BOILED & BAKED RIBS

Boiled & Baked Ribs image

These aren't meant to replace, or even compete with, a traditionally barbecued version. This is simply a fast and tasty alternative method for having a nice stack of ribs appear on your snack table.

BEST BABY BACK RIBS IN TOWN

Best Baby Back Ribs in Town image

When Damon's Restaurant left our area, I had to re-create their delectable, sweet, hickory-flavored ribs because we all loved them so much. These tender, juicy, melt-in-your-mouth ribs live up to their name and are my family's #1 favorite. Although this recipe takes a while to prepare, the steps are easy, and the results are well-worth the trouble. The sauce recipe came from my cookbook, "True Southern Family Recipes". It can be prepared ahead and refrigerated indefinitely.

Categories     Sauces

Time 2h30m

Yield 2 9x13 casserole full of ribs, 6-8 serving(s)

Number Of Ingredients 12

3 lbs baby back ribs (pork)
1/4 cup molasses
1 cup ketchup
6 tablespoons vinegar
3/4 cup brown sugar
4 teaspoons liquid smoke
1/4 teaspoon onion powder
1 1/4 teaspoons chili powder
1/2 teaspoon dry mustard
1/2 teaspoon garlic powder (not garlic salt) or 1/2 teaspoon garlic powder (not garlic salt)
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Make one recipe of Rib Sauce (above) and set aside.
  • Pre-cook ribs by EITHER Baking (preferred method) OR Parboiling.
  • MAKE-AHEAD TIP: After pre-cooking (baking or parboiling) ribs, they may be vacuum sealed and frozen for up to 3 months OR glazed with Rib Sauce and refrigerated or given their final baking immediately.
  • ** BAKING RIBS (preferred method): Cut rack of ribs in half. Place 1 1/2 pounds ribs in each of two 9x13-inch casserole dishes.
  • Add 1/4 cup vinegar to each casserole. Cover with foil and bake at 350 degrees for 50 minutes. Drain all liquid.
  • ** PAR-BOILING RIBS: Cut rack of ribs in half. Fill large pot with water; heat to boiling. Add all ribs to boiling water (should be enough to just cover top of ribs).
  • Simmer ribs about 45 minutes until just tender but meat is not falling off the bones. Remove ribs from boiling water. Rinse and drain.
  • **** RIBS (Final Baking): Cut ribs in sections. In two 9x13-inch glass casserole, place ribs in SINGLE layer in casserole.
  • Pour about 1/3 of Rib Sauce over one dish of ribs to glaze them.
  • Repeat with second half of ribs, using another 1/3 of sauce or enough of the remaining sauce to glaze all the ribs.
  • MAKE-AHEAD TIP: At this point you can cover them with plastic wrap and refrigerate for up to 48 hours.
  • If frozen, thaw before baking.
  • Place UNCOVERED ribs in preheated 350 degree oven.
  • Bake for 45-60 minutes until most of sauce has been absorbed by the ribs and meat is "melt-in-your-mouth" tender.
  • If you have any remaining sauce, serve it with the ribs, along with plenty of napkins.
  • These are finger-licking good and messy to eat-- but is there any other way to eat ribs?.
  • *** RIB SAUCE: Mix cornstarch and water together to make a slurry Set aside.
  • Mix remaining dry ingredients together.
  • Place in saucepan.
  • Mix remaining wet ingredients together.
  • Pour half of wet ingredients into dry ingredients, stirring to mix well.
  • Add remaining half of wet ingredients, stir to mix well, and simmer mixture, uncovered, for about 10-20 minutes to thicken sauce a bit.
  • While mixture is gently boiling, pour in slurry while stirring.
  • Return mixture to a slow boil and cook until sauce thickens a little.
  • Sauce should be thick enough to cling to ribs, yet pourable.
  • Cool sauce and store in air-tight glass or plastic container.
  • Refrigerated it keeps indefinitely.

PARBOILED BABY BACK RIBS - OVEN

Parboiled Baby Back Ribs - Oven image

This is the BEST way to par boil ribs ever! So tender, all you need is a fork.

