50'S CHOCOLATE-WAFER WHIPPED CREAM ROLL

50's Chocolate-Wafer Whipped Cream Roll image

Provided by Food Network

Categories     dessert

Time 48m

Yield 8 servings

Number Of Ingredients 13

2 cups heavy cream
1/4 cup confectioners' sugar
1 1/2 teaspoons vanilla extract, or 1/2 teaspoon vanilla and 2 tablespoons orange liqueur
48 chocolate wafers, recipe follows
Cocoa or cookie crumbs for dusting
1 1/4 cups all-purpose flour
1/2 cup unsweetened Dutch-processed cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups sugar
1/2 cup plus 2 tablespoons (1 1/4 sticks) unsalted butter at room temperature
1 large egg

Steps:

  • Chocolate Wafers: Set 2 racks in the middle and upper third of the oven and preheat to 375 degrees F. In a food processor or the bowl of an electric mixer, thoroughly mix together the flour, cocoa, baking soda, baking powder, salt, and sugar. While pulsing on low speed, add the butter, then the egg. Process or beat until the dough is thoroughly blended and massed together. Drop rounded teaspoons of batter onto nonstick or parchment-lined cookie sheets at 2-inch intervals. With moistened fingers, round out the cookies and flatten them a little. Bake for 9 minutes, turning the pans once for even baking, until the cookies are set. Set the cookie sheets on a rack to cool.
  • In a mixing bowl, whip the cream to soft peaks, about 1 1/2 minutes. Add the confectioners' sugar and vanilla, and continue whipping until stiff but smooth, about 1 minute. Spread the wafers evenly with the whipped cream, about a 1/4 inch thick, and set in stacks of 8. Turn the stacks on their sides and line them up, one after the other, like the wheels on an eighteen-wheeler, 4 rows deep. Frost the top and sides with the remaining whipped cream to form a loaf. Refrigerate for at least 3 hours, until firm. To serve, dust lightly with cocoa or cookie crumbs. Slice with a serrated knife dipped in hot water.

WAFER COOKIE NEAPOLITAN LAYER CAKE RECIPE BY TASTY

Wafer Cookie Neapolitan Layer Cake Recipe by Tasty image

Here's what you need: white cake mix, cocoa powder, strawberry gelatin, nonstick cooking spray, unsalted butter, powdered sugar, milk, pink sprinkle, freeze-dried strawberry, white sprinkles, white chocolate chip, chocolate chips, chocolate sprinkles, chocolate wafer cookies, vanilla wafer, strawberry wafer cookies, strawberry

Provided by Katie Aubin

Categories     Desserts

Time 1h30m

Yield 15 servings

Number Of Ingredients 17

2 boxes white cake mix, batter prepared according to package instructions
3 tablespoons cocoa powder
¼ cup strawberry gelatin
nonstick cooking spray, for greasing
3 cups unsalted butter, softened
2 lb powdered sugar
2 tablespoons milk
½ cup pink sprinkle, divided
1 bag freeze-dried strawberry, crushed, divided
¾ cup white sprinkles, divided
¾ cup white chocolate chip, divided
1 cup chocolate chips, divided
¾ cup chocolate sprinkles, divided
2 bags chocolate wafer cookies
2 bags vanilla wafer
1 bag strawberry wafer cookies
½ cup strawberry, quartered, greens and tops removed

Steps:

