2 cups Israeli couscous
Extra-virgin olive oil
3 cloves garlic, smashed
Pinch crushed red pepper flakes
1/2 cup sliced almonds, toasted
1 cup chicken stock
1 cup pomegranate seeds
1/2 cup dried apricots, cut into 1/2-inch dice
4 scallions, white and green parts, cut thin on the bias

Steps:

  • Bring a small pot of well-salted water to a boil over high heat. Add the Israeli couscous and cook until cooked through, 6 to 7 minutes. Strain from the water and reserve.
  • Coat a large saute pan with olive oil. Add the garlic and crushed red pepper and bring to high heat. After a few minutes, add the almonds to toast them in the oil. When the garlic is golden and very aromatic, remove it from the pan and discard it. Add the cooked couscous and chicken stock. Season with salt and cook until the stock has reduced by half. Add the pomegranate seeds, apricots, and scallions. Stir to combine and taste to make sure it is delicious.
  • Serve hot or at room temperature.

2 bay leaves
2 cloves garlic, 1 smashed and the other finely chopped
1 blood orange, zested in wide strips
Kosher salt
1 cup Israeli couscous
1/2 cup dried cranberries
1/4 cup champagne vinegar
3 scallions, greens sliced and whites sliced thinly on the bias
2 ribs celery, sliced thinly on the bias
1/2 bunch fresh parsley, finely chopped
Big fat finishing oil

Steps:

  • Fill a medium saucepan with water. Add the bay leaves, smashed garlic and zest. Salt the water generously and bring it to a boil over medium-high heat. When boiling, add the couscous. Cook until cooked through, 7 to 8 minutes, and then drain. Discard the bay leaves, garlic and zest.
  • Meanwhile, in a large bowl, toss together the chopped garlic, cranberries, vinegar, scallion whites and celery. Season with salt and let sit for 20 minutes to soften.
  • Stir in the couscous, parsley and scallion greens. Drizzle with oil. Taste and re-season. Serve warm or at room temperature.

1 pound sea scallops, muscles removed and discarded
1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper
3 tablespoons olive oil
1/4 cup dry sherry
2 1/2 cups homemade or low-sodium canned chicken stock
3 tablespoons unsalted butter, cut into small pieces
Pinch of saffron
1 tablespoon fresh thyme
2 cups couscous

Steps:

  • Season scallops on both sides with 1 teaspoon salt and pepper. Heat 2 tablespoons oil in a saute pan over medium-high heat. Add scallops (work in batches; use remaining oil if necessary, depending on size of pan); cook until golden brown and caramelized, about 1 minute on each side. When cooked, pour off any fat remaining in pan. Set aside scallops on a plate covered with foil.
  • Return pan to heat. Deglaze pan with sherry, scraping browned bits from bottom of pan with a wooden spoon. Simmer until sherry is reduced by two-thirds. Add stock, butter, saffron, thyme, and remaining 1/2 teaspoon salt. Bring to a boil; add couscous. Cover the pan; remove from heat. Let sit for 5 minutes. Uncover; fluff with a fork; adjust seasoning if necessary. Serve with scallops.

1/8 teaspoon cayenne pepper

1 1/2 cups chopped tomatoes (canned or in cartons), with juice
1 cup dry white wine
3/4 pound medium shrimp, shelled and deveined, tail section left on
3/4 pound sea scallops or large bay scallops, muscle removed
3 tablespoons fresh coarsely chopped cilantro leaves
Israeli Couscous Pilaf

Steps:

  • Slice leeks in half lengthwise, and cut into 1/2-inch dice.
  • In a stockpot, heat oil over medium heat. Add leeks and garlic; saute, stirring, until translucent, about 7 minutes. Add jalapeno, carrots, spices, and salt; lower heat to medium low, and cook until carrots are almost tender, 4 to 5 minutes. Add tomatoes, wine, and 1 cup water. Bring to a boil, and lower heat to medium; cook 5 minutes.
  • Stir in shrimp and scallops; cook until just opaque, 4 to 6 minutes. Remove from heat, add cilantro, and serve over couscous pilaf.