Provided by Megan Wood

Categories     Ribs

Time 3h

Number Of Ingredients 7

1 slab of baby back ribs
1 bottle sweet baby rays honey bbq sauce
1 bottle sweet baby rays honey chipotle bbq sauce
3 pinch chili powder (to taste)
15 clove garlic
1 sweet vadilia onion - chopped in quarters
a lot of salt and pepper to taste

Steps:

  • 1. Remove the silver lining off the back of the baby back ribs. I find it easiest to make a long incision down the middle and remove it in two parts. Cut the ribs into 4 sections (about 3 - 4 ribs per portion)
  • 2. Put the ribs in a large stock pot and cover with water. Combine the Garlic cloves, onion, salt, pepper and any other seasoning you like to use (I like Cavenders). Bring to a rolling boil, cover and simmer for an hour. Preheat your oven to 250
  • 3. Take 2 large pieces of aluminum foil and put two sections of ribs in each. Slather the ribs with equal parts of the two Sweet Baby Ray's sauces. NOTE - you don't have to use both, I just like mine sweet and spicy! Sprinkle a little chili powder on top and tightly seal the aluminum packets.
  • 4. Cook for 2 hours at 250 degrees. Remove and put your oven on broil. Open up the aluminum packets but do not remove the ribs. They will now go in the broiler to give the tops a nice crispy finish. Eye it, it can take anywhere from 2-5 minutes depending on how you like them.

OLD BAY BARBECUED BABY BACK RIBS

Old Bay Barbecued Baby Back Ribs image

Old Bay with ribs you say? YES! Old Bay seasoning is not just for seafood. This recipe includes a great rub using Old Bay Seasoning. Easy to prepare and fast, especially if you boil the ribs in advance. Barbecue time is only 20 minutes! GASP!-Yes I said boil. I know many say boiling boils out all the flavor, but these ribs are as tasty as can be. Cook time does not include standing time of 20 minutes to 24 hours. These can be finished either on the grill or in the oven.

Provided by IHeartDogs

Categories     Very Low Carbs

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 6

1 (2 1/2 lb) baby back rib racks (about)
1 medium onion, peeled and quartered
2 garlic cloves, peeled and smashed
4 teaspoons Old Bay Seasoning
2 tablespoons brown sugar
your favorite barbecue sauce (I use Sweet Baby Ray's)

Steps:

  • Cut ribs into 3 or 4 rib sections.
  • Place ribs in a large stockpot along with onion and garlic.
  • Cover with water and bring to a full boil.
  • Cover pot and lower heat to simmer, and let simmer for 45 minutes.
  • Meanwhile, in a small bowl, combine Old Bay seasoning and brown sugar together, mixing well.
  • After 45 minutes, carefully remove ribs from stockpot and place on a platter and let cool for 5 minutes.
  • Rub ribs with seasoning mix.
  • Let ribs stand with rub anywhere from 20 minutes to 24 hours, wrapping and refrigerating if longer than 20 minutes (I make mine the morning of the day I'm planning on barbecuing them).
  • Before finishing, bring ribs back to room temperature if they have been refrigerated.
  • If using the grill, preheat grill to medium or medium-high heat.
  • Place ribs on grill and barbecue 5 minutes on each side, then baste with your favorite barbecue sauce and continue to grill about 5-10 minutes each side, until heated through.
  • If finishing in the oven, preheat oven to 350°F and place ribs on shallow baking dish.
  • Bake for about 10 minutes, then baste with sauce and bake another 10 minutes.
  • Turn ribs over, baste the other side, and continue cooking about 10 minutes more, until heated through.
  • Serve ribs with extra sauce on the side.

Provided by Food Network

Time 45m

Yield 6 servings

Number Of Ingredients 6

1 full rack baby back ribs
2 lemons
1 cup kosher salt
2 tablespoons black peppercorns
2 bay leaves
Prepared glaze, for finishing, optional

Steps:

  • Put the ribs in a large stockpot and fill with enough cold water to cover. Squeeze the lemons into a bowl and strain the juice into the pot; add the lemon rinds as well (remove any seeds). Add the salt, peppercorns and bay leaves and bring to a boil. Boil until the ribs are slightly soft but not falling apart, about 25 minutes.
  • Prepare a grill for high heat.
  • Transfer the ribs to the grill, meatier-side down. Grill for 10 minutes; brush with glaze if you like and then grill another 3 minutes. The finished ribs should be at least 165 degrees F in the center; you don't want to char the meat, but you want it to fall apart.

SHOULD YOU BOIL SPARERIBS BEFORE BAKING OR GRILLING?
Since the ribs are fatty, many cooks choose to parboil spareribs for a short time or boil for an extended period of time to tenderize the rib meat. This renders some of the surface fat and makes it easier to remove the inner skin from the ribs before you grill them, too. This step is also used to shorten the cooking time. The ribs are then further cooked on the grill or in the …