  • Preheat the oven to 325°F (170°C).
  • Make the cakes: In a large bowl, prepare the cake batter according to the package instructions.
  • Pour 4¾ cups (550 G) of the cake batter into a medium bowl and whisk in the cocoa powder. Set aside.
  • Pour 1¼ cups (140 G) of the cake batter into a separate medium bowl and whisk the in strawberry gelatin powder. Set aside.
  • Gather a 6-inch (15 cm), 8-inch (20 cm), and 10-inch (25 cm) round aluminum cake pan. Line with parchment paper and grease with nonstick spray.
  • Pour the strawberry batter into the 6-inch pan, the vanilla batter into the 8-inch (20 cm) pan, and the chocolate batter into the 10-inch (25 cm) pan. Tap the pans lightly on the counter to smooth the surface and release any air bubbles.
  • Bake the cakes, rotating after about 15 minutes. The strawberry cake should take about 25 minutes, the vanilla about 35 minutes, and the chocolate about 40 minutes. For each cake, the top should spring back when lightly touched and a cake tester inserted in the center should come out clean. Let the cakes to cool in the pans on a wire rack. After 10-15 minutes of cooling, remove the cakes from the pans and let cool completely.
  • Make the frosting: In a large bowl, cream the butter with an electric hand mixer for about 30 seconds, until fluffy and smooth. Add the powdered sugar, 1 cup (110 G) at a time, beating on low speed to incorporate. Add the milk and beat to combine.
  • Assemble the cake: Slice the strawberry cake into 2 even layers with a serrated knife. Separate the layers and spread about ⅓ cup (40 G) frosting over the bottom layer. Sprinkle half of the pink sprinkles and freeze-dried strawberries evenly over the frosting. Place the top cake layer over the candies and gently press down. Repeat with the vanilla cake, filling with half of the white chocolate chips and white sprinkles, and chocolate cake, filling with half of the chocolate chips and chocolate sprinkles.
  • Frost each cake flavor with a thin coat of frosting, then transfer to the refrigerator immediately after frosting to chill and harden slightly, about 15 minutes.
  • Spread about 1 tablespoon of frosting in the center of a cake stand. Place the chocolate cake in the center of the stand, then gently placing the vanilla cake on top, then the strawberry cake of top of that. Carefully spread more frosting over the top and sides of each layer of cake (this does not need to look extremely neat, as the wafer cookies will cover everything).
  • Starting with the bottom chocolate layer, carefully arrange the chocolate wafer cookies vertically around the sides, packing them close together, until the entire perimeter of the cake is covered. Repeat with the vanilla cake and wafer cookies, then with the strawberry cake and wafer cookies.
  • Carefully spread remaining half of the pink sprinkles and freeze-dried strawberries over the top of the strawberry cake, covering the frosting. Add remaining half of the white chocolate chips and white sprinkles to the ledge of the vanilla cake, then remaining half of the chocolate chips and chocolate sprinkles to the edge of the chocolate cake.
  • Slice and serve.
  • Enjoy!

HOMEMADE CHOCOLATE WAFER COOKIES

Homemade Chocolate Wafer Cookies image

Homemade chocolate wafer cookies are THE best cookies for chocolate pie and cheesecake crusts, sandwich cookies, and icebox cakes. Ditch the store-bought, hard-to-find version and EASILY make your own!

Provided by Smells Like Home

Categories     cookies

Time 2h42m

Number Of Ingredients 8

1 ½ cups (6.75 ounces) all-purpose flour
¾ cup (2.4 ounces) dark unsweetened cocoa powder
1 cup plus 2 tbsp sugar
¼ tsp salt
¼ teaspoon baking soda
14 tbsp (1 ¾ sticks) unsalted butter, slightly softened
3 tbsp whole milk
1 tsp pure vanilla extract

Steps:

  • In the bowl of a food processor fitted with the metal blade, add the flour, cocoa powder, sugar, salt, and baking soda. Pulse the ingredients a few times to combine thoroughly. Dollop the butter around the dry ingredients and pulse a few more times until the butter starts to incorporate and large chunks begin to form. Mix the milk and vanilla together in a small bowl. With the mixer running, pour the milk mixture into the feeding tube in a slow and even stream until the cookie crumb mixture starts to form together and ball up on the sides of the bowl.
  • Transfer the cookie dough to a work surface and knead it a couple of times to fully incorporate all of the ingredients. Divide the dough in half and shape each half into a long and narrow log, about 1 ¼ inches to 1 ¾ inches in diameter. Depending on how large you want your wafer cookies to be will determine how thick to form the log. Wrap each log in plastic wrap and refrigerate for at least 2 hours or up to a week.
  • Position the oven racks to the upper and lower thirds of the oven. Preheat oven to 350° F. Line baking sheets with parchment paper.
  • Slice the dough logs into approximately ⅛-inch thick slices and lay the dough rounds on the baking sheets about 1 inch apart. I formed my dough into 1 ¼-inch diameter logs and was able to fit 24 cookies on each of my baking sheets.
  • Bake for 10-12 minutes, rotating pans from back to front and top to bottom halfway through the baking time. The cookies will be finished baking about 1 ½ minutes after the puffed-up dough deflates so try to keep an eye on them. Cool the cookies on the baking sheets on wire racks for 5 minutes then transfer the cookies to the racks to cool completely - they will crisp up as they cool.

