7 large eggs, separated
1-3/4 cups all-purpose flour
1-3/4 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup water
1/2 cup canola oil
1/4 cup lime juice
4 teaspoons grated lime zest
1 teaspoon vanilla extract
1/2 teaspoon cream of tartar
LIME CURD:
4 large eggs
1-1/2 cups sugar
1/2 cup lime juice
2 tablespoons grated lime zest
1/8 teaspoon salt
1/2 cup butter, cubed
1-1/2 cups heavy whipping cream
Lime zest strips

Steps:

  • Let eggs stand at room temperature for 30 minutes., In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg yolks, water, oil, lime juice, lime zest and vanilla. Add to dry ingredients; beat until well blended. In another bowl, beat egg whites and cream of tartar until stiff peaks form; fold into batter., Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake on the lowest oven rack at 325° for 45-50 minutes or until cake springs back when lightly touched. Immediately invert pan; cool completely, about 1 hour. Run a knife around sides and center tube of pan; set aside., For lime curd, in a small heavy saucepan over medium heat, whisk the eggs, sugar, lime juice, zest and salt until blended. Add butter; cook, whisking constantly, until mixture is thickened and coats the back of a spoon. Transfer to a small bowl; cool for 10 minutes. Cover and refrigerate until chilled., In a small bowl, beat cream until stiff peaks form; fold in 1-1/2 cups curd., Cut cake horizontally into two layers. Place bottom layer on a serving plate; spread with remaining curd. Top with remaining cake layer; spread whipped cream over top and sides of cake. Garnish with lime zest.

2 cups unsalted butter, preferably at room temperature, plus more for buttering the pan
2 cups granulated sugar
12 eggs, separated
Zest of 2 limes, plus more for garnish
3 1/2 cups all-purpose flour, plus more for dusting the pan
1/4 teaspoon kosher or coarse sea salt
1 tablespoon baking powder
1 cup freshly squeezed lime juice
2/3 cup granulated sugar
3 tablespoons freshly squeezed lime juice
1 teaspoon vanilla extract
1 1/3 cups confectioners' sugar

Steps:

  • To make the cake: In a mixer set with the paddle attachment, beat the butter over medium speed until soft and creamy, about 5 minutes. Add the granulated sugar and continue to beat until well mixed and creamy, another 2 to 3 minutes. Beat in the egg yolks, add the lime zest and continue to beat until fully incorporated, another 2 minutes or so. Reduce the speed to low, and gently add the all-purpose flour, salt and baking powder. Continue to beat for another couple minutes. The batter should be completely homogeneous and feel a bit dense and heavy.
  • Transfer the batter to a large mixing bowl. Rinse the bowl of the mixer well and change the paddle attachment to the whisk attachment. Beat the egg whites on medium-high speed, until they hold stiff peaks, about 4 to 5 minutes. Slowly, incorporate a bit of the whipped-up egg whites into the heavy batter. Repeat with the rest of the egg whites, folding them gently but persistently, until the batter is completely incorporated and seems lighter and puffier. Don't overmix, or you will remove the puff effect from the beaten egg whites.
  • Preheat the oven to 350 degrees F. Butter the sides and bottom of a 14-cup bundt pan and lightly coat with all-purpose flour. Shake out any extra flour. Pour the batter into the prepared mold and bake in the oven about 1 hour and 10 minutes, or until the cake is golden brown on top, seems beautifully puffed up and a toothpick comes out moist but not wet. Remove from the oven. Let cool for at least 10 minutes.
  • To make the lime syrup: Combine the lime juice with the granulated sugar in a small saucepan and heat over medium heat for a couple minutes, just until the sugar has dissolved.
  • Run the tip of a knife around the edges of the cake. Place an inverted platter or board on top of the bundt pan. Invert to release the cake. With a toothpick or wooden skewer, poke holes all over its surface, going as deep as the toothpick will go--I poke at least 100 times! Pour half the lime syrup evenly over the cake. Let it absorb for a few minutes. Pour over the rest of the syrup and let it sit for a few minutes, while you make the glaze.
  • To make the lime glaze: In a small mixing bowl, using a small whisk or fork, combine the lime juice with the vanilla and confectioners' sugar until thoroughly mixed. With a tablespoon, add half the glaze, one tablespoon at a time, over the cake, slowly so it absorbs and coats the cake. Wait a few minutes and add the rest of the glaze. Let some of the extra glaze slide down the sides, as it will give it a pretty glazed look. Grate some fresh lime zest over the top.
  • If there is any leftover, cover so it will remain moist -- it usually becomes more moist after a day or two.

