SMOKY AVOCADO FAJITAS (MEATLESS)

As a lover of Mexican food who's recently gone meatless, I decided to experiment with an idea for fajitas that would be as close to the real thing as possible without including meat. These turned out to be better than almost any traditional fajitas I've ever had. Even my meat-loving 25-year-old son loved them, and wants more! Authentic Southwestern fajita flavor with a smoky touch. Very easy to make. Garnish with sour cream, salsa, and grated cheese as desired.

1 ⅓ cups water
3 tablespoons olive oil
2 tablespoons liquid smoke flavoring
2 (1 ounce) packages fajita seasoning
4 large avocados - peeled, pitted, and sliced into 1/2-inch wedges
4 large bell peppers - stemmed, seeded, and sliced into 1/2-inch wedges
1 extra large onion, sliced into rings and rings separated
12 (6 inch) flour tortillas

Steps:

  • Whisk water, oil, liquid smoke, and fajita seasoning together in a bowl and pour into a resealable plastic bag. Add avocados, bell pepper, and onion, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour to overnight; turn occasionally.
  • Preheat oven to 225 degrees F (110 degrees C). Stack tortillas; wrap in aluminum foil. Place in oven to warm.
  • Preheat grill for medium heat and lightly oil the grate. Drain marinade from vegetable mixture; transfer to a plate. Separate avocados from onions and bell peppers.
  • Place onions and peppers, in 1 layer, onto grill using tongs; cook until tender, 5 to 10 minutes, turning as needed. Transfer to an oven-proof pan; cover with aluminum foil. Place in the preheated oven to keep warm.
  • Place avocados in 1 layer onto grill; cook, turning once, until browned, about 5 minutes.
  • Fill tortillas with avocado and onion mixture; roll or fold tortilla around filling.

1 (1 ounce) package fajita seasoning
1 tablespoon olive oil
1 ½ pounds raw shrimp, peeled and deveined
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 red onion, sliced into strips
1 jalapeno pepper, sliced into rings

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Mix fajita seasoning and olive oil together in a large bowl. Add shrimp; toss to coat.
  • Lay out seasoned shrimp in a single layer on a baking sheet. Add red bell pepper, yellow bell pepper, red onion, and jalapeno pepper; mix with shrimp and spread out evenly.
  • Roast in the preheated oven until shrimp are opaque, 8 to 10 minutes. Transfer shrimp to a serving plate.
  • Broil pepper mixture until lightly blackened, 2 to 3 minutes. Transfer to the serving plate with shrimp.

Mexican flavours of lime, garlic, chilli and coriander infuse these tasty tortilla wraps served with creamy guacamole

juice 2 lime , plus wedges to serve
1 red chilli , deseeded and chopped
2 garlic cloves , crushed
small bunch coriander , chopped
225g large raw peeled prawn
1 avocado , stoned and skinned
1 heaped tbsp soured cream , plus extra to serve
1 tbsp olive oil
1 red pepper , deseeded and sliced
4 flour tortillas and a good handful mixed salad leaves, to serve

Steps:

  • Mix half the lime juice, half the chilli, half the garlic and half the coriander with some seasoning in a shallow dish. Add the prawns and mix to coat them all. Leave to marinate while you prepare the avocado.
  • Roughly chop the avocado and pop it in a small food processor with the remaining lime juice, chilli, garlic, the soured cream and some seasoning. Whiz until smooth, then stir in the remaining coriander. (You could also use a stick blender for this.)
  • Heat the oil in a frying pan and cook the pepper for a few mins, until starting to soften. Add the prawns and fry, in a single layer, for 1-2 mins each side - you will know they are cooked when they turn pink and feel firm to the touch. Serve in warm tortillas with salad leaves, if you like, alongside the avocado cream, soured cream and some lime wedges.

1 ripe Hass avocado, halved, pitted and flesh chopped
1/4 cup Hellmann's Real Mayonnaise
1 teaspoon diced fresh jalapeno pepper (optional)
1 fresh lime, juiced
Water
Salt and freshly ground black pepper
2 tablespoons canola oil
1 large red onion, halved and thinly sliced
1 large red bell pepper, halved and thinly sliced
1 teaspoon ground cumin
2 cups leftover shredded turkey
2 tablespoons chopped fresh cilantro leaves
4 large flour tortillas

Steps:

  • Combine the avocado, mayonnaise, jalapeno pepper and lime juice in a blender or food processor. Add a splash of water and puree until smooth; season with salt and pepper, to taste. Scrape into a bowl.
  • Heat the oil in a large saute pan over high heat. Add the onion and pepper and cook until soft, about 5 minutes. Add the cumin and cook for 1 minute. Add the turkey, cook until just heated through and stir in the cilantro.
  • Put the tortillas on a plate, cover with a damp paper towel and microwave on high heat for 40 seconds to warm through. Put some of the turkey mixture in the center of each tortilla, drizzle with some of the Creamy Avocado Sauce, roll and serve.