CRISP CHOCOLATE WAFERS

Crisp Chocolate Wafers image

Provided by Food Network

Categories     dessert

Time 1h35m

Number Of Ingredients 10

4 tablespoons (1/2 stick) unsalted butter, softened
1/2 cup light brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 large egg whites
3/4 cup Dutch process (alkalized) cocoa powder
3/4 cup all-purpose flour
1/4 teaspoon salt
More sugar for finishing the cookies
2 cookie sheets or jelly roll pans lined with parchment or foil

Steps:

  • Combine butter, sugars and vanilla in the bowl of an electric mixer and beat on medium speed until light, about 5 minutes, scraping bowl and beaters occasionally. Beat in the egg whites, one at a time, beating smooth after each addition.
  • While the mixture is beating, sift the cocoa with the flour and salt. Stop mixer, scrape down bowl and beaters and add dry ingredients. Mix on low speed until incorporated.
  • Scrape the dough out onto a piece of plastic wrap. Cover with another piece of wrap and press the dough into a rough disk. Refrigerate the dough until it is firm -- several hours or overnight.
  • About 20 minutes before you intend to bake the cookies, set a rack at the middle level of the oven and preheat to 350 degrees.
  • Divide the dough into 3 parts and roll one at a time on a lightly floured work surface into a 6-inch square. Cut the dough with a fluted or plain round cutter into nine 2-inch cookies and place them on the prepared pan. Continue with the remaining dough. After rolling all the dough, press the scraps back together and make about 9 more cookies. Pierce the cookies several times with a fork and sprinkle them lightly with granulated sugar.
  • Bake the cookies about 20 minutes, until slightly puffed and firm. Cool the cookies on the pan.
  • Serve with any creamy or plain dessert, or ice cream. They're also great by themselves. Storage suggestion: Keep the cookies between layers of waxed paper in an air-tight tin or plastic container

CHOCOLATE WAFER COOKIES (LIKE NABISCO CHOCOLATE WAFER COOKIES)

Chocolate Wafer Cookies (Like Nabisco Chocolate Wafer Cookies) image

Remember the Ice Box Cake back in the 60's and 70's? The ones that used the Nabisco Chocolate Wafer Cookies? Well, this is the recipe to use when you can't find the cookies in the store! It seems a lot of stores are not carrying them anymore, and if you want them, you have to order them at Amazon.com. This recipe is courtesy of Ahmed1 at CDKitchen, and he had very good results using this recipe. NOTE: The preparation time does NOT include the 20-30 minutes in the refrigerator to chill. Keep in mind that the cooking time is 7-8 minutes PER BATCH. Enjoy!

Categories     Dessert

Time 37m

Yield 36 2 3/4

Number Of Ingredients 11

2 ounces unsweetened chocolate (2 squares)
1 cup all-purpose flour, sifted PLUS
2 tablespoons all-purpose flour, sifted
3/4 teaspoon double-acting baking powder
1/4 teaspoon baking soda
1 pinch salt
2 ounces sweet butter (1/2 stick)
1 teaspoon vanilla extract
1/2 cup granulated sugar
1 1/2 teaspoons light cream or 1 1/2 teaspoons milk
1 egg (graded large)

Steps:

  • Place the chocolate in the top of a small double boiler, over hot water, on moderate heat. Cover until partially melted, then uncover and stir until smooth. Remove from the heat, and set aside to cool slightly.
  • Sift together the flour, baking powder, baking soda, and salt, and set aside.
  • In the large bowl of an electric mixer cream the butter.
  • Add the vanilla and sugar, and beat to mix well.
  • Add the melted chocolate, and beat until incorporated. Then add the light cream or milk and the egg, and beat to mix well.
  • On low speed add the sifted dry ingredients, scraping the bowl with a rubber spatula, and beating only until incorporated.
  • Place the dough on a piece of wax paper, fold the sides of the paper over the dough, and press down on the paper to flatten the dough to a scant 1" thickness.
  • Wrap in the waxed paper and refrigerate for 20-30 minutes (no longer or the dough will crack when you roll it out). (However, if you do refrigerate it for longer (even overnight) let it stand at room temperature for about 1 hour before rolling it out.)
  • Adjust two racks to divide oven into thirds, and preheat oven to 400.
  • Line cookie sheets with aluminum foil.
  • Flour a pastry cloth and place the dough on it. (If you have doubled the recipe, roll only half of the dough at a time.)
  • With a floured rolling pin (which should be refloured frequently to avoid sticking), roll the dough out until it is only 1/8" thick (thin). I use a round cookie cutter that is 2 3/4" in diameter. Use any size you like, and cut the cookies as close to each other as possible.
  • Place the cookies 1/2" apart on the aluminum foil. (It might be necessary to transfer the cookies from the pastry cloth to the foil with a wide metal spatula. Handle them carefully in order to keep them perfectly round and flat.
  • Leftover pieces of the dough should be pressed together and rerolled.
  • Bake 2 sheets at a time, for 7-8 minutes, reversing the sheets top to bottom, and front to back once, to insure even taking.
  • Bake until the cookies feel almost firm to the touch.
  • These are supposed to be crisp (they will become more crisp as they cool) and they should not be underbaked, but watch them carefully to be sure they do not burn. (If you bake one sheet at a time, bake it on the upper rack.)
  • With a wide metal spatula, transfer the cookies to racks to cool.
  • Store in airtight container.

