SCALLION-AND-MANGO-WRAPPED SHRIMP
The adobo sauce used to coat the shrimp is slightly smoky with a kick of heat, while the mango adds sweetness and a tinge of acidity. Choose a mango that is just underripe and slightly firm so that it will hold its shape when wrapped around the shrimp.

Steps:
- Heat broiler. Cut a slit into each shrimp along the vein line, about halfway through.
- Heat oil in a large nonstick skillet over medium-high. Cook scallions with 1/4 teaspoon salt until browned and tender, about 2 minutes. Transfer to a plate, and let cool.
- Toss shrimp with adobo sauce on a rimmed baking sheet. Broil 8 inches from heat source, flipping shrimp halfway through, until just cooked through, about 2 minutes per side. Let cool slightly.
- Wrap 1 mango strip and 1 scallion piece around each shrimp, and skewer to secure if desired. (You may have extra mango strips.)

MANGO-GLAZED SHRIMP WITH RICED CAULIFLOWER
Adding vegetables to dinner never tasted so good. We start with riced cauliflower, then bump up the flavor with fresh chiles, herbs and golden cashews. Shrimp glazed in a simple mango sauce ties it all together in a colorful dish that will be a new family favorite and easy alternative to takeout.

Steps:
- Heat the riced cauliflower according to the package directions; set aside.
- Heat 1 tablespoon of the coconut oil in a large nonstick skillet over medium-high heat. Add the scallion whites and serrano and cook, stirring occasionally, until tender, about 5 minutes. Add the cumin seeds and cook until lightly toasted, 1 minute. Add the cauliflower and 1/2 teaspoon salt and cook, tossing occasionally, until evenly combined and hot throughout, 2 to 3 minutes. Set aside in a large bowl.
- Wipe out the skillet, set over high heat and add the remaining 1 tablespoon coconut oil. Add the shrimp and cook, flipping once, until lightly browned, 3 to 5 minutes; remove to a plate. Reduce the heat to medium, add the garlic and cook, stirring occasionally, until lightly browned, about 2 minutes. Add the mango chutney and 1/2 cup water and cook, stirring occasionally, until the sauce is thick and syrupy, about 5 minutes. Remove from the heat, return the shrimp to the skillet and toss to coat.
- Add the scallion greens, cashews, cilantro and lime zest to the cauliflower mixture and toss well. Divide the cauliflower mixture and shrimp among plates. Serve with lime wedges.

MANGO SHRIMP
This recipe is based on one by Ken Hom. We like it for it's refreshing taste. Also very easy to put together and quick to cook. Don't leave out the sesame oil, I think it is integral to the dish. Preparation time includes refrigerator resting time for shrimp.

- In a bowl large enough to hold the shrimp, combine the egg white, cornstarch, 1/2 tsp salt, 1 tsp sesame oil, and white pepper.
- Pat the shrimps dry, and mix them well with this marinade, making sure all are well coated.
- Leave in the refrigerator for 20 minutes.
- Heat a wok or large frying pan until very hot.
- Add 2 TBS peanut oil.
- When the oil is very hot, remove the wok from the heat and add the prawns.
- Stir vigorously to prevent them sticking, return to heat and cook until they turn white, about 2 minutes depending upon the size of your shrimp.
- Remove the shrimp, and discard the oil.
- Wipe wok with paper toweling, removing all residues.
- Return the wok to the heat, again heating until very hot.
- Add 1 1/2 TBS peanut oil, and when very hot, add the ginger and garlic.
- Stir fry for 10 seconds.
- Return the shrimp to the wok and add the rice wine or sherry, and 1/2 tsp salt.
- Stir-fry for one minute.
- Add the mango cubes and stir gently for 1 minute to warm them.
- Stir in 2 tsp sesame oil.
- Serve with rice, garnished with chopped scallions.
SKEWERED SHRIMPS WITH MANGO SALSA

- In a medium skillet over low heat, cook the sliced garlic in the olive oil till soft. Let cool, then mix in the other ingredients. On a wooden skewer place 4 or 5 shrimp, depending on size. Place in a long casserole and pour the marinade over. Marinate for at least two hours or up to 6 hours in the refrigerator, turning occasionally.
- Mix all the ingredients for the Mango Salsa together in a glass bowl. Let sit about 30 minutes in the refrigerator.
- Preheat a broiler or grill to high heat. Grill the skewers about 3 minutes per side. Serve on a bed of the Mango Salsa.
WRAPPED SCALLIONS
This is posted in response to requests for scallion recipes. I got this simple recipe from my MIL. Looks great on a veggie platter and is addicting. Warning: very easy to make. If you like onions you will love this.

- Wash and trim the scallions.
- I leave about half of the dark green portion of the scallion.
- Take about 1 tablespoon of the softened cream cheese and form it around the lower half or 2/3rd's of the scallion.
- Wrap with one piece of the sliced meat.
- Depending on the length of the scallion, I sometimes fold the meat in half.
- Chill in frig and serve on a veggie platter.
- Note: I count the number of scallions and just judge how much cream cheese and meat slices I will need.
- Cooking time is chill time in frig.
GRILLED SHRIMP WITH MANGO SALSA
This is amazing and sooo delicious! Leave the seeds of the chiles in for a hotter dish; take some out for less heat. You can also use 2 2" fresh hot red chiles - whatever equivalent you can find as long as it's the red kind. I leave the seeds in the jalapeno and about 1-2" worth of seeds on the red, and it's pretty hot. This dish just gets better and better as the leftovers sit in the refrigerator too! I would definitely serve this to guests [I have - it's quite a hit]. For special occasion serving, leave the tails on the shrimp and serve nicely atop a bed of the mango salsa. Prep time would be less with shrimp already peeled and deveined, more if it was a 1 1/4 of medium-sized shrimp rather than 16 jumbo to prepare & grill, and, ultimately, it is the mango that takes me so long to prepare for some reason anyway, so this might take you a lot less time than it seems to take me!

- Dissolve the brown sugar in the lime juice.
- Stir in red chili, scallion, cilantro, and mint.
- Add mangoes and gently toss mixture. Set aside.
- Whisk oil, jalapeno, cumin, & salt together in medium-sized bowl.
- Add shrimp and toss to coat. If using skewers, thread shrimp (through head and mid section of each shrimp forming a stiff, secure C on the skewer) on pre-soaked skewers (wooden skewers must be soaked in water before being grilled with to prevent them from burning or catching on fire).
- Grill shrimp, turning occasionally, until just cooked through, about 4 minutes. There will be some light charring as well from the marinade.
- For no fuss serving, just toss the shrimp into the mango salsa and dish out!
- It's great while shrimp is warm & mango salsa is room temp or served later cold. Simple and amazing!

- Defrost your shrimp and give them a quick rinse, checking them for any veins. After they are defrosted and clean, place them into a colander to drain well. Pat them dry with a paper towel.
- Cut the scallions into 2 1/2 inch pieces and slice the ginger to about 1/8 inch thickness. Heat the oil in your wok over medium heat and spread the ginger across the wok.
