DANISH RED CABBAGE (RøDKåL)

The traditional danish red cabbage also known as Rødkål. This cabbage is traditionally eaten at Christmas time and especially together with Danish Roast Pork with Crackling (Flæskesteg). It is easy to make.

1 kg red cabbage ((2.2 lb))
2 dl vinegar ((3/4 cup))
1.5 dl currant juice or elderberry juice ((2/3 cup))
150 g sugar ((5 oz))
1 tsp salt

Steps:

  • Step 1: Finely shred the red cabbage and make sure that the pieces are not too long. Put the shredded red cabbage in a large sauce pan.
  • Step 2: Pour the vinegar in the sauce pan, turn on the heat and let it simmer for about 30 minutes. Stir in the cabbage regularly so that it doesn't burn to the bottom of the sauce pan.
  • Step 3: Add the juice, sugar and salt to the sauce pan and let it simmer for another 30 minutes or until it has the right consistency. The consistency is basically up to you - the longer you cook it the softer you will get the red cabbage.
  • Step 4: Clean some glass jars using boiling water. This will kill all bacteria so that the red cabbage will last longer. Pour the red cabbage onto the jars and seal them right away. Keep the jars refrigerated.

1/4 cup butter
4 green apples, peeled and chopped
1 large onion, sliced
2 lbs red cabbage, shredded
1/4 cup light brown sugar
2 tablespoons cider vinegar
1 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/3 cup red wine
2 tablespoons currant jelly

Steps:

  • Melt butter in a heavy large Dutch oven over medium high heat.
  • Add apples and onion and saute until tender, about 10 minutes.
  • Stir in cabbage and stir frequently for about 8 minutes.
  • Stir in sugar, vinegar, salt, cloves, and allspice.
  • Cover and cook until cabbage is crisp-tender about 10 minutes.
  • Uncover and add red wine and jelly and cook 5 minutes more.
  • Add salt and pepper to taste if desired.

Wonderful with the Christmas Ham I've also posted. I tend to leave it cooking on a low flame until its tender, I've tried to give an idea of how long this takes but it all depends on the size of cabbage and how you like it. Don't worry, it can stay on the hob at a low temp for a rather long time without spoling (I've left it there for a couple of hours whilst waiting for other things to cook and its been great).

2 tablespoons vinegar
1/4 cup butter
1/4 cup sugar
1 teaspoon salt
1/2 cup red currant jelly
1 apple (medium sized, peeled, cored and diced)

Steps:

  • Mix cabbage with vinegar to keep it from darkening.
  • Melt butter in a pan and add sugar and salt, stir.
  • Add cabbage and cook for 15 minutes.
  • Add jelly and apples, stir and let it simmer for at least an hour (see note).
  • Serve hot.

1 cup chopped onions
1/4 teaspoon ground cloves

1 tablespoon red-wine vinegar
2 tablespoons brown sugar
1/4 cup fresh or canned chicken broth or water
Salt and freshly ground pepper to taste
2 tablespoons butter

Steps:

  • Pull off and discard any blemished outer leaves of the cabbage, and remove the core. Shred the cabbage finely.
  • Heat the oil in a heavy skillet. Add the onions and cook, stirring, until wilted. Add the cabbage, cloves, cumin, apple, vinegar, sugar and broth. Add salt and pepper. Blend well. Bring to a boil. Cover and simmer for 25 minutes, stirring often. Stir in the butter and serve.

1 medium red cabbage, 2 to 2 1/2 pounds
4 tablespoons butter
1 tablespoon sugar
1 teaspoon salt
1/3 cup water
1/3 cup white vinegar
1/4 cup red currant jelly
2 tablespoons grated apples

Steps:

  • Wash cabbage in cold water.
  • Cut in half, core and slice finely.
  • Combine butter, sugar, salt, water and vinegar in a large pot or Dutch oven and bring to a boil.
  • Add cabbage and stir to coat.
  • Bring to a second boil and then cover tightly.
  • Bake at 350 degrees for 2 hours.
  • Do not allow it to dry out.
  • Add more water if necessary.
  • Ten minutes before the cabbage is completely cooked, mix in the jelly and grated apple.