1 package (3 ounces) lime gelatin
1 cup boiling water
11 ounces cream cheese, softened

1 teaspoon vanilla extract
1 carton (16 ounces) frozen whipped topping, thawed

Steps:

  • Combine the first three ingredients; set aside 2 tablespoons for topping. Press remaining crumbs onto the bottom of an ungreased 13-in. x 9-in. dish; set aside. In a small bowl, dissolve gelatin in boiling water; cool. , In a large bowl, beat cream cheese and sugar until smooth. Beat in vanilla. Slowly add gelatin until combined. Fold in whipped topping. Spoon over crust; sprinkle with reserved crumbs. Cover and refrigerate for 3 hours or until set.

Her winning dessert is a version of this Lemon Chiffon Cake with Strawberry Frosting that she bakes on Mother's Day. "It's my mom's favorite because she loves lemon and strawberry," Rebecca says.

1 3/4 cups cake flour
1 1/3 cups superfine sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup vegetable or canola oil
6 large eggs, separated, at room temperature
1 tablespoon finely grated lemon zest, plus 1 tablespoon fresh lemon juice
3/4 cup diced strawberries
2 7.5-ounce jars marshmallow cream
3 sticks unsalted butter, cut into pieces, at room temperature
1/2 cup confectioners' sugar

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Line the bottoms of three 8-inch round ungreased cake pans with parchment paper. Sift the flour, 1 cup superfine sugar, the baking powder and salt into a large bowl. Whisk the oil, 1/2 cup cold water, the egg yolks, lemon zest and 2 teaspoons lemon juice in a medium bowl until well combined. Make a well in the center of the flour mixture and pour in the oil mixture; stir with a rubber spatula until smooth. Set aside.
  • Beat the egg whites and the remaining 1 teaspoon lemon juice in a large bowl with a mixer on medium speed until foamy, about 1 minute. Gradually beat in the remaining 1/3 cup superfine sugar; continue beating until stiff peaks form, 3 to 4 minutes. ASIAN HONEY CHIFFON CAKE (JAPANESE, TAIWANESE)

Since I was little, I've always had honey cake. It's the fluffiest, melt-in-your-mouth cake that has a nice scent of honey. It's usually baked in a rectangular tin (loaf tin), and once cooled, we put a glaze of clear jelly/apricot glaze on top for a glossy finish and served as simple slices, as anything else would overwhelm the delicate taste of honey.

20 g caster sugar
2 tablespoons honey
2 tablespoons vegetable oil
2 tablespoons milk
85 g low-grade flour (although all purpose will be fine, experiment with the different texture)
1/4 teaspoon cream of tartar (or white vinegar)
50 g caster sugar

Steps:

  • Grease a loaf tin, and layer baking (waxed) paper into the tin, cut the corners so they lie flat against the tin.
  • Preheat the oven to 150C / 300°F.
  • Whisk together the 4 yolks and the 20g of caster sugar, slowly add in the honey until thick and pale. Whisk in the oil, then milk.
  • Sift the flour, and fold in, rapidly and with big gestures, to the above mixture until the flour disappear.
  • Use another oil-free water-free bowl, beat the eggs whites with cream of tartar / vinegar until soft peak. Beat in the 50g of sugar and continue to beat until stiff peak.
  • Fold in 1/3 of the egg whites to the mixture, then fold in the rest just until even. Be mindful not to deflate the texture.
  • Pour the mixture into the prepared tin, smooth the top, and bake for 40-50 minutes. Done when inserted skewer comes out clean.
  • Turn out onto a wire wrack and cool before glazing with clear jelly or apricot sauce. (I never really got around to that stage as it's gone by then).
  • Enjoy!

Steps:

  • Stir flour, sugar, baking powder, salt and orange rind together. Make a well in the centre of the dry ingredients, and then add in this order: vegetable oil, egg yolks, orange juice and water.
  • Beat til smooth.
  • Add cream of tartar to egg whites and beat in a separate bown until stiff peaks are formed.
  • Gradually pour batter over beaten egg whites, gently folding until just blended.
  • DO NOT STIR.
  • Pour batter into ungreased 10" tube pan.
  • Bake 325 55 minutes.
  • Increase heat to 350F and bake 10 mins longer.
  • Invert pan, and allow to cool.
  • Remove and frost if desired.

