This summer corn salad recipe is quick and easy to make, cool and refreshing, and includes the perfect blend of fresh vegetables and zesty Italian dressing.

2 cans whole kernel corn, drained
2 medium diced tomatoes
1 bell pepper, seeded and diced
1 diced small onion
1 cup Italian dressing

Steps:

  • Combine all ingredients in a large bowl. Stir well to combine. Cover and refrigerate for several hours.
  • Can be made up to two days ahead of time. This is delicious and the perfect side for a barbecue!

This is an old family recipe, that has been changed (updated) like switching the lard for butter or margarine, and adding canned corn as opposed to fresh corn. 1/2 c lard (butter or margarine)
2 large onions (minced)
6 stick celery (minced)
salt and pepper to taste
2 Tbsp fresh parsley (minced fine)
1 1/2 Tbsp ground sage (or to taste)
6 c corn bread (crumbled)
2 c white bread (torn up small)
1 can(s) whole kernel corn (use the liquid as part of you liquid measurement)
1 1/2 c chicken broth (or water)
4 eggs (well beaten)

Steps:

  • 1. Saute' the onions and celery (do not brown) in the Lard. Put in a large bowl with the drained corn and breads.
  • 2. Beat the eggs well and add spices and liquids, beat until well mixed. Pour this over the vegetables/bread mixture. Toss together.
  • 3. Bake this is baking pan covered at 350 degrees for 20 minutes, and uncovered for additional 15 minutes.
  • 4. *** Use your dressing/stuffing directions for cooking times with meats. This is excellent for stuffed pork chops.

1 package (12 ounces) unseasoned stuffing cubes
1 medium onion, finely chopped
1/2 each medium green, sweet yellow and red pepper, chopped
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
3 eggs, lightly beaten
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1/2 cup butter, melted
1/2 to 1 cup chicken broth

Steps:

  • In a large bowl, combine the stuffing, onion, sweet peppers and seasonings. Add the eggs, corn and butter; toss to coat. Stir in enough broth to achieve desired moistness. , Spoon into a 3-qt. baking dish coated with cooking spray. Cover and bake at 350° for 25 minutes or until a thermometer reads 160°. Uncover; bake 15-20 minutes longer or until golden brown.

  • OPTIONAL GRILL: Preheat grill to medium heat (400 degrees F). Shuck corns and discard silks. Drizzle corn with olive oil and then lightly sprinkle with salt and pepper. Rub the oil and salt/pepper into all sides of the corn. Prepare the fully preheated grill by cleaning. Add the corn to the heated grill over direct heat. Grill corn about 10-12 minutes total, rotating every 3-4 minutes until bright yellow and lightly charred. (Alternatively, cut raw kernels of the cob and use in salad) Let grilled corn cool completely before cutting it off the cob. Cut the cooled corn off the cob and add to a large bowl.
  • DRESSING: In a mason jar, combine the 1 tablespoon lime juice, 1 teaspoon lime zest, 1/4 cup olive oil, 1 tablespoon red wine vinegar, 1/4 teaspoon chili powder, 1/4 teaspoon ground cumin, 1/4 teaspoon paprika, 1 teaspoon honey, and salt and pepper to taste (I add 1/2 teaspoon of each, but use less depending on how salted the corn is). Put lid on jar and shake vigorously to combine. Place in the fridge while preparing everything else. Shake again before dressing the salad.
  • SALAD: Add the 1/2 cup diced cherry tomatoes to the bowl, the 3/4 cup thinly sliced green onions, the 1 cup English cucumbers (cut into half moons), 1/4 cup diced cilantro (See Note 1), 2 tablespoons diced basil, 2 tablespoons diced parsley, 1 tablespoon diced jalapeno, and the diced avocado (I like to squeeze the remaining lime juice from the dressing onto the avocado to keep it from browning too quickly). Gently toss to combine. Shake dressing again and drizzle over salad. Toss again and top with cheese. Enjoy soon after dressing. Salad doesn't store or sit well.
