Homemade spicy Italian sausage in 5 minutes? It may seem out of reach, but it's possible with this endlessly flavorful and authentic Italian Sausage Seasoning ready to go in your pantry!

Number Of Ingredients 9

2 teaspoons salt*
2 teaspoons fennel
2 teaspoons spicy cayenne
2 teaspoons garlic powder
1 teaspoon freshly ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon paprika
optional: ground onion, marjoram, thyme, rosemary, sage, parsley, ground celery seed, smoked paprika

Steps:

  • Combine all ingredients in a jar or small dish and stir well. Store in an airtight container. (Refrigeration not necessary.)
  • To use: Stir 1 Tablespoons seasoning into 1 pound ground meat. Mix well and use immediately, or let rest for 30 minutes (up to overnight (in the fridge). Form into patties, or cook as you would any regular crumbled sausage. Alternatively, you can brown beef and sauté vegetables as usual, and add the seasoning during cooking.

A dry herb blend for giving any ground meat a "sausage" flavoring. Try this not only with ground pork, but also ground turkey, beef, or chicken. Adapted from a recipe that came with one of my pizza pans. Recipe can be doubled, tripled, etc as needed. Each batch is enough to season 1 pound of meat. Leave out the crushed red pepper flakes for milder sausage.

1 1/2 teaspoons salt
3 1/2 teaspoons paprika
2/3 teaspoon garlic granules or 2/3 teaspoon garlic powder
1/3 teaspoon fennel seed
1 teaspoon ground black pepper
1/4 teaspoon crushed red pepper flakes, for spicy (optional)

Steps:

  • Blend all ingredients together in a spice grinder or mini-food processor (or you may also just stir together if you like some chunkier bits of fennel in your sausage).
  • Store in an airtight container until ready to use.
  • To use, mix with 1 pound ground meat.
  • Chill seasoned meat 3 hours before using.
  • Or you may also use this in any recipe calling for sausage seasoning.

Make your own version of the all-time favorite Italian sausage by mixing and combining the ingredients. Feel free to add or take away any of the herbs and spices that will make this sausage your very own! Personally, I like this style better than the link style, because I generally take the sausage out of the links anyway, depending upon the recipe. If hot and spicy is not for you, by all means, be careful with the red pepper flakes. To freeze, I make the sausage into patties, which are easier than a large portion, and they'll defrost much faster.

1 teaspoon ground black pepper
1 teaspoon Italian herb seasoning
1/2 teaspoon garlic powder
1/8 teaspoon red pepper flakes, crushed
3/4 teaspoon crushed fennel seed
1/2 teaspoon paprika
1/2 teaspoon dried onion flakes
2 teaspoons salt
2 lbs ground pork

Steps:

  • In a small bowl, combine the black pepper, parsley, Italian-style seasoning, garlic powder, crushed red pepper flakes, fennel,paprika, minced onion flakes and salt; mix well.
  • Place pork in a separate large bowl and add the spice mix to it. Mix this thoroughly with your hands.
  • In a large skillet over medium high heat, saute the seasoned pork for 10 minutes, or until well browned and crumbly.
