SCRAMBLED EGGS WITH SALSA DE CHILE PASILLA
Steps:
- Remove veins, seeds and stalks if any from the dried chiles and discard. Wipe the chiles with a damp cloth to remove any dust. Heat the oil in a frying pan and gently fry the chiles, without burning, turning them around from time to time until they are firm to the touch, about 5 minutes. Remove the chiles with a slotted spoon and drain on paper towel. In the same oil, saute the onions until translucent, but not golden, add the tomatillos for two more minutes, then add garlic until lightly browned. Put the water into a blender jar add the tomatillo, garlic and onion mixure, and add crumbled chiles and salt. Pulse for a few seconds to a textured puree. Return the blended ingredients to the pan at medium heat, stirring occasionally and scraping the bottom of the pan, until the sauce has reduced and thickened a little--about 7 minutes. Salsa can be made ahead of time to let chiles soften and enhance flavor. Crack eggs into a pre-heated oiled pan and quickly scramble. Add salsa de chile pasilla to taste and continue to scramble until done. Serve with a bit of sour cream or crema mexicana.

- Cook bacon in large skillet over medium-high heat until brown and crisp. Using slotted spoon, transfer to paper towels to drain. Pour off drippings from skillet. Add butter to same skillet and melt over medium heat. Add eggs and stir gently until softly set, about 4 minutes. Mix in bacon. Season eggs with salt and pepper.
- Spoon eggs into roasted chiles through slit. Arrange 1 stuffed chile on each plate. Spoon warm cheese sauce over. Garnish with guajillo chile strips, cilantro, tortilla chips, and tomatoes.
- *Melting cheese available in balls, braids, or rounds. Sometimes labeled queso asadero or queso oaxaca. Substitute mozzarella or Monterey Jack.
PASILLA SALSA
When dried-as you will usually find them-pasillas are often called chile negro, or black chile. They are thin, small, shriveled, and very dark. They are also earthy and not especially hot, so they yield a rich, densely flavored sauce traditionally used with lamb, beef, and chicken. If you want some heat, soak a dried chipotle or two with the pasillas. If you can find fresh tomatillos, use them in place of the tomatoes. Slip off the papery husks and add a little water to the sauce.

Steps:
- Soak the pasillas in hot water to cover until they are quite soft, about 10 minutes. Meanwhile, put the lard in a small saucepan over medium heat; a minute later, add the tomatoes, along with some salt and pepper. Cook, stirring occasionally, until soft, about 10 minutes.
- Drain the chiles and reserve some of their soaking liquid. Remove their stems and seeds; tear each into several pieces as you do so. Combine in a blender with the tomatoes, garlic, onion, and a little of the soaking liquid. Puree, adding more liquid if necessary to allow the machine to do its work. Taste and adjust the seasoning, then serve warm or refrigerate.

- In a medium bowl, vigorously whisk the eggs until the whites and yolks are fully incorporated. Set aside.
- In a medium or large skillet over medium heat, melt the butter. Once the butter is melted, add the egg mixture and scramble, using a silicone or wooden spatula to push the just-cooked parts in so more of the liquid eggs can cook. After about 1 to 2 minutes, once the eggs have cooked about 3/4 of the way, sprinkle on the cheese. Gently fold the eggs over to help melt the cheese. Then immediately add the salsa, and stir into the eggs.
- As soon as the eggs are just fully cooked (don't overcook them or they will become rubbery), turn off the heat and transfer the salsa eggs onto a plate. Garnish with chopped cilantro and serve with a side of sour cream, if desired.
