This comforting blend of sweet potatoes, apples and pecans has a small yield, so you won't end up with a pan of leftovers. Now that our three boys are grown, I cook for just my husband and me.-Marjorie Wilkerson, Dighton, Kansas

1 large sweet potato, peeled and sliced
1 large apple, peeled and sliced
1/3 cup dry bread crumbs
1/3 cup light corn syrup
1/8 teaspoon salt
1 tablespoon butter
1 tablespoon chopped pecans

Steps:

  • In a greased 1-qt. baking dish, layer half the sweet potato slices, apple slices and crumbs. Repeat layers. Pour corn syrup over top; sprinkle with salt. Dot with butter; sprinkle with nuts. Cover and bake at 400° for 35 minutes.

I used to waitress at a Stouffer's in Columbus, Ohio where they served this. It was so good, I decided to create my own version and it's been a part of our Thanksgiving and Christmas meals for over 25 years now!

1 (30 ounce) can sweet potatoes, drained, save liquid, and cut into bite sized chunks
2 medium tart apples, peeled, cored and cut into thick slices (I usually use Granny Smith)
1/2 cup packed brown sugar
1/4 cup butter
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 tablespoon cornstarch

Steps:

  • In a 1 quart buttered (or use Pam) casserole, alternate layers of potatoes and apples.
  • In a medium saucepan, melt butter, stir in brown sugar and spices.
  • Add half of reserved sweet potato liquid and bring to a boil.
  • Dissolve cornstarch in remaining potato liquid and add to pan.
  • Lower heat and simmer while stirring until thickened.
  • Pour over layered potatoes and apples until top layer is almost covered.
  • Bake, covered, at 350°F for 1 hour.
  • You may uncover during the last 15-20 minutes of baking time if the sauce needs thickening.
  • This freezes well.

2 1/2 lbs sweet potatoes
2 large apples (fuji or braeburn)
1/4 cup raisins or 1/4 cup dried cranberries
1/2 cup butter
1/2 cup brown sugar
1 teaspoon cinnamon
1 dash nutmeg

Steps:

  • Bake sweet potatoes at 350 for 40 minutes or until soft to the touch but still firm inside.
  • Cool and peel; slice into 1 inch slices. Place in 10 inch casserole, which has been coated with cooking spray.
  • Combine brown sugar, cinnamon and nutmeg, sprinkle over sweet potatoes.
  • Peel and slice apples; layer on top of sweet potatoes. Sprinkle in dried fruit.
  • Dot butter on top. Cover and bake at 350 degrees for 1/2 hour or until apples are tender.

4 large yams
3 tablespoons butter
1 tablespoon cornstarch
½ cup packed brown sugar
1 ½ cups apple juice
1 tablespoon lemon juice
½ teaspoon ground cinnamon
½ teaspoon ground allspice
3 large apples - peeled, cored and sliced

Steps:

  • Place yams in a large saucepan with enough water to cover. Bring to a boil, and cook 30 minutes, or until tender but firm. Drain, peel, and cut into 1/3 inch thick slices.
  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Mix in the apple juice, lemon juice, cinnamon, and allspice.
  • Alternate layers of yams and apples in the prepared baking dish. Pour the apple juice mixture over the layers.
  • Cover, and bake 1 hour in the preheated oven. Remove cover, and continue baking 30 minutes. Baste frequently with the juices from the pan to prevent drying.

This is a recipe I got from a former co-worker. Everyone at the potluck lunch devoured the apples and wanted the recipe. It is very rich and it's definitely not low fat but for an occasional treat or for the holidays, it's fantastic. It can be served as dessert or as a side dish. ENJOY!!!