CHOCOLATE WAFFLE COOKIES

Chocolate Waffle Cookies image

Serve these chocolate waffle cookies with ice cream, or go the opposite route and serve alongside hot chocolate, to make the most of the delicate cookies.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes about 4 dozen

Number Of Ingredients 12

3 ounces unsweetened chocolate, coarsely chopped
18 tablespoons (2 1/4 sticks) unsalted butter
4 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups granulated sugar
1/2 teaspoon coarse salt
1 1/2 teaspoons ground cinnamon
1/2 cup unsweetened Dutch-process cocoa powder, plus 2 tablespoons for icing
1 1/2 cups all-purpose flour
1/4 cup confectioners' sugar, plus more for dusting
1 1/2 tablespoons milk
Vegetable oil, cooking spray

Steps:

  • Melt chocolate with 1 cup butter (2 sticks) in a saucepan over medium-high heat, stirring constantly. Let cool slightly.
  • Put eggs, vanilla, and granulated sugar in bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale, 4 to 5 minutes. Mix in chocolate mixture, salt, cinnamon, 1/2 cup cocoa powder, and the flour.
  • Heat a waffle iron until hot. Lightly coat grids with cooking spray. Spoon about 1 tablespoon batter onto center of each waffle-iron square to make 1 1/2-inch rounds. Close cover; cook until set, about 1 1/2 minutes. Transfer to a wire rack, bottom sides up. Let cool completely. Repeat with remaining batter, coating grids with cooking spray after each batch.
  • Melt remaining 2 tablespoons butter in a small saucepan over low heat. Add confectioners' sugar and remaining 2 tablespoons cocoa powder; stir until smooth. Stir in milk.
  • Gently dip 1 surface of each cookie in icing so that just the waffle lines (not gaps) are coated. Repeat with remaining cookies and icing. Transfer to wire racks; let stand until set, about 10 minutes. Dust iced surfaces of cookies with confectioners' sugar.

CHOCOLATE WAFER COOKIES

Yield Makes about 60 cookies, depending upon size

Number Of Ingredients 10

1 stick plus 6 tablespoons (14 tablespoons) unsalted butter, melted and cooled
1 cup sugar
1 extra-large egg
1/2 teaspoon pure vanilla extract
1 1/4 cups all-purpose gluten-free flour
1 teaspoon xanthan gum
1/2 cup unsweetened Dutch-processed cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon kosher salt

Steps:

  • 1. In a large bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla, blending well after each addition. Add the flour, xanthan gum, cocoa powder, baking soda, baking powder, and salt, blending well after each addition. After adding the final ingredient, beat until the mixture becomes thicker and a bit more elastic.
  • 2. Divide the dough into two equal portions, wrap each in plastic wrap, and refrigerate for at least 1 hour, or until firm. Line baking sheets with parchment paper and set them aside.
  • 3. Once the dough has chilled, remove one of the dough portions from the refrigerator, place it between two sheets of plastic wrap, and roll into a round shape about 1/8 inch thick. Repeat with the other portion of the dough. Place all of the dough back in the refrigerator, still wrapped in plastic wrap, and chill for another 15 to 20 minutes or until firm again.
  • 4. Once the rolled-out dough is chilled, working with one portion at a time, remove and replace one piece of plastic wrap, and remove the plastic wrap from the other side. Using a 2-inch round cookie cutter, cut the dough into circles as close together as possible. Repeat the process with the other half of the dough. Gather the scraps of dough that remain, roll them flat again, chill, and cut more rounds.
  • 5. Place the rounds about 1 inch apart on prepared baking sheets. Place the baking sheets in the refrigerator to chill while you preheat your oven to 325°F. Once the oven is ready, remove the baking sheets from the refrigerator, set them in the center of the preheated oven, and bake at 325°F for 5 minutes. Rotate the baking sheets 180 degrees and bake 4 to 6 minutes more, until the cookies are firm but not burned.
  • 6. Cool the cookies for 5 to 10 minutes on the baking sheets. If they are too soft once they have cooled for 10 minutes, return them to the oven and bake for another couple minutes for that "snap." Once the cookies are baked and cooled enough to be firm, transfer them to a wire rack to cool completely.

