Yield Serves 4 to 6

Number Of Ingredients 11

2 cups shredded cooked chicken
1/2 cup bottled barbecue sauce
Sea salt and freshly ground black pepper
1 15-ounce can chickpeas (about 2 cups), drained but not rinsed, 2 tablespoons liquid reserved
2 garlic cloves, minced
2 scallions, minced (white and green parts)
8 7-inch flour tortillas
1/2 cup fresh cilantro leaves
2 ounces smoked Gouda cheese, shredded (about 1/2 cup)
2 ounces Monterey Jack cheese, shredded (about 1/2 cup)
Olive oil for oiling the grill pan

Steps:

  • Preheat the oven to 200°F.
  • Combine the chicken and barbecue sauce in a medium bowl, season to taste with salt and pepper, and toss gently to coat.
  • In a separate medium bowl, combine the chickpeas and the reserved liquid, garlic, and scallions and mash the ingredients together with a potato masher, leaving the mixture slightly chunky. Season to taste with salt and pepper and stir to combine.
  • To assemble the quesadillas, lay the tortillas on a flat work surface and spread the chickpea mixture over half of each tortilla, dividing it evenly. Top with the chicken and sprinkle each with a few cilantro leaves and the cheeses. Fold the tortillas in half to form half-moons.
  • Lightly grease a grill pan or cast-iron skillet with olive oil and heat it over medium-high heat until it's hot. Place two of the quesadillas in the skillet to grill for about 2 minutes per side, turning once, until the cheese is melted and the tortillas are golden brown. Transfer the quesadillas to a baking sheet and place them in the oven to keep them warm. Repeat the process with the remaining quesadillas, adding more oil to the pan if it's dry. Cut the quesadillas into wedges and serve warm.

  • Heat the olive oil in a large nonstick skillet over medium-high heat. Once hot, add the diced onion and cook until soft, about 5 minutes.
  • Reduce the heat to low and add the leftover chicken and chopped parsley. Stir until the chicken is fully reheated, about 1-2 minutes. Transfer the mixture to a bowl and set aside.
  • Add about 3.5 oz of the chicken to one side of each tortilla and fold the other half over to seal. Continue cooking until each side is golden brown. (You can use some of the juices from the chicken mixture and increase the heat to a medium-low to help with browning.)

  • Lightly rub one side of a large, burrito-sized tortilla with olive oil (1 tsp). Place the tortilla, oiled side down, into a preheated nonstick skillet over medium-low heat. Spread 3/4 cups of cheese onto the tortilla, leaving about 1/2" of space between the cheese and the edge of the tortilla. Add the meat mixture and sprinkle with the onions. Top with the remaining cheese and the other tortilla. Lightly oil the top tortilla and lid the skillet. Let cook for 1–2 minutes, or until the bottom tortilla is golden-brown. CAREFULLY flip the quesadilla and continue cooking (lid the skillet again) until golden-brown on the second side, an additional 2–3 minutes.
  • Divide the cheese into 2 piles with 3/4 cups each. For each tortilla, spread half of one cheese pile onto half of each tortilla, leaving about 1/2" between the cheese and the edge of the tortilla (see the photo here: these are not the same quesadillas, but you can see how I've arranged the filling). Add half of the meat mixture to the same half of each tortilla and sprinkle each with half of the onions. Now, for each tortilla, spread the remaining cheese in each pile over the top of the filling. Fold the other half of the tortilla over the filling. Rub 1/4 tsp of olive oil onto the top of each quesadilla. Place the quesadillas, oiled-side down, into a preheated non-stick skillet over medium-low heat. Rub 1/4 tsp olive oil onto the exposed side of each quesadilla. Lid the skillet. Let cook for 2–3 minutes, or until the bottom tortilla is golden-brown. Carefully flip the quesadillas and continue cooking (lid the skillet again) until golden-brown on the second side, an additional 2–3 minu
  • Carefully transfer the quesadillas onto a cutting board and cut each quesadilla into 3 roughly equal slices.
