One 3-pound center cut tenderloin roast, brought to room temperature 30 minutes before cooking
1 1/2 teaspoons kosher salt
1 1/2 teaspoons coarse ground black pepper
2 tablespoons olive oil
Flake salt, to finish
4 small bunches scallions or ramps, trimmed
1 1/2 teaspoons kosher salt
2 teaspoons plus 1/3 cup olive oil
2 tablespoons whole-grain mustard
2 1/2 tablespoons apple cider vinegar

Steps:

  • For the tenderloin: Preheat the oven to 400 degrees F.
  • Dry the tenderloin well with paper towels and sprinkle evenly with the salt and pepper. Heat a large ovenproof skillet over medium-high heat. Add the oil to the hot skillet followed by the tenderloin. Cook, turning every 4 minutes, until the tenderloin is an even, deep golden brown, about 12 minutes. Place the skillet in the oven until an instant-read thermometer reads 120 degrees F, or about 30 minutes for medium-rare . Remove to a platter to rest for 10 minutes before slicing.
  • For the sauce: Meanwhile, preheat a grill for cooking at medium-high heat.
  • Sprinkle the scallions with 1 teaspoon salt and 2 teaspoons olive oil. Place on the hot grill and cook until wilted and slightly charred, about 3 minutes per side. (Place a pan lid on top of the scallions if they are not browning enough.) Remove the charred scallions to a cutting board and roughly chop. Add the charred scallions to a bowl along with the mustard, vinegar, remaining 1/3 cup olive oil and remaining 1/2 teaspoon salt. Stir to combine.
  • Sprinkle the tenderloin with flake salt and serve with the scallion sauce.

1 tablespoon butter
1 celery rib, chopped
1 carrot, chopped
1 1/2 cups chicken stock
1 teaspoon dried thyme
1 bay leaf (laurel)
20 -24 scallions, trimmed of all but about 1 inch of the green tops
1/2 cup heavy cream
1/4 cup Dijon mustard
salt & freshly ground black pepper

Steps:

  • Heat the butter in large skillet over medium heat.
  • Saute celery and carrot until lightly browned, and soft, about 15 minutes.
  • Add the chicken stock, thyme, and bay leaf.
  • Simmer all, covered, for 15 minutes.
  • Add scallions and simmer uncovered for 5 minutes--do not overcook.
  • Remove scallions with a slotted spoon and set aside.
  • Strain the liquid in a fine sieve, discard the solids, and return 1/2 cup of liquid to the skillet.
  • Stir in cream and mustard and simmer uncovered, stirring occasionally, until the liquid has reduced to about one third, about 10 minutes.
  • Season with salt and pepper to taste, and return the scallions to the skillet long enough to heat them through, about 1 minute.
  • Serve immediately.

1 1/2 tablespoons olive oil
1 large shallot, minced
1/4 cup dry white wine
1/3 cup water
2 tablespoons Dijon mustard
2 tablespoons cold unsalted butter, cut into bits
2 scallion greens, cut diagonally into 1/4-inch slices (about 2 tablespoons)
Accompaniment: caraway rice cakes

Steps:

  • Remove tough muscle from side of each scallop if necessary. Pat scallops dry and season with salt and pepper. In a 10-to 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté scallops 1 to 2 minutes on each side (depending on size), or until golden and just cooked through. Transfer scallops with tongs to a plate and keep warm, covered loosely.
  • In oil remaining in skillet cook shallot over moderate heat, stirring, until softened. Add wine and boil, scraping up brown bits, 1 minute. Stir in water and mustard and simmer until reduced to about 1/4 cup. Add butter and swirl skillet, returning skillet to heat as necessary, until butter is just incorporated into sauce. Season sauce with salt and pepper.
  • Spoon sauce onto a small platter or 2 plates. Top sauce with scallops and sprinkle with scallion. Serve scallops with caraway rice cakes.

Cover the mustard with enough grated potatoes to coat entirely. Cover the fish with plastic wrap and press the grated potatoes down onto the fish very firmly and tightly. Remove the wrap and season the potatoes with salt and white pepper.
  • Preheat oven to 425 degrees.
  • In an ovenproof, nonstick frying pan, heat the olive oil. When hot, place the fish very gently in the pan, with crust side down, using a large spatula to avoid breaking the crust. Saute for 2 to 3 minutes until the potatoes are golden brown. Flip the fish carefully to the other side and finish cooking in the oven for about 5 minutes, or until the center of fillet is opaque in color.
  • Serve with Chive and Scallion Sauce.

2 teaspoons soy sauce
2 teaspoons minced fresh ginger
1 bluefish fillet (about 1 1/2 pounds)
12 scallions, trimmed

Steps:

  • Preheat a charcoal grill. Combine the mustard, soy sauce and ginger and rub the mixture over the flesh side of the bluefish. Let stand for 10 minutes. Place the fish on the grill, flesh side down. Grill for 7 minutes. Carefully turn the fish over and grill until just cooked through, about 5 minutes more.

VEAL SCALLOPS IN MUSTARD-CREAM SAUCE



Veal Scallops in Mustard-Cream Sauce image

Rich and delicious, use a good Dijon type mustard that you pick up in your local cheese shop, or on the gourmet isle of a grocery, it is okay to use some whole mustard, if you like that flavor, but only a few teaspoons of it. This recipe will serve six persons, but I find it never does, use it as part of a rich meal. As long as the butcher slices the scallops thinly, no pounding will be required, I have treated them.

