PAN-SEARED TUNA WITH AVOCADO, SOY, GINGER, AND LIME
Steps:
- In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.
- Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.
SEARED AHI TUNA AND SALAD OF MIXED GREENS WITH WASABI VINAIGRETTE

- Coat your steak with a combination of five-spice powder and grill seasoning or salt and pepper. Heat a grill pan or griddle over high heat. Spray grill surface or wipe with a thin layer of oil. Add tuna steak to the hot cooking surface and sear tuna 2 minutes on each side. Remove tuna from heat.
- Combine greens, radishes and cucumber in a bowl. In a smaller bowl, whisk wasabi, vinegar and soy sauce. Whisk in oil to combine dressing. Drizzle dressing over your salad and toss to coat evenly. Slice tuna on an angle and arrange on the salad.
SEARED AHI WITH CILANTRO GINGER DRIZZLE
Oh so easy, and a beautiful presentation when using sushi-grade ahi. The sauce is versatile, and you can fine tune to your liking. Sometimes I add sesame oil, sometimes I use lemongrass paste (from the produce aisle) instead of ginger. And if I want it extra spicy, I use red Thai chilies. Make it your own!

- 1. In a small bowl, combine all the sauce ingredients and set aside.
- 2. Season the ahi with salt and pepper. Put about 1 1/2 tablespoons of olive oil in a skillet over medium heat. Oil should coat the surface. Heat till shimmering, then add the ahi. Let sear for about one minute per side - just enough to form a nice crust. Add about half the sauce to the pan and shake to distribute. Remove from heat.
- 3. Place the ahi on a cutting board and let sit for about 3 minutes to firm up. Meanwhile, peel and slice the avocado. Then slice the ahi on the diagonal.
- 4. To serve, arrange the ahi slices nicely on the plate, top with some avocado slices, and drizzle each portion with the remaining sauce. Serve immediately or the avocado will brown.
PAN-SEARED TUNA WITH GINGER, MISO AND CILANTRO SAUCE
Steps:
- Whisk lemon juice, sesame oil, soy sauce and pepper in small bowl to blend. Place tuna steaks in 13 x 9 x 2-inch glass baking dish. Pour marinade over tuna steaks; turn to coat. Cover and refrigerate 3 hours, turning occasionally.
- Remove tuna from marinade. Spray large nonstick skillet with vegetable oil spray. Heat skillet over high heat. Add 3 tuna steaks to skillet and cook about 3 minutes per side for medium-rare. Transfer tuna steaks to plate. Tent with aluminum foil to keep warm. Repeat with remaining 3 tuna steaks.
- Transfer tuna steaks to plates. Spoon Ginger, Miso and Cilantro Sauce atop tuna. Garnish with cilantro and serve.

- Combine in med sized bowl: soy sauce, sesame oil, honey, rice vinegar, ginger, garlic, juice of 1 lime. Whisk together. Add salt & pepper to taste. If you want it a little spicy, add about 1/2 tsp red pepper fakes.
- In large zip lock baggie, add ahi tuna steak. Pour in 1/4 cup dressing. Marinate for 30 minutes (or up to a couple hours). Reserve remaining dressing to use as salad dressing.
- Prepare salad. Layer lettuce on platter or shallow bowl, top with grated carrots, thinly sliced bell peppers, sliced cucumber, broccoli cole slaw mix, and cubed avocado.
- In cast iron skillet over medium heat, heat pan and add coconut oil. Remove ahi tuna steak from marinade (pat or shake off excess marinade), and cook for approximately 3-5 minutes per side. Cooking time will depend on thickness of ahi steak and how rare you want it. I cooked mine for about 7 minutes total.
