American-style ice cream uses no eggs, but this is the French style--with eggs! It's rich and creamy and, although traditionally served soft in cones, I prefer to freeze it firm then scoop it.

5 large egg yolks
⅔ cup white sugar
1 pinch salt
1 cup whole milk
2 cups heavy cream
2 ½ teaspoons pure vanilla extract

Steps:

  • Whisk egg yolks, sugar, and salt together until mixture changes from dark golden to pale yellow becomes fluffy.
  • Heat milk and cream in a heavy saucepan over medium heat. Stir occasionally to prevent sticking to the bottom. Cook just until mixture starts to simmer when little bubbles begin to appear on the surface, 5 to 8 minutes. Remove from heat.
  • Whisk a ladleful of milk-cream mixture into the egg yolk mixture. Add another ladleful and whisk thoroughly before adding the next (this will keep the eggs from cooking). Gradually add the remaining milk-cream mixture and whisk thoroughly. Whisk in vanilla. Cool completely (you can place the bowl in a larger bowl with ice water to cool it faster).
  • Pour cooled mixture into a pitcher; cover. Refrigerate until ice cold or overnight.
  • Pour custard mixture into ice cream maker and process (according to manufacturer's instructions) until custard reaches the consistency of soft ice cream, about 20 minutes. Quickly transfer to a plastic container. Place a piece of plastic wrap over the surface of the custard. Cover container and freeze until custard is firm enough to scoop, at least 3 hours.

My mother's recipe--eat on its own or pour over canned peaches or guavas or, my fave, bread pudding. If you are really grossed out by the possibility of flecks of egg white in your custard, you can either pass it through a fine-mesh sieve or substitute four yolks for the two whole eggs.

2 cups milk
2 tablespoons cornstarch
1/3 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla

Steps:

  • Have eggs ready in a bowl, and set aside where it will be within reach.
  • Using a whisk, combine milk, sugar and cornstarch in a medium saucepan over medium heat on stovetop. Allow milk to scald (heat to the point when tiny bubbles form around edges of pan). Whisk occasionally to prevent cornstarch from clumping on bottom edges of pan.
  • Remove milk mixture from heat, preferably to a burner that's turned off.
  • Mix about 2 tablespoons of scalded milk mixture into eggs using whisk, then introduce eggs into milk mixture in a slow stream, whisking milk mixture constantly.
  • Immediately return pan to heat and whisk gently until custard thickens, another two or three minutes. Do not allow to boil. (If you find that you have egg white strands in custard, feel free to pass it through a fine-mesh sieve into a different bowl now.)
  • Remove pan from heat and stir in vanilla.

Steps:

  • Heat the milk in the saucepan until it comes just up to the boil, then take off the heat immediately. In a bowl, beat together the egg yolks, vanilla sugar and flours. Pour the milk slowly over the egg mix, beating well.
  • Return the mixture to the pan and place over a low heat, stirring for 8-10 mins until the mixture begins to thicken. Remove and serve with the dumplings.

3 cups whole milk
8 large egg yolks
2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
1 tablespoon unsalted butter, softened
1 teaspoon vanilla

an instant-read thermometer

Steps:

  • Heat milk in a 2 1/2- to 3-quart heavy saucepan over moderate heat until hot but not boiling.
  • While milk heats, whisk together yolks, sugar, cornstarch, and salt in a heatproof bowl until smooth.
  • Add 1 cup hot milk to yolk mixture in a stream, whisking, then add remaining milk, whisking constantly. Transfer mixture to saucepan and cook over moderately low heat, stirring constantly, until thickened and registers 170°F on thermometer, 6 to 10 minutes (do not boil).
  • Immediately force custard through a fine-mesh sieve into a clean bowl and stir in butter and vanilla. Chill custard, its surface covered with wax paper, until cold and thickened, at least 3 hours.