CHOCOLATE WAFER COOKIE DESSERT (FAMOUS WAFERS COPYCAT)

Chocolate Wafer Cookie Dessert (Famous Wafers Copycat) image

I no longer can buy Nabisco Famous Wafers in my area. I searched and found these on the King Arthur website. Stack the cookies, sandwiched between the optional filling, in the refrigerator overnight and they turn into a delicious cake-like dessert. These cookies will also make a good pie crust (see Recipe #424844).

Provided by Kats Mom

Categories     Dessert

Time 2h

Yield 42 cookies, 8 serving(s)

Number Of Ingredients 14

1 cup granulated sugar
1/2 cup unsalted butter
3/4 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon espresso powder
1 large egg
1 teaspoon vanilla extract
1 1/2 cups unbleached all-purpose flour
1/4 cup black cocoa
1/4 cup Dutch-processed cocoa powder
2 cups whipping cream or 2 cups heavy cream
2 tablespoons Dutch-processed cocoa powder
2 tablespoons sugar
1 teaspoon espresso powder

Steps:

  • Lightly grease (or line with parchment) two baking sheets, or more if you have them; you'll make 3 to 4 baking sheets' worth of cookies.
  • In a medium-sized bowl, beat together the sugar, butter, salt, baking powder, and espresso powder.
  • Beat in the egg and vanilla, then the flour and cocoa.
  • Cover the dough, and chill for 30 minutes.
  • While the dough is chilling, preheat the oven to 350°F
  • Roll the dough about 1/8" thick; use cocoa instead of flour to dust your rolling board and the dough.
  • Cut into 2 1/2"-round cookies. A biscuit cutter is handy for this.
  • Bake the cookies for 10 minutes. Watch them closely at the end of the baking time, and if you start to smell chocolate before 10 minutes has gone by, take them out.
  • When they're done, remove the cookies from the oven, and allow them to cool completely.
  • FILLING: Whisk together the heavy cream and other ingredients. When blended, whip until the cream holds a soft peak.
  • ASSEMBLY: Place one cookie on a small plate. Put about a tablespoon of whipped cream on top; our teaspoon cookie scoop, heaped up, works well here.
  • Top with a second cookie, using it to compress the whipped cream to about a 1/4"-thick layer.
  • Repeat with 4 more cookies, finishing with a layer of whipped cream.
  • Refrigerate from 4 to 24 hours before serving.
  • OTHER FLAVORING OPTIONS: To flavor 1 cup of cream, add one of the following combinations: *2 tablespoons confectioners' sugar + 3/4 teaspoon vanilla extract; *2 tablespoons confectioners' sugar + 1/8 teaspoon coconut flavor; *2 tablespoons confectioners' sugar + 1/8 teaspoon peppermint oil; *1 tablespoon granulated sugar + 1 tablespoon Dutch processed cocoa + 1 teaspoon espresso powder.

  • Beat in the egg and vanilla, then the flour and cocoa. Cover the dough, and chill for 30 minutes. While the dough is chilling, preheat the oven to 350°F.
  • Roll the dough about 1/8" thick; use cocoa instead of flour to dust your rolling board and the dough.
  • Bake the cookies for 10 minutes. Watch them closely at the end of the baking time, and if you start to smell chocolate before 10 minutes has gone by, take them out.
  • When the cookies are done baking, remove them from the oven and allow them to cool completely.
  • To fill the cookies: Use a small offset spatula or a knife to spread about 2 teaspoons of filling onto the bottom of one cookie. Or for a cleaner presentation, roll about 2 teaspoons of filling in the palms of your hands to form a ball, and place it on the bottom of a cookie.
  • Finish the sandwich cookie by placing another cookie, bottom-side down, on top of the filling. Press gently, until the filling almost reaches the edge of the cookies.

  • Drop tablespoon-sized mounds of the almond mixture 1 1/2 inches apart on the prepared baking sheets. Use a spoon to flatter each mound to about 2 inch rounds without creating gaps between the sliced almonds.

HOMEMADE CHOCOLATE WAFERS + ICEBOX CUPCAKES - SMITTEN KITCHEN
Icebox cake wafers are not any old wafers, they need to have the ability to absorb what is around them and become cake-like — in the end, the cake slices like one, not like a stack of cookies slathered with lightly sweetened whipped cream, taking on the resemblance of a decoratively assembled plate of Oreos and eee, am I the only one drooling right now?