1 (2 pound) red cabbage
2 tablespoons butter
¼ cup distilled white vinegar
1 cup cranberry juice
2 tablespoons sugar, or more to taste
salt to taste

Steps:

  • Remove the outer set of leaves of cabbage and discard. Cut cabbage quarters; remove and discard white stem. Chop remaining cabbage finely.
  • Melt butter in a pot over medium heat. Cook and stir cabbage in melted butter until softened slightly, 2 to 3 minutes. Pour vinegar over cabbage and stir to coat. Add cranberry juice and sugar to the pot. Season cabbage mixture with salt.
  • Reduce heat to low, place a cover on the pot, and cook, stirring occasionally, until the cabbage is completely tender, 60 to 75 minutes. Add more sugar towards the end if it is tart.

1 medium red cabbage (about 3 pounds)
3 tablespoons butter
1 tablespoon sugar or more, according to taste
1/4 cup vinegar
Salt, pepper
2 medium tart apples, peeled, cored and chopped (optional)
1/2 cup red currant jelly

Steps:

  • Remove and discard tough outer leaves from cabbage. Shred cabbage very fine. In heavy kettle, melt butter. Add sugar, but do not brown. Add cabbage and cook 3 minutes, stirring constantly. Add vinegar, water, salt and pepper to taste. Simmer covered for 2-3 hours, or until cabbage is very tender. Stir occasionally, and if necessary, add a little hot water to prevent scorching. When cabbage is almost tender, add apples, if desired, and red currant jelly. Cabbage should be quite sweet-sour. If necessary, add more sugar or vinegar, a little at a time. Simmer covered for 30 minutes longer, stirring occasionally. Serve with roast goose or duck. This is best if made a day ahead, and reheated slowly.

DANISH CHRISTMAS RED CABBAGE

In Denmark it is traditional to serve a cooked pickled red cabbage for the Christmas Eve dinner. This is my mother's, and it is so easy to make and will be a great sidedish to any roast duck, turkey or goose. When reheating, I like to add a tablespoon of black currant jam to enhance the flavor.

2 pounds red cabbage, shredded

2 tablespoons cider vinegar
1 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/3 cup dry red wine
2 tablespoons red or black currant jelly

Steps:

  • Melt butter in heavy large Dutch oven over medium-high heat. Add choped apples and onion sauté until tender, about 10 minutes. Stir in cabbage and cook until slightly wilted, stirring frequently, about 8 minutes. Stir in sugar, cider vinegar, salt, cloves and allspice. Cover and cook until cabbage is crisp-tender, stirring occasionally, about 10 minutes. Uncover, add dry red wine and jelly and cook 5 minutes longer. Season to taste with salt and pepper. Serve warm, room temperature or chilled. (Cabbage can be prepared 1 day ahead. Cover and refrigerate. Reheat over low heat if serving warm.)

Norwegian Christmas Cabbage is essentially a kind of sweet and sour sauerkraut, spiced with caraway seeds.

8 slices bacon
1 large head cabbage, cored and shredded
¼ cup all-purpose flour
1 tablespoon caraway seed
1 pinch salt and pepper to taste
½ cup white vinegar, or to taste
½ cup white sugar, or to taste

Steps:

  • Lay two slices of bacon across the bottom of a large pot. Cover with a layer of cabbage. Sprinkle a light dusting of flour and a pinch of caraway seed. Season with a little salt and pepper. Repeat layering as many times as possible until you run out of room.
  • Fill the pot with enough water to come about 3/4 up the side. Bring to a boil, and cook for about 45 minutes, or until the cabbage is soft, stirring occasionally. Let cool slightly, then stir in the vinegar and sugar. Use your own judgment. Add sugar carefully to taste. The idea is to strike a balance between the sweet and the sour, and therein lies the trick.
