2 big handfuls fresh cilantro leaves, finely chopped
1/2 jalapeno, sliced
1 teaspoon grated fresh ginger
1 garlic clove, grated
2 limes, juiced
2 tablespoons soy sauce
Pinch sugar
Sea salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 (6-ounce) block sushi-quality tuna
1 ripe avocado, halved, peeled, pitted, and sliced

Steps:

  • In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.
  • Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.

1/2 cup soy sauce
1/4 to 1/2 cup rice wine vinegar
2 teaspoons sambal oelek
4 scallions, white and light green sliced and finely chopped, dark green sliced on an extreme bias for garnish
2 cloves garlic, smashed and finely chopped
1 1/2 inches ginger, peeled and grated
Four 6-ounce sushi-grade tuna steaks, preferably in logs about 2- by 2- by 4-inches
Peanut oil, for searing

Steps:

  • In a flat, shallow dish, combine the soy, rice vinegar, sambal, white and light green scallions, garlic and ginger. Add the tuna and roll around to get the marinade on all sides. Cover and let sit in the fridge for up to 2 hours, turning the tuna periodically.
  • Remove the tuna from the fridge and let sit in the marinade outside of the fridge for 20 to 30 minutes.
  • When the tuna has come to room temperature, remove it from the marinade. With a paper towel, gently remove some of the excess marinade.
  • Coat a large saute pan with peanut oil and bring it to a VERY high heat. When the pan is VERY hot but not quite smoking, pull the pan off the heat and add the tuna to the pan. Return the pan to the heat and sear the tuna for 1 minute on each side.
  • Remove the tuna from the pan, let rest for 4 to 5 minutes and slice into 1/4 to 1/2-inch thick slices. Sprinkle with the dark green sliced scallion tops.
  • Serve immediately with a little extra soy on the side if desired.

1 tablespoon mirin (Japanese sweet wine)
1 tablespoon honey
2 tablespoons sesame oil

Steps:

  • In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.

Japanese food is one of my favourite cuisines and this recipe shows why. It's simple, quick, healthy and yet the taste really packs a punch!

200 g dry somen noodles
1 tablespoon sesame oil
2 tablespoons lime juice
1 teaspoon wasabi
25 g pickled ginger
2 tablespoons fresh chives
375 g tuna
sesame seeds, to coat

Steps:

  • Boil a large pot of water, throw in the noodles and cook for two minutes or until soft.
  • Drain, rinse and cool.
  • Mix the sesame oil, lime juice and wasabi paste together.
  • Pour this over the noodles and mix in the pickled ginger and garlic chives.
  • Press the tuna into the sesame seeds until the fish is coated on all sides.
  • Heat a non-stick frying pan and cook the tuna for one minute on all sides or until just seared.
  • Transfer to a chopping board, let the tuna rest for a moment and then cut it into thick slices.
  • Serve with soy sauce and wasabi in dipping bowls.

Sweet Chili Ginger Dipping Sauce, recipe follows
6 tablespoons sesame oil
8 ounces udon noodles, prepared following package instructions
Yuzu Syrup, recipe follows
Salt and freshly ground black pepper
Green Papaya Salad, recipe follows
1 cup soy sauce
3 tablespoons peeled and sliced fresh gingerroot
1 1/4 cup rice wine vinegar
1/2 cup sweet chili sauce*
1/2 cup sesame oil
Salt and freshly ground black pepper
1 cup yuzu juice*
1 cup brown sugar
2 teaspoons yuzu chili paste*
2 teaspoons togerashi*
1 bottle ginger ale
1 cup water
1/2 cup lime juice
2 teaspoons salt
1 green papaya, peeled, seeded, and julienned*
2 tablespoons chopped fresh cilantro
1 red onion, peeled and julienned
1 teaspoon yuzu juice*
1 teaspoon lime juice
1 teaspoon rice wine vinegar
1 teaspoon sugar
Salt and freshly ground black pepper

Steps:

  • Marinate the tuna fillets overnight in the Sweet Chili Ginger Dipping Sauce. Heat 2 tablespoons of sesame oil in a saute pan and add the udon noodles. Toss to heat through, then add Yuzu Syrup. Toss again, then season to taste with salt and pepper.
  • Heat the remaining 4 tablespoons sesame oil until smoking in a separate saute pan. Remove tuna fillets from the marinade and generously season all sides with salt and pepper. Carefully place the fillets into the hot pan. Sear all sides of the fillets, 2 minutes for rare. Remove from the pan.
  • To serve, in the center of each plate place some udon noodles. Slice tuna fillets in half, on the bias, and place on udon noodles. Arrange Green Papaya Salad over top of tuna and serve.
  • Combine soy sauce, ginger, vinegar, and chili sauce in a blender. Puree until smooth. Slowly add in the sesame oil until sauce is emulsified. Season, to taste, with salt and pepper. Store refrigerated for up to 1 week
  • Combine yuzu juice and brown sugar in a non-reactive saucepan; place over high heat and bring to a boil. Reduce to a syrup consistency. Whisk in yuzu chili paste and togerashi. Store refrigerated for up to 1 month.
  • Salt and freshly ground black pepper
  • Combine ginger ale, water, 1/2 cup lime juice, 2 teaspoons salt in a saucepan. Place over high heat, and bring liquid to a boil. Add green papaya to boiling liquid, and poach for about 8 minutes. Remove papaya from poaching liquid, and set in cooler to chill.
  • Combine remaining ingredients in a mixing bowl. Add chilled, poached papaya to ingredients, and mix thoroughly. Season, to taste, with salt and pepper.

1/2 cup fried rice noodles

1 navel orange, peeled and sectioned

Steps:

  • In a small bowl, whisk together the vinegar, soy sauce, lime, ginger, mustard and cilantro. Pour in the oil and continue to whisk until emulsified.
  • Season the tuna fillets with salt and pepper; lightly coat with oil. Put sesame seeds on a plate. Coat top and bottom of each fillet with seeds. Heat a large, dry skillet over high heat. Add fillets; cook about 3 minutes. Turn; cook until desired doneness, about 3 to 4 minutes for rare. Slice the tuna into 1-inch thick strips.
  • Mix the greens together and spread out on a platter. Add the green onions, rice noodles almonds, and orange segments. Lay the tuna strips on top then drizzle with the vinaigrette. Season with salt and pepper and serve immediately.