2 cups whole, 2 percent fat, or 1 percent fat milk
1/2 vanilla bean, split lengthwise
6 egg yolks
2/3 cup granulated sugar
1/4 cup cornstarch
1 tablespoon unsalted butter
1 cup cream
1 teaspoon sugar
1/2 pint raspberries
1 tablespoon sugar

Steps:

  • In a medium saucepan, heat the milk and vanilla bean to a boil over medium heat. Immediately turn off the heat and set aside to infuse for 10 minutes. In a bowl, whisk the egg yolks and granulated sugar until light and fluffy. Add the cornstarch and whisk vigorously until no lumps remain. Whisk in 1/4 cup of the hot milk mixture until incorporated. Whisk in the remaining hot milk mixture, reserving the empty saucepan.
  • Pour the mixture through a strainer back into the saucepan. Cook over medium-high heat, whisking constantly, until thickened and slowly boiling. Remove from the heat and stir in the butter. Pour into individual dessert dishes and chill. Chill at least 2 hours or until ready to serve. (The custard can be made up to 24 hours in advance. Cover with plastic wrap if you are keeping it longer than that.)
  • Raspberry Mash: Place 1/4 of a pint of raspberries in a bowl with the sugar and mash it with the back of a fork. Toss in the remaining 1/4-pint of raspberries and gently toss to coat.
  • Whip the cream with the sugar and serve on the custard and mash.

CUSTARD:
1/2 l whole milk (3.5% fat or so)
2 eggs, cooled and yolks/whites separated
1/2 cup wheat flour
1/2 cup white sugar
2/3 tsp vanilla sugar
KISEL:
1 1/2 cup wild cranberries
1 1/2 cup sugar
100g potato starch
1.8 l filtered water + 100 ml cold water

Steps:

  • MAKING THE CUSTARD: In a bowl, mix flour and 250ml milk. Beat the mix until it's thin and runny like a crepe batter. Beat egg yolks with 1/4 cup sugar and 2/3 tsp vanilla sugar until pale. Set aside. In a saucepan, bring to boil the remaining milk. Just as the milk starts to boil, add in the milk&flour mix while stirring. Add in egg yolks&sugar. Keep stirring vigorously to break up large lumps. Smaller lumps might remain; we use a blender to get rid of them after the custard is ready. Simmer the custard for a couple of minutes, stirring all of the time, until it thickens. Set aside. Add remaining sugar to cooled egg whites and whip them until thick and firm. It's time you use a blender to break up small lumps in the custard, if any. When the custard is smooth and creamy, add in the whipped egg whites and stir together gently. Leave to cool for approximately 3 hours. MAKING THE KISEL: Rinse and crush the cranberries. Place crushed berries into a saucepan and add sugar. Pour 1.8 l boiling water over the cranberries, keep them on high heat until bubbles appear, then bring heat to medium low and keep the mix boiling gently for about 10 minutes. The colour of crushed berry skins will fade as they boil, and you can stop whenever you feel like the berries have given all of their juices and flavour. In the meantime, dissolve the starch in 100ml cold water. When cranberry mix is ready, pass it through a sieve to get rid of berry skins and return the hot cordial into the saucepan. Keep it on medium low heat and slowly pour in the starch mix. This is the crucial moment and you've got to keep stirring kisel as you add more starch, and stir well afterwards. The better you stir the better the texture of your kisel will be. After you've added starch, just bring kisel to boil. Remove from heat and leave to cool. A thin skin might appear on the surface of kisel after it's cooled, just remove it!

Steps:

  • Rinse cranberries and put to boil in water.
  • When all the berries have burst, strain and force through a sieve.
  • Retain the liquid and pulp; discard the skins.
  • Reheat the juice while mixing in the sugar to taste.
  • Mix the potato starch with cold water and slowly stir into the juice until thickened. It should be the consistency of thick syrup.
  • Pour the hot kissel in to a serving dish and sprinkle the top with sugar to avoid forming a skin on top.
  • Cover and cool.
  • Serve topped with whipped cream.