4 eggs
90 g taro root, paste
30 g oil
70 g flour
50 g sugar
80 g milk

Steps:

  • Separate egg yolk and whites into separate bowls.
  • Add 15g sugar, sifted flour, purple yam powder, oil and milk to the yolks. Mix well until there are no lumps. Do not overmix as you don't want the gluten to come out of the flour.
  • Cover mixture and leave it to the side.
  • Beat egg whites with sugar until stiff peak. Lower mixing speed to low to reduce the size of the air bubbles for the consistent final product.
  • Add 1/3 of the egg whites to the yolk mixture. mix it until its well incorporated. Don't worry about folding here as you are trying to get the yolk to a similar texture as the whites.
  • Add yolk mixture into the remaining 2/3 of egg whites. Fold in the mixture well and you want a thick consistency that runs down your spatula, like a ribbon consistency.
  • Add batter to the aluminium cake tin (make sure its aluminium, do not use non-stick). Bake on lower shelf for 160 C for about 30 mins.
  • Once its out of the oven, drop the cake from a height to get rid of the hot air, tip it upside down on a rack to cool down.

1 tablespoon cake flour
2 cups sifted cake flour (7 1/2 oz)
1 1/4 cups sugar, divided
2 1/2 teaspoons baking powder
1/2 teaspoon salt
7 tablespoons canola oil
1/3 cup fresh lemon juice (about three lemons)
1 teaspoon lemon extract
3 tablespoons water
1 teaspoon finely grated lemon rind
3 egg yolks
8 egg whites
1 teaspoon cream of tartar
lemon curd (use for filling)
frosting (Your prefrence, I use homemade buttercream with grated lemon rind)
fresh mint sprig, for garnish (optional)
fresh lemon wedge, for garnish (optional)
fresh blueberries, for garnish (optional)

Steps:

  • Have frosting ready and at the temperature you like to frost with.
  • Preheat oven to 320°F.
  • Prepare cake pans: Coat bottoms of 3 (8-inch) round cake pans with cooking spray. Do not coat sides of the cake pans. Place wax paper on the bottom of the three cake pans and then spray the top of the wax paper with the cooking spray. Dust the wax paper bottom of all three pans with 1 table spoon of flour.
  • Lightly spoon 2 cups cake flour into dry measuring cups, and level with a knife. Combine 2 cups cake flour, 1 cup sugar, baking powder, and ½ teaspoon salt in a large bowl, stirring with a whisk until well combined.
  • Combine oil, 1/3 cups juice, 3 tablespoons water, 1 teaspoon rind, lemon extract, and egg yokes in a medium bowl, stirring with a whisk. Add oil mixture to flour mixture; beat with mixer at medium speed until smooth.

6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/2-inch cubes
Cake
1 11.5-ounce can mango nectar (about 1 1/2 cups)
1 1/4 cups sifted cake flour (sifted, then measured)
12 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 large egg yolks
1/4 cup canola oil
2 1/2 tablespoons grated lime peel
4 large egg whites
Glaze and topping
1/4 cup sugar
1 tablespoon fresh lime juice
3/4 cup chilled whipping cream
2 large firm but ripe mangoes, peeled, pitted, cut into 1/4-inch-thick slices

Steps:

