2 Tablespoon Light Brown Sugar
2 teaspoon Kosher Salt
1 teaspoon Cajun Seasonings
2 teaspoon Paprika
1/2 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Herbes de Provence (or Poultry Seasoning)
4 lb Whole Chicken
12 Small Red Potatoes
1/2 Cup Water

Steps:

  • Combine all of the herbs and seasonings to form a rub.
  • Remove neck and giblets from chicken if necessary and save for another use.
  • Rub chicken on all sides with seasonings and set aside.
  • Rinse and scrub potatoes. Place in the bottom of slow cooker and add the water.
  • Place chicken on top and cook on low for 6-7 hours.

1 tablespoon of Cajun blackened seasoning
1 teaspoon Mexican oregano
1 teaspoon black and white seasoning
1 teaspoon seasoned pepper
1 teaspoon ground chipotle
1 teaspoon cumin
4-6 oz of Tony Chachere Creole Butter Injection
Half a white onion
8-10 cloves of garlic
1 whole fryer chicken

Steps:

  • Mix all the dry ingredients to make a rub Stuff the chicken body cavity with half an onion and 5-6 cloves of garlic Liberally rub chicken with Cajun seasoning Inject creole butter into breasts, thigh and drumsticks Tie legs together with cooking twine Place in slower cooker breast side up, and cook on high for 2 hours, the on low for 5-7 hours, util internal chicken thermometer pops.

1/2 cup chopped green bell pepper
1/4 cup chopped onion
1/4 cup chopped celery
1 1/4 lb boneless skinless chicken thighs
2 teaspoons Cajun seasoning
1 can (14.5 oz) diced tomatoes, undrained
1 1/3 cups uncooked regular long-grain white rice
2 2/3 cups water

Steps:

  • In 10-inch nonstick skillet, cook bacon over medium-high heat until crisp. Add bell pepper, onion and celery; cook 2 to 3 minutes longer or until crisp-tender. With slotted spoon, spoon bacon and vegetables into 3 1/2- or 4-quart slow cooker.
  • Sprinkle chicken thighs with 1 teaspoon of the Cajun seasoning; place in same skillet. Cook chicken 4 to 5 minutes, turning once, until browned on both sides. Arrange chicken and any remaining drippings over vegetables in slow cooker. Pour tomatoes over chicken. Stir in remaining teaspoon Cajun seasoning.
  • Cover; cook on Low heat setting 8 to 9 hours.
  • About 30 minutes before serving time, cook rice in water as directed on package. Serve chicken and sauce over rice.

Steps:

  • Heat the slow cooker if necessary and add a splash of water to the base. Scrunch up some foil to make a trivet to sit in the base of the bowl to rest the chicken on. Put the chicken into the pot and season the skin. Cover and cook on Low for 5 hours or until the leg or wing feels very loose when you wiggle it. Tip the juices inside the chicken out as you lift it out.
  • Brown the chicken skin under the grill or carve the chicken before anyone sees it. Spoon the liquid out of the base of the pan to use as gravy, there won't be much but it will have a good flavour.

1 teaspoon cayenne pepper
1 teaspoon onion powder

Steps:

  • Mix salt, paprika, cayenne pepper, onion powder, thyme, white pepper, garlic powder, and black pepper together in a small bowl.

1 (14 ounce) can reduced-sodium chicken broth (Recommend leaving out, makes too sauce runny) (optional)
1 medium red bell pepper, cut into strips
4 teaspoons cajun seasoning
1 lb dry bow tie pasta

Steps:
