1.5 pounds white fish
2 tbsp Olive oil (and extra for garnish)
1 cup olives ((Used a combination of Castelvetrano olives, Kalamata olives and Cerignola olives))
2 lemons (sliced)
4 shallots (peeled and sliced)
1 cup tomatoes ((used Compari tomatoes cut in slices but heirloom tomatoes fresh from the garden would be awesome in this dish))
2 tsp Italian seasoning
salt and pepper (to taste)
Basil (fresh optional for garnish)

Steps:

  • Preheat grill on medium high heat or preheat oven to 190 degrees Celsius or 375 degrees F.
  • Lay out 4 pieces of aluminum foil large enough to fold around the fish with leaving a little extra room. One sheet for each personal portion. Drizzle a little olive oil so it does not stick.
  • Lay a fish fillet in each of the aluminum foil sheets. Top the fish with olives, lemons, shallots, tomatoes, Italian Seasoning and salt and pepper to taste.
  • Grab the aluminum foil on each side of the fish and fold over making sure you leave room for the fish to steam inside. Fold over each of the ends to seal in the juices of the fish.
  • Bake fish in oven or grill fish on outdoor grill for about 12-15 minutes (depending on the thickness of the fish) or until flakes easy with a fork. (Start checking your fish at 9 minutes as it all depends on the thickness of your fish)
  • Serve the fish in their little packets and let your guest open them. Drizzle with a little extra virgin olive oil and garnish with fresh basil. Serve with a nice tossed salad and veggies. Enjoy!

One 1-pound red snapper, cleaned
3 cloves garlic, minced
1 jalapeno, minced
Kosher salt and freshly ground black pepper
All-purpose seasoning, for seasoning the fish
5 tablespoons butter, plus more for greasing foil
1/4 pound okra, chopped
1 red bell pepper, diced
2 tablespoons chopped fresh parsley leaves
2 tablespoons white wine

Steps:

  • Preheat oven to 450 degrees F.
  • Wash the fish thoroughly and dry on paper towels. Score both sides of fish 3 times. Combine the minced garlic and jalapeno and stuff mixture into each of the 6 slits. Rub the fish with salt, pepper and all-purpose seasoning. Let fish marinate for 30 minutes (or overnight in the refrigerator for more intense flavor.)
  • In a medium skillet over medium heat, melt 1 tablespoon butter. Add the okra and bell pepper and cook until just tender, about 5 minutes. Make a slit down the center of the fish's belly. Stuff the belly of the fish with the okra and peppers and the chopped parsley. Place the fish on a rectangular piece of buttered foil. Place the remaining butter on top of the fish and drizzle with with the white wine.
  • Seal the fish in the foil, but leave a slight opening to allow the steam to escape. Place the fish on a baking sheet and bake until cooked through, about 10 to 15 minutes.
  • Remove from the oven, and transfer from foil to a serving dish, along with the juices collected in the foil.

1/4 cup chiffonade fresh basil leaves, plus more for garnish, if desired
1/2 cup julienned sweet onions
1/4 cup pitted and sliced kalamata olives
1 teaspoon salt
1/2 teaspoon freshly ground black pepper, plus more to taste
4 (4 to 6-ounce) skin-on red snapper fillets
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
2 tablespoons unsalted butter
3/4 cup chopped yellow onions
1 cup long-grain white rice

Steps:

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Combine the tomatoes, basil, onions, and olives in a bowl. Season with salt and pepper, to taste. Season both sides of the fillets with 1 teaspoon salt, 1/2 teaspoon pepper, and Essence. Arrange the fish on the baking sheet, followed by the tomato mixture and then the lemon slices. Drizzle 1 tablespoon of olive oil over each fillet.
  • Bake for 15 to 20 minutes, or until the snapper is cooked through. To serve, place a portion of Rice Pilaf on an entree plate. Use a spatula to remove the fish, along with the tomatoes, onions and lemons from the baking sheet and place over the Rice Pilaf. Drizzle with tomato water, if desired, and garnish each fillet with a chiffonade of fresh basil.
  • Combine all ingredients thoroughly.
  • Recipe from "New New Orleans Cooking", by Emeril Lagasse and Jessie Tirsch, published by William and Morrow, 1993.
  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large ovenproof saucepan or Dutch oven over medium-high heat. Add the onions and cook, stirring, until soft, 3 to 4 minutes. Add the rice and cook, stirring, until opaque and nutty in aroma, 2 to 3 minutes. Add the chicken broth and salt, stir well, and bring to a boil. Cover with a tight-fitting lid and transfer to the oven. Bake until the rice is tender and the liquid is absorbed, 25 to 30 minutes.
  • Remove the rice from the oven and let stand, undisturbed, for 5 to 10 minutes. Fluff the rice with a fork and stir in the green onions, if desired. Serve hot.
  • Combine all ingredients in a blender or food processor. Add just enough olive oil for flavor and season with salt and pepper, to taste.

2 pounds skin-on red snapper fillets
2 cloves fresh garlic, minced
1 pinch garlic salt, or to taste
1 pinch ground red chile pepper, or to taste
½ cup chopped fresh cilantro
1 lime
2 tablespoons butter

Steps:

  • Spray a baking dish with cooking spray. Place red snapper skin-side down in the baking dish. Sprinkle evenly with garlic, garlic salt, and red pepper. Spread cilantro evenly over the fish; squeeze lime evenly on top.
  • Marinate in the refrigerator, 30 minutes to 1 hour.
  • Preheat the oven to 425 degrees F (220 degrees C). Melt butter and pour evenly over the fish.

  • Clean red snapper inside and out under cold running water. Pat dry with paper towels.

1 (2 lb) whole red snapper, cleaned, head on
2 teaspoons salt, plus pinch for couscous
1/2 teaspoon fresh ground black pepper
1 small bunch fresh oregano
1 small bunch fresh parsley
1 whole lemon, thinly sliced
1 cup thinly sliced red onion
2 teaspoons minced garlic
1 cup halved grape tomatoes
1 cup drained and quartered artichoke heart
1/2 cup white wine
1 tablespoon butter

Steps:

  • Preheat oven to 425 degrees F.
  • Rinse couscous in fine mesh strainer, under cold water, lay out on parchment lined baking sheet and sprinkle with pinch of salt. Set aside. Cut parchment paper into 15 by 48-inch sheet. Fold in 1/2 and lay on baking/cookie sheet. Unfold and lay snapper diagonally on sheet pan on top of 1 layer of parchment. Salt and pepper fish, inside and out. Place herbs inside cavity of fish along with 1/2 of lemon, and 1/2 of red onion. Arrange couscous next to fish on all sides. Put garlic, and remaining lemon and red onion on fish and lay tomatoes and artichoke hearts around outside of couscous, creating somewhat of a wall. Pour wine over fish and dot with butter. Fold over edges of parchment paper, stapling if necessary, to create and almost airtight seal. Bake in oven for 30 minutes. Carefully open and serve (be aware of bones in the fish).

1 shallot, finely chopped
1 whole red snapper, cleaned and scaled
1 teaspoon salt
1 teaspoon freshly ground black pepper
6 to 10 fresh thyme sprigs
6 to 8 thin lemon slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Line an oven tray (cookie sheet) with parchment paper. Take a large piece of foil (large enough to fully wrap the fish like a present) and put it on the oven tray. Butter the foil. Combine the 4 tablespoons of butter and the shallots in a small bowl and set aside. Put the fish in the center of the foil. Season the entire fish with the shallot butter, inside and out and sprinkle with the salt and pepper. Put the thyme sprigs inside cavity and top the fish with lemon slices. Fold the edges of the foil over fish and seal.
  • Bake the fish until cooked through, about 45 minutes. Transfer the fish to a platter. Open the foil and serve.

1/2 medium onion, peeled and minced
1/2 stalk celery, peeled and minced
1/2 clove fresh garlic, peeled and minced
1/2 tablespoon curry powder
1/2 cup white wine
3/4 cup fish stock or clam broth
Vegetable Italian Couscous, recipe follows
1 (6 to 7-ounce) red snapper fillet, skin on
Super fine flour
Coarse salt, to taste
Pepper, to taste
1/8 cup vegetable oil
1/4 cup carrot extract (juice)
1 tablespoon fresh tarragon, chopped
1 tablespoon fresh parsley, chopped
2 tablespoons olive oil
1/4 cup brunoise carrot
1/4 cup brunoise celery
1/4 cup brunoise red pepper
2 cups chicken stock or vegetarian stock
1/2 cup Italian couscous

Steps:

  • Heat olive oil in a medium saute pan over medium heat. Add vegetables and cook for 3 minutes, or until they have just sweated their moisture. Stir in curry powder and cook for 1 minute. Add wine and simmer 4 minutes. Stir in the stock and cook, for 10 minutes. Remove from heat. Cover and keep warm on back of stove.
  • Reheat vegetable couscous. Wipe snapper fillet dry. Using a sharp knife, score the skin in a crosshatch pattern. Lightly dust with flour and season to taste with salt and pepper. Heat vegetable oil in a 12-inch saute pan over medium heat. When very hot but not smoking, add the fillet, skin-side down. Raise heat and cook, occasionally tilting pan to distribute fat evenly, for about 6 minutes. Remove from heat and drain on paper towels.
  • Return sauce to high heat. Bring to a rolling boil, add 1/2 tablespoon olive oil, carrot juice, and herbs. Taste and adjust seasoning with salt and pepper. Turn off heat. Place vegetable Italian couscous in shallow soup (or pasta) plate. Carefully set snapper fillet in the center of couscous. Quickly spoon broth over top and serve.
  • Heat medium stockpot, add olive oil and saute carrots, celery and red pepper until translucent.
  • Add chicken stock or vegetarian stock. Bring to a boil, add couscous and lower heat to a simmer, and cook for 5 to 7 minutes.

1 tablespoon minced garlic

4 pieces of heavy-duty aluminum foil, 15 inch squares
4 teaspoons Emeril's Original Essence
4 (8 ounce) red snapper fillets
2 tablespoons lemon juice
6 tablespoons extra virgin olive oil, plus
1/3 cup extra virgin olive oil
4 ounces frisee
8 ounces Baby Spinach
1 head endive, sliced thinly at a 45 degrees angle
1 tablespoon minced shallot
3 tablespoons sherry wine vinegar
1 tablespoon Dijon mustard
salt & freshly ground black pepper

Steps:

  • Preheat the oven to 350°.
  • In a medium bowl, combine the vegetables with the olive salad, garlic, Italian seasoning, 1 teaspoon of the salt, and 2 tablespoons of the olive oil.
  • Mix together to combine.
  • Season the fish generously on both sides with the Emeril's Original Essence.
  • Fold each piece of aluminum foil in half.
  • Open each folded piece and place 1/4 of the vegetable mixture just below the crease and in the center of each foil square.
  • Place a snapper filet on top of the vegetables.
  • Drizzle each fillet with 1/2 a tablespoon of lemon juice and 1 tablespoon of the olive oil.
  • Fold the foil over the fillet and tightly crimp the edges to form a seal.
  • Place the pouches on a sheet pan and place in the oven to bake for about 25 minutes.
  • While the fish bakes, in a large mixing bowl, combine the frissee, baby spinach, endive and red onion.
  • Season the lettuce with salt and cracked black pepper, and toss to combine.
  • Divide the lettuces among 4 entrée plates.
  • Remove the fish from the oven.
  • Combine the shallots, vinegar and mustard in a medium bowl set over a plate covered by a dishtowel to prevent the bowl from moving while whisking.
  • Whisk the mixture while gradually adding the remaining 1/3 cup of the olive oil.
  • Gently pierce each fish packet and whisk the juices into the vinaigrette.
  • Season the vinaigrette with salt and pepper.
  • Place the fish and vegetables over each salad.
  • Divide the vinaigrette evenly over the 4 salads and serve immediately with crusty bread.
