1 cup crumbled feta cheese
1 tablespoon milk, or more as needed
1 ½ teaspoons chopped fresh basil

Steps:

  • Beat cream cheese and feta cheese together in a bowl until combined. Add milk slowly, mixing until desired consistency is reached. Stir in basil and oregano.
  • Cover and refrigerate for 30 minutes or until ready to serve. Remove from the refrigerator a few minutes before serving to soften slightly.

1 8-oz block feta cheese
½ cup sour cream
½ cup mayonnaise, best quality such as Hellman's or Duke's
Zest from 1 lemon (about 1 teaspoon, packed)
1 small clove garlic, chopped
¼ teaspoon dried dill
¼ teaspoon dried oregano
¼ teaspoon dried thyme
⅛ teaspoon salt
¼ teaspoon freshly ground black pepper
⅛ teaspoon crushed red pepper flakes, plus more for serving
Toasted sesame seeds
Extra virgin olive, for drizzling
Toasted pita wedges (or pita chips) and/or sliced vegetables

Steps:

  • Combine all of the ingredients in a food processor or blender and process until smooth. Taste and adjust seasoning, if necessary. Transfer to a serving bowl and use a small spoon to create a swirl on the surface of the dip. Drizzle with olive oil and sprinkle with toasted sesame seeds and crushed red pepper flakes, if using.
  • MAKE AHEAD: This dip can be made up to 3 days ahead of time and stored in a covered container in the refrigerator. It will stiffen up in the fridge to a spread-like consistency, so be sure to let it sit at room temperature for about an hour before serving.
  • To make the toasted pita wedges: Preheat the oven to 350°F. Brush the pita bread on both sides with olive oil and sprinkle with a pinch of salt. Cut into wedges, then arrange on a parchment-lined baking sheet. Bake for about 10 minutes until lightly toasted.
  • To make the toasted sesame seeds: In a small pan over medium heat, cook the sesame seeds, stirring frequently, until golden, a few minutes. Watch carefully as they are quick to burn.

6 ounces roasted red pepper, drained and dried
1/2 teaspoon Calabrian chile paste
1/4 teaspoon kosher salt
1 clove garlic, grated
8 ounces French feta (or other good-quality feta)

Steps:

  • Add the roasted red pepper, Calabrian chile paste, salt and garlic to the bowl of a food processor. Pulse until the mixture is chunky and evenly chopped. Using your hands, break the feta up into large chunks and add it to the food processor. Pulse the mixture until the feta is incorporated into the pepper mixture. (The mixture should remain slightly chunky.) Refrigerate for at least 30 minutes for the flavors to come together. Serve with crackers, veggies, on sandwiches or burgers. Spicy feta dip will keep, refrigerated in an airtight container, up to 1 week.

This easy yogurt feta dip is one of my favorite back-pocket appetizers-it's just as fitting at a fancy dinner party as it is at a casual potluck. The dip is creamy but light and can be served with veggies or chips (I usually do both!). Be sure to use whole milk Greek yogurt for the best flavor and texture (if buying Fage brand, it's labeled 5%). The fresh herbs (scallions, dill and tarragon) give the dip its flavor. If you can't find tarragon, substitute mint or parsley (but do try to find tarragon; it's so good here!).

If you have some time, let the dip sit for 30 minutes to let the flavors mend (if not, it's still good if served immediately!). Before serving, transfer the dip to a serving bowl, and drizzle with olive oil. Serve with chips or veggies.

  • Preheat oven to 400 degrees. Chop the top off the garlic bulb and drizzle it with a teaspoon of olive oil. Wrap it in foil and roast for 25-30 minutes, or until garlic is golden in color. Squeeze the roasted garlic out of the bulb directly into the feta. Add 1/4 cup of olive oil and mash with a fork. You want the feta to be a bit “wet” – I can best describe it as a cross between a spread and a dip. There is no right or wrong – make it however you’d like. Taste the feta and season with salt and pepper. Serve with pita chips, warm pita or naan, or spread it on sandwiches. Store it in the fridge for up to one week – I find that I like it best at room temperature, so allow it to sit out for about 30 minutes before serving.