1 large egg
1 -2 tablespoon dry sherry
pepper
1 1/2 teaspoons baking soda
1 1/2 lbs thinly sliced veal, top-round
1/3-1/2 cup cornstarch
1/2 cup butter, divided use
2 tablespoons vegetable oil
5 large scallions, trimmed, thinly sliced
salt
1/2 cup dry white wine
1/3 cup good Dijon mustard
1/2 cup heavy cream
chopped parsley or chervil, for serving

Steps:

  • In a good sized mixing bowl, beat together the egg, sherry, pepper and soda. Add the veal, turning to coat well, leave for as long as desired, but not so long that it needs to chill, do keep it at room temperature.
  • Measure the amount of cornstarch when ready to proceed and toss it with the veal slices, coat them as well as one can, you may, if the veal will not take on the starch easily, add a few teaspoons of water, the veal breading gets runny easily, and it should be rather stiff, it does not matter, if after a minute or two of stirring, that the veal has some places that look a little powdery, the heat of the pan will diminish any unevenness in the coating there.
  • Using a 12-inch heavy sauté pan, have a plate standing nearby, melt half of the butter with all of the vegetable oil, add the scallions, season with a little salt, and cook over medium, or medium low heat, stirring often, until they are softened, but not browned.
  • Slide the scallions a bit around the pan and slip in as many veal slices as will fit easily, without overlapping.
  • Cook for only about 1 minute on each side, over a moderate, or less heat, when working in a pan that is not non-stick (which are the only ones I use), some care may need to be taken in flipping the veal. Transfer them to a plate, cover if desired.
  • Repeat until all the veal has been used up, keeping the scallions floating in the fat, free, for the most part, of the underside of the veal. Do not be worried if the scallion turns gold, do not be dismayed if parts of the starch coating stick a little in the pan, scrape them up, allowing them to turn gold in the drippings, they will be all the better.
  • When half of the veal has been used, add the remaining butter, melt and proceed. Once the veal has been transferred to the plate, it should bleed.
  • Add the wine, stir often, reduce it well, it may form a paste, but reduce it in any case.
  • Stir in the mustard and cream, reduce by half. Taste and correct for salt and pepper, remembering the veal.
  • Slip it back into the pan, tilting and turning to coat well, warm through, but briefly, certainly less than two minutes.
  • Serve at once in warm plates.

CARAMELIZED-SCALLION SAUCE



Caramelized-Scallion Sauce image

A twist on the Cantonese classic ginger-scallion sauce, this aromatic purée focuses on the flavor of scallions slow-cooked to draw out their gentle sweetness. Adding more scallions at the end brings a fresh complexity to the sauce, but if you want to keep the whole thing mellow and sweet, feel free to omit that step, and just cook all the scallions at once. It's great as a dressing for noodles, boiled or roasted vegetables and simple meats and fish.

1 cup peanut or vegetable oil, plus more if needed
1 pound scallions (3 to 4 bunches)
2 teaspoons kosher salt, or to taste

Steps:

  • In a tall-sided saucepan, heat the oil over medium-low heat.
  • Trim the roots from 2/3 of the scallions, and cut them into 1-inch pieces. Pulse the scallions in a food processor until finely minced. (You may need to scrape down the sides once or twice.) Add 3/4 to 1 teaspoon kosher salt, and pulse until wet and puréed. Carefully add the purée to the oil (the oil should be warm, not hot, but be careful of splatters).
  • Raise the heat to high, and cook, stirring, until it reaches a boil. Turn the heat down to maintain a mellow but insistent sizzle. Cook, stirring every few minutes to make sure the bottom and sides aren't sticking and browning, until the purée is army green, just starting to take on brownish tones, and goes from thick and clumpy to very liquid in the pot, around 35 minutes. In truth, it's ugly. (You can cook it further to get a more browned, caramelized flavor if you like, but don't let it get dark.)
  • Meanwhile, trim the roots off the remaining scallions, and cut them into 1-inch pieces. Pulse them in the food processor until they are finely minced but not puréed. Remove the scallions to a bowl and stir in another 3/4 to 1 teaspoon salt. When the purée in the pot is ready, carefully stir in the minced scallions, and turn the heat up to high. Bring it back to a boil, stirring, and then remove the sauce to a heatproof bowl to cool to room temperature. When it has cooled, taste, and add more salt if desired.
  • Store in a jar, topping it with a little oil if necessary to keep everything submerged. The sauce keeps, refrigerated and under oil, for a couple of weeks.

2 1/2 to 2 3/4 pound whole mackerel, cleaned, gutted but left whole
1/2 lemon
1/2 teaspoon freshly ground black pepper
1/2 cup creme fraiche
2 tablespoons prepared whole-grain mustard
2 teaspoons lemon juice
4 scallions, finely chopped, including the green tops
Salt, if desired

Steps:

  • Score the mackerel on both sides, making two or three large X's one-half-inch deep with a small sharp knife. Squeeze the half lemon over the fish.
  • Combine and stir the remaining ingredients. Coat the mackerel with this mixture and allow to marinate one-half hour. Turn once during the marinating so the cuts in the fish are well coated with the sauce.
  • Preheat oven to 375 degrees.
  • Place mackerel in a small buttered oval baking dish and bake until the fish is opaque. Serve at once.
