SHRIMP IN SPICY LIME SAUCE
Few people I know have gone food hunting in Cambodia, so I was curious when Deb Winson, a New York-based food stylist, came back with an ecstatic report. ''Everything was so fresh and beautiful, and everything was so simple,'' she said. When I asked her to describe her favorite dish, she told me about a great preparation for shrimp cooked in lime. The ingredients were much as I expected: limes, sugar, salt, chiles and garlic, all common in Southeast Asian cooking. But the technique sounded unusual. The shrimp were not stir-fried, as you might expect, but instead were simmered in a very pungent sauce so that they took on strong flavor and still stayed juicy. This is my version.

- In a small bowl, combine the lime juice, sugar and salt. Place oil in a 10- or 12-inch skillet, and turn the heat to high. A minute later, add the garlic and chile flakes and cook the garlic until it just begins to brown. Immediately add the lime juice mixture all at once, and cook until it reduces by half, or even more, 3 to 5 minutes. There should be only about 1/4 cup of liquid in the skillet, and it should be syrupy.
- Add the shrimp, and cook over high heat. The shrimp will give off liquid of their own and begin to turn pink almost immediately. After about 2 minutes, stir contents of pan. Continue cooking, stirring occasionally until all the shrimp are pink, about 4 minutes total. Taste, adjust seasoning, garnish with cilantro and serve with rice.

- Preheat an outdoor grill for high heat and lightly oil the grate.
- Whisk garlic, lime zest, rice vinegar, fish sauce, lime juice, chile pepper sauce, and sesame oil in a glass bowl.

- To a bowl, add oil(4 tbsp), garlic(3 cloves minced), chili powder(1 tsp), red chili flakes(1 tsp), cumin powder(1/2 a tsp), hot sauce(2 tsp), salt to season and sugar(optional to balance off the marinade if it is too tart).
- Mix well until combined.
- Place the cleaned and deveined prawns(500g, shrimp)in a bowl, pat dry.
- Pour in the chili-lime marinade and combine. cover and set aside to marinate for at least 30-45 minutes.
- Refrigerate if you live in a hot and humid country.
- Once the shrimp are marinated, if you stored the shellfish in the fridge, let it reach room temperature
- Drain all the excess marinade into a smaller bowl and set it aside as it will be used later.
- Place a pan over a low-medium fire. add shrimp and spread them over the pan. cook each side for 1 minute or until they turn pink.
- Transfer to a bowl and set aside.
- If you look at the pan you cooked the shrimp in, you will find a certain amount of liquid that the shrimp released.
- To this liquid, add the remaining chili-lime marinade you saved.Cook the spicy chili lime marinade over low-medium heat, until it reaches a syrup-like consistency.
- This will happen when tiny bubbles start appearing on the surface.
- Once you have the correct consistency, add the shrimp and toss them around to coat. not more than 2 minutes to avoid the rubbery texture.
- Transfer the spicy shrimp to a bowl or platter
- If there is any remaining leftover marinade in the pan, add a teaspoon of hot sauce, mix and pour over the shrimp.
- And garnish with your favorite herbs chopped or serve as it is

- In a small saucepan combine tequilla, lime juice and honey. Bring just to a boil to melt honey and evaporate most of the alcohol. Set aside.
- Bring 2 quarts of water to a boil. Add lemon, onion, bay leaves and peppercorns to boiling water. Simmer for 5 minutes.

- Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off of bulb. Brush with oil. Wrap in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. - Pre-heat the oven to gas mark 6/400F/200°C
- Scale the fish well (ask your fishmonger to do it for you) and cut off the fins.
- Wash the fish thoroughly under cold running water and pat dry with kitchen paper.
- Make slashes diagonally across the fish, about 4 cuts on each side.
- Place the fish in an oiled roasting tray and brush lightly with some of the oil.
- Grate the zest of 1 lime and squeeze the juice.
- In a bowl, mix the juice and zest with the chopped herbs, grated garlic and finely sliced red onion and stuff the mixture into the slashes.
- Cut the remaining 2 limes in 4s and place alongside the fish.
- Season the fish and lime with salt and freshly milled black pepper and drizzle over the remaining oil.
- Place the tray on the middle shelf of the oven for about 25-30 minutes (depends on the size of the fish) until the flesh feels just firm when pressed.
- If you want to double-check that the fish is cooked, part some of the flesh down to the bone and see if it flakes.
- Place the fish on a serving plate and pour the remaining juices from the tray onto the fish.
- To serve, place the roasted lime alongside the fish or you may want to squeeze the lime on the fish and then place the squeezed lime on the side for garnish!
