CREOLE GREEN BEANS
Even though our children are grown, my husband and I remain busy. So we rely on speedy recipes that call for everyday ingredients. This peppery treatment really wakes up green beans. Steps:
- Cook beans according to package directions. Meanwhile, in a skillet, cook bacon, onion and green pepper over medium heat until bacon is crisp and vegetables are tender. Remove with a slotted spoon., Stir the flour, brown sugar, Worcestershire sauce, salt, pepper and mustard into the drippings until blended. Stir in tomatoes. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain beans and add to skillet. Stir in bacon mixture.

- Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
- Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
- Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.

- Melt butter over medium heat in a large skillet. Stir in green beans, bacon, onion, green pepper, and garlic; cook and stir until onions are translucent, about 2 minutes. Stir in cayenne pepper, Creole seasoning, and black pepper. Cover; reduce heat to low. Simmer until vegetables are tender, about 20 minutes. Season to taste with salt.
SCALLOPED CREOLE GREEN BEANS
This is the best green bean dish I have ever had! The mixture of onion, bell pepper, celery, tomatoes, and cheese blends so nicely with the green beans. I got the recipe from an friend's mother over 20 years ago and she got the recipe from her mother who had a local cooking show in the southwest Louisana/ southeast Texas area. You can taste the southern Creole influence in this dish. You won't be disappointed!

- Preheat oven to 350 degrees.
- Fry bacon until crisp and set aside. Saute onion, celery, and bell pepper in bacon drippings until transparent.
- Transfer onion mixture to a medium sauce pan and add tomatoes, salt, pepper, and sugar. Cook, covered over low heat for 1 hour. (yes--1 hour!).
- Add cheese to sauce mixture and stir until melted.
- Place green beans in casserole dish, crumble bacon over beans, and pour sauce over top.
- Bake, uncovered for 1 hour.

LOUISIANA GREEN BEANS (CREOLE RECIPE FOR ZWT-9)
Found at a cooking-by-country (or region) website, just reading this recipe took me back decades to a time growing up when we would pick beans from the garden & cook them until soft w/a combo of onion w/ham or bacon. I never cared when the main-course was as long as I could have a HUGE plate of those green beans. If it was my choice to make, I would definitely dbl this recipe! Enjoy!

- Heat oil in a frying pan. Add the bacon, onion, garlic plus parsley & sauté until onion is soft & golden brown.
- Add the beans, salt to taste preference & Creole seasoning. Reduce heat to low & cook gently for about 30 min or until beans are soft (Add a sml amt of water if needed to keep the beans from sticking to the bottom of the pan.
- HINT: Try pairing these beans w/my also newly entered Creole Meatloaf recipe & your favorite thick mashed potatoes. Yum!

- Steam the green beans for about 5 minutes or until tender crisp. I like to leave them whole but they can be used cut in one inch lengths; set aside.
- In a small bowl mix together yogurt, feta cheese, parmesan cheese & pepper.
- Taste and adjust seasoning; do not salt, the cheese & olives are quite salty; set aside.
- In a small casserole or au gratin dish, layer green beans and tomato slices, starting with green beans, as you go cover each tomato layer with a thin coat of the yogurt mixture. Finish the layers with the yogurt mixture. Scatter the chopped olives over all.
- The dish can be served cold as a salad at this point or if you prefer a hot side dish bake in 400°F oven for approximately 20 minutes until heated through, either way it is delicious.

NANA'S GREEN BEAN DISH
This concoction was passed down from my grandmother who cooked with what she had on hand at the time and who never measured anything. It's sounds odd but is one of my favorite hearty, comfort foods. It's like spaghetti without the carbs. Even healthier if you substitute ground turkey for the ground beef.
