4 cups Potatoes (about 3-4 large russet potatoes peeled and diced)
1 Small onion (chopped)
3 cups Chicken broth
4 tablespoons Butter
1/4 cup Flour
1/4 cup Sour cream
1 1/2 cup Heavy cream (half and half will also work)
Salt and pepper to taste
Bacon (cooked and crumbled)
1 1/2 cups Cheddar cheese
Green onions

Steps:

  • Add potatoes, diced onions and chicken broth to your slow cooker. Cook on low 4-6 hours or high 3-4 until potatoes are tender.
  • About 30 minutes before it is done, In a medium saucepan,, melt the butter. Whisk in flour and cook until bubbly. Slowly add heavy cream, sour cream. The mixture should be thick. Add this to the soup and stir. Continue to cook in slow cooker for 20-30 minutes.
  • Serve with toppings, or you can also stir them all into the soup. Enjoy!

1 small onion, chopped
2 tablespoons butter
2 cubes chicken bouillon
2 tablespoons dried parsley

2 cups milk
½ cup all-purpose flour

Steps:

  • Place the potatoes, onion, butter, chicken bouillon cubes, parsley and water into a slow cooker. Set on low and let cook for 6 to 8 hours.
  • At least half an hour before serving, stir together the milk and flour until no lumps remain, and mix into the soup. Cook for 30 minutes or until the soup is thickened.

¾ cup real bacon bits
1 small red onion, chopped

5-1/2 cups cubed peeled potatoes, divided
2-3/4 cups water
1/3 cup butter, cubed
1-1/3 cups cubed fully cooked ham
2 celery ribs, chopped

3/4 teaspoon garlic powder
3/4 teaspoon paprika
1/8 teaspoon pepper
1/2 pound process cheese (Velveeta), cubed
2/3 cup sour cream
Whole milk, chopped fresh parsley and coarsely ground pepper, optional

  • Place 4-1/2 cups of the potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Remove from the heat (do not drain).
