SAVORY CURRIED PORK
The rich flavor of sesame oil and the kick of fish sauce and lemon grass enhance this tender slow-simmered pork curry.

Steps:
- Remove fat from pork. Cut pork into 2-inch cubes. In blender, place onion, garlic, gingerroot, turmeric and red pepper. Cover; blend on medium-high speed about 1 minute, stopping blender frequently to scrape sides, until smooth.
- In 4-quart Dutch oven, heat oils over medium heat. Gradually and carefully pour blended mixture into oil (oil will spatter). Heat to boiling. Reduce heat; cover and simmer 15 minutes, stirring occasionally.
- Stir in pork, tomatoes, lemon grass and fish sauce. Heat to boiling. Reduce heat; cover and simmer about 1 hour 30 minutes, stirring occasionally, until pork is tender. Serve over rice; garnish with cilantro.

- Cook the rice as the label directs. Remove from the heat and set aside 5 minutes, then fluff with a fork.
- Heat the vegetable oil in a large heavy pot over medium-high heat. Add the onion and cook until translucent, about 3 minutes. Add 2 cups water, the carrots, turnips, broth, 3/4 teaspoon salt and
- a few grinds of pepper. Bring to a boil and add the curry mix; stir until combined. Reduce the heat to medium, cover and cook, stirring halfway through, until the sauce is thickened, about 10 minutes. Stir and add a little extra broth or water to thin, if needed; season with salt and pepper. Keep warm.
- Put the flour, beaten eggs and panko in 3 shallow dishes. Season the pork with salt and pepper. Coat a pork chop in the flour, shaking off the excess. Dip in the egg, letting the excess drip off, then coat with the panko. Repeat with the remaining pork.
- Fill another large pot with 2 inches of vegetable oil and heat over medium-high heat until a deep-fry thermometer registers 350 ̊ F. Deep-fry 2 pork chops until golden, about 6 minutes. Transfer to a paper towel-lined plate and sprinkle lightly with salt. Repeat with the remaining 2 chops. Let rest 1 to 2 minutes.
- Divide the rice among bowls and ladle in the warm curry. Slice the pork and serve on top.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat water, dried onion, chicken bouillon, garlic powder, rosemary, thyme, and salt in a microwave-safe bowl for 1 minute in the microwave; let stand until onion is rehydrated and bouillon is dissolved.
- Heat coconut oil, curry powder, and ground red pepper in a large oven-proof skillet over medium heat, stirring constantly, until oil takes on the color of the curry powder, 5 to 6 minutes.
- Cook and stir pork tenderloin slices in coconut oil mixture until pork begins to brown. Sprinkle flour over pork; cook and stir until slices cook through; 2 to 3 minutes more.
- Stir bouillon mixture, coconut milk, and peanut butter into pork mixture; bring to a boil, stirring constantly. Cover skillet with an oven-proof lid and transfer to oven.
- Cook pork in the preheated oven until tender and sauce is bubbling, about 45 minutes. Remove from oven, remove lid, and rest pork for 10 minutes to allow sauce to thicken.

PORK IN SOUR CREAM GRAVY
This recipe has always been a family favorite in my house. It takes a while to cook about 3 hours start to finish, but its worth the wait. The meat will melt in your mouth. This recipe is best served with mashed potatoes.

- Rub the meat with the crushed garlic, olive oil, salt & pepper.
- Place the meat in a plastic bag and let it marinate in the mixture for at least 30 minutes.
- Heat olive oil in a large pot (enough to cover the bottom of the pot).
- Add 1 onion cut in half and the pork pieces Brown the meat on all sides.
- Once the meat is browned add enough water to the pot to just cover the meat.
- Lower the heat to medium and let the meat boil until the water almost completely evaporates (not enough for the meat to start burning).
- Add enough water again to cover the meat and add a pinch of the Vegeta soup seasoning (or all purpose seasoning).
- Repeat the process of adding water and letting it evaporate until the meat is tender and falls apart easily.
- When the meat is tender enough allow the water to again almost completely evaporate.
- Remove the meat from the pot and the larger pieces of the remaining onion. Discard the onion.
- Scrape the meat pieces and drippings inside pot so that they are all in the water that remains.
- Add about a cup of water to the pot (this is the amount of gravy that you want to end up with), stir, and allow to come to a boil.
- In a separate bowl, combine approximately 1/2 cup of water with the sour cream and flour.
- Wisk/mix until the mixture is smooth and without lumps.
- Slowly add this mixture to the pot and let it come to a boil.
- Reduce the heat and simmer for a few minutes.
- If the consistency of the gravy is too thin add a little more of flour/water/sour cream mixture. If it is too thick add more water.
- Add the bay leaf.
- Bring the mixture to a boil.
- Remove the pot from heat.
- Return the cooked meat to the gravy.
- Let it stand for about 15 minutes in the gravy before serving.
PORK CHOPS WITH CURRIED CARAMELIZED ONIONS AND APPLES

- Season chops with salt and pepper; brown both sides in a skillet with a little olive oil; remove to a 9x13 inch baking dish.
- In the same skillet, melt butter over medium heat.
- Cook and stir onions and apples in butter until caramelized, being sure to stir up browned bits.
- Stir in applesauce, apple juice, beef broth, garlic and curry powder.
- Season to taste with salt and pepper; simmer on low heat until slightly thickened, continuing to stir up browned bits from pork chops.

- Cut pork into 1/4-inch slices. Place between two sheets of plastic wrap, and pound thin with a mallet or the side of a cleaver.
- In a small saucepan over medium heat, combine cherries with 1/3 cup of port. Bring to a simmer, then turn off heat. Let cherries soak until you need them.
- In a medium saute pan (not nonstick) over medium-high heat, cook butter with olive oil until light brown. Cook pork in 2 batches, allowing to brown well around the edges, about 1 to 2 minutes on each side. Transfer to a warm plate, and sprinkle with salt and pepper. Do not allow pan drippings to burn.
- Remove pan from heat. Add vinegar, scraping pan with a wooden spoon. Return to heat, and add remaining 2/3 cup wine. Boil over high heat until thick, about 1 minute. Combine with cherries, and spoon over meat. Serve immediately.