  • For lime-ginger curd:
  • Whisk sugar, lime juice, egg yolks, 3 whole eggs, and grated ginger in large metal bowl to blend. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until mixture thickens and instant-read thermometer inserted into mixture registers 160°F, about 6 minutes. Remove bowl from over water. Quickly add chilled butter cubes to curd; whisk until butter is melted. Press sheet of plastic wrap directly onto surface of lime-ginger curd; refrigerate curd overnight. (Lime-ginger curd can be made 3 days ahead. Keep covered and refrigerated.)
  • For cake:
  • Simmer mango nectar in heavy medium saucepan over medium heat until reduced to 3/4 cup, about 20 minutes. Remove from heat. Cool mango syrup to room temperature.
  • Position rack in center of oven and preheat to 325°F. Line bottom of two 9-inch-diameter cake pans with 1 1/2-inch-high sides with parchment paper (do not grease cake pans or parchment paper). Sift flour, 6 tablespoons sugar, baking powder, and salt into medium bowl. Whisk egg yolks, canola oil, lime peel, and 6 tablespoons mango syrup in large bowl to blend (reserve remaining mango syrup for glaze). Add dry ingredients; whisk to blend.
  • Using electric mixer, beat egg whites in another large bowl until soft peaks form. Add remaining 6 tablespoons sugar, 1 tablespoon at a time, beating until stiff and glossy. Fold 1/3 of egg whites into yolk mixture, then fold in remaining whites in 2 additions.
  • Divide batter between prepared pans. Bake cakes until golden and tester inserted into center comes out clean, about 22 minutes. Cool cakes completely in pans on rack. Run small knife around edge of pans to loosen cakes. Carefully invert cakes onto 9-inch-diameter cardboard rounds or tart pan bottoms; tap sharply on work surface if necessary to release cakes from pans. Peel off parchment paper.
  • For glaze and topping:
  • Boil sugar, lime juice, and remaining 6 tablespoons mango syrup in heavy small saucepan until liquid is reduced to 1/4 cup, about 3 minutes. Chill glaze until cold, about 15 minutes. 4 large egg yolks
3 large eggs
1 teaspoon grated peeled fresh ginger
6 tablespoons chilled unsalted butter, cut into 1/2 inch cubes
1 (11 1/2 ounce) can mango nectar (about 1 1/2 cups)
1 1/2 cups sifted cake flour (sifted, then measured)
12 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 large egg yolks
1/2 cup canola oil
2 1/2 tablespoons lime zest
4 large egg whites
1/2 cup sugar
1 tablespoon fresh lime juice
3/4 cup chilled whipping cream
2 large firm but ripe mangoes, peeled,pitted,cut into 1/2 inch thick slices

Steps:

  • Begin making the lime-ginger curd one day before baking the cake.
  • The assembled dessert can be chilled overnight before serving.
  • For lime-ginger curd: Whisk sugar, lime juice, egg yolks, 3 whole eggs, and grated ginger in large metal bowl to blend.
  • Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water).
  • Whisk constantly until mixture thickens and instant-read thermometer inserted into mixture registers 160°F, about 6 minutes.
  • Remove bowl from over water.
  • Quickly add chilled butter cubes to curd; whisk until butter is melted.
  • Press sheet of plastic wrap directly onto surface of lime-ginger curd; refrigerate curd overnight.
  • (Lime-ginger curd can be made 3 days ahead. Keep covered and refrigerated.) For cake: Simmer mango nectar in heavy medium saucepan over medium heat until reduced to 3/4 cup, about 20 minutes.
  • Remove from heat.
  • Cool mango syrup to room temperature.
  • Position rack in center of oven and preheat to 325°F.
  • Line bottom of two 9-inch-diameter cake pans with 1 1/2-inch-high sides with parchment paper (do not grease cake pans or parchment paper).
  • Sift flour, 6 tablespoons sugar, baking powder, and salt into medium bowl.
  • Whisk egg yolks, canola oil, lime peel, and 6 tablespoons mango syrup in large bowl to blend (reserve remaining mango syrup for glaze).
  • Add dry ingredients; whisk to blend.
  • Using electric mixer, beat egg whites in another large bowl until soft peaks form.
  • Add remaining 6 tablespoons sugar, 1 tablespoon at a time, beating until stiff and glossy.
  • Fold 1/3 of egg whites into yolk mixture, then fold in remaining whites in 2 additions.
  • Divide batter between prepared pans.
  • Bake cakes until golden and tester inserted into center comes out clean, about 22 minutes.
  • Cool cakes completely in pans on rack.
  • Run small knife around edge of pans to loosen cakes.
  • Carefully invert cakes onto 9-inch-diameter cardboard rounds or tart pan bottoms; tap sharply on work surface if necessary to release cakes from pans.
  • Peel off parchment paper.
  • For glaze and topping: Boil sugar, lime juice, and remaining 6 tablespoons mango syrup in heavy small saucepan until liquid is reduced to 1/2 cup, about 3 minutes.
  • Chill glaze until cold, about 15 minutes.
