ARROZ DE CABIDELA
This is a traditional Portuguese chicken and rice dish. Found on-line and posted for Zaar World Tour 5.

- Rinse the chicken and pat it dry. Heat half of the oil in deep skillet and add the chicken, brown on both sides, about 8 minutes per side.
- Add salt, pepper, the cloves and the bay leaves. Add the wine, cover and to cook over low heat until chicken is tender, about 35 minutes. (If the chicken begins to dry, add just a little bit of water).
- Heat the remaining oil in separate oven-proof saucepan, fry the onion and garlic for 5 minutes on low heat. Add one of the peppers and the tomatoes, and to continue frying 10 minutes more. Incorporate the chicken and the broth, (calculating double volume to that of the rice) and when it begins to boil, to add the rice.
- Cook ton high heat, uncovered, unti rice is about half-way cooked, about 10 minutes approximately. Meanwhile, heat the oven to 350 degrees. Place the chicken, loosely covered, so that it finishes cooking approximately for 10 minutes.
- Garnish with remaining peppers and serve hot.

- Descasque e lave os dentes de alho e pique-os finamente. Arranje o frango, corte-o em pedaços e tempere com os dentes de alho, o pimentão-doce, o vinho branco, a folha de louro, sal e pimenta. Envolva muito bem e deixe marinar durante 30 minutos. Reserve.
- Descasque e lave a cebola e pique-a finamente. Aqueça o azeite num tacho, junte o frango escorrido e deixe corar de ambos os lados até que fique coradinho. Adicione a cebola, envolva muito bem e deixe refogar até que tudo fique douradinho.
- Junte a marinada ao tacho e deixe cozinhar durante 40 minutos aproximadamente até que o frango comece a ficar macio, regando com mais água, se for necessário.
- Verifique se tem 1 litro de caldo aproximadamente e rectifique os temperos. Junte o arroz e deixe cozinhar, mexendo de vez em quando, até o arroz estar cozido. Por fim junte o sangue previamente misturado com o vinagre, mexa bem e retire do lume. Decore com salsa picada e sirva.

- Pele o tomate, limpe-o de grainhas, pique em pedaços pequenos e junte ao refogado. Deixe cozinhar, mexendo de vez em quando até o tomate estar macio.
- Acrescente o frango cortado em pedaços, tempere com 1 colher de sopa de sal e deixe cozinhar, com o tacho tapado, durante cerca de 10 minutos, sobre lume moderado.
- Adicione água quente até cobrir o frango, volte a tapar e deixe ferver suavemente durante mais 20 minutos. Acrescente um pouco mais de água a ferver de modo a ficar com cerca de três vezes e meia o volume do arroz. Rectifique o sal, se for necessário, e assim que retomar fervura introduza o arroz. Mexa e tape.

- Comece por juntarnum tacho a cebola, o alho, o louro, a salsa e o azeite e deixe refogar, quando a cebola alourar, junte o frango limpo cortado em pequenos pedaços e deixe apurar o refogado, junte o pimentão e tempere de sal e piri-piri.
- Junte água e deixe cozinhar o frango até cozer. Verifique a quantidade de água e junte o arroz, deixe cozer 5 a 7 minutos. Deve deixar o arroz soltinho e não deve deixá-lo cozer demasiado.