4 ounces pancetta
4 tablespoons onions, minced
1/4 cup heavy whipping cream
1 tablespoon vegetable oil
4 tablespoons onions, chopped
2 tablespoons garlic, chopped
1 cup dry white wine
1/4 lb butter
2 lemons, juice of
salt and pepper
1 tablespoon vegetable oil
16 large scallops (rinsed and dried)

Steps:

  • COUSCOUS.
  • Cook couscous according to directions. Add salt and pepper to taste and set aside.
  • Cook pancetta for 5 minutes. Stir in the couscous, then cream and warm for 2 minutes.
  • SAUCE:
  • Heat oil and add onions, garlic, and cook for 5 minutes. Add wine and simmer until reduced by 1/2. Reduce heat to very low and add butter a little at a time.
  • Slowly add lemon juice, stirring constantly. Strain out the garlic and onion. Salt and pepper to taste.
  • SCALLOPS.
  • Heat oil over high heat. Add scallops and brown. Add salt and pepper to taste.
  • Place couscous on serving platter. Top with scallops then sauce.

1/2 cup golden raisin
1 piece cinnamon stick (3 inches)
1/2 teaspoon sea salt
1/8 teaspoon cayenne pepper or 1/8 teaspoon crushed red pepper flakes
1 cup israeli couscous
2 medium tomatoes or 2 medium green tomatoes, chopped
2 tablespoons chopped of fresh mint
1 teaspoon finely shredded lemon peel
1 1/2 lbs small sea scallops
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon sea salt
1/8 teaspoon cayenne pepper or 1/8 teaspoon red crushed red pepper flakes
1 tablespoon extra virgin olive oil
mango chutney (optional)

Steps:

  • In a medium saucepan bring water, raisins, stick cinnamon, 1/2 teaspoon salt, and 1/8 teaspoon cayenne pepper to boiling; stir in couscous & reduce heat.
  • Cover; simmer for 10 to 12 minutes or until liquid is absorbed and couscous is tender; discard stick cinnamon.
  • Stir in tomatoes, mint, and lemon peel.
  • Meanwhile, in a medium bowl toss together scallops, cumin, coriander, 1/4 teaspoon salt, and 1/8 teaspoon cayenne pepper.
  • In a heavy large skillet (cast iron works well) cook scallops, half at a time, in hot oil for 5 to 6 minutes or until browned and opaque, turning once.
  • To serve, spoon couscous mixture onto a platter; top with scallops.
  • Serve with chutney, if desired.

3 tablespoons vegetable oil
2 cups pearl (Israeli) couscous (10 oz)
2 3/4 cups water
1 1/4 teaspoons salt
1 red bell pepper, cut into 1/4-inch dice
1/2 teaspoon black pepper
16 sea scallops (1 1/4 lb total), tough muscle removed from side of each if necessary
12 mussels (preferably cultivated; 2/3 lb), scrubbed and beards removed
8 small hard-shelled clams (about 2 inches in diameter), scrubbed well
2 oz medium shrimp in shell (31 to 35 per lb), peeled and deveined
2 oz Spanish chorizo (cured spiced pork sausage), quartered lengthwise, then cut crosswise into 1/4-inch pieces
1/2 cup frozen peas, thawed
Garnish: fresh parsley sprigs

Steps:

  • Cook half of onion with half of saffron in 1 tablespoon oil in a 3-quart heavy saucepan over moderate heat, stirring occasionally, until onion begins to soften, 6 to 8 minutes. Stir in couscous, then add water and 1/2 teaspoon salt and simmer, covered, until liquid is absorbed and couscous is al dente, 10 to 12 minutes. Remove from heat and let stand, covered, 10 minutes.

Transfer mussels to a bowl with a slotted spoon, then add clams to skillet and cook, covered, shaking skillet occasionally, until clams just open wide, 6 to 10 minutes.
