, cover and return to oven. continue cooking for 2 hours.
  • Separate juices; remove thyme sprigs; cover roast and vegetables to keep warm.
  • Make a roux for your gravy: In a small bowl combine 1/4 cup beef stock and flour until smooth. Pour into large skillet and turn heat to medium. Using a whisk, stir constantly until mixture browns.
  • Reduce heat of skillet to Low. Add roast juices with onion chunks (or strain juices if you prefer a smoother gravy) to the roux in the skillet. Whisk until juices are incorporated.
  • Simmer gravy, whisking occasionally, until gravy reaches desired consistency. Season with salt and pepper to taste.
  • Serve and enjoy!

  • Mix together thyme, salt and black pepper and toss with potatoes, carrots, and the onion wedges.
  • Add olive oil and toss again.
  • Place on a 15 x10" pan.
  • Bake uncovered, for 20 minutes.
  • Sprinkle the minced garlic on top and roast for 20 more minutes or until the carrots and potatoes are tender.
