This recipe works well in the oven, in a covered grill or over a campfire! The veggies and chicken steam in their own juices. The best part - it's only 0 (zero) WW points!

8 oz chicken breast
1/2 c red pepper, sliced
1 medium shallot, sliced
1/2 c baby carrots
4 oz mushrooms, sliced
1 tsp italian herbs
1/4 tsp garlic powder
salt and pepper to taste

Steps:

  • 1. While partially frozen, slice the breast in half the long way OR pound the breast until it's uniformity thin, then cut into two pieces.
  • 2. Put each piece of chicken in the center of a 12 inch square of heavy duty foil. Sprinkle each with half of Italian herbs. Divide veggies between both packets. Sprinkle on garlic powder, salt and pepper.
  • 3. Close foil packets tightly. Put on baking sheet in 375ºF oven for half hour. Let sit for 5 minutes before opening.

Chicken and Vegetables in Foil Packets is the perfect easy meal! Flavorful, juicy chicken and seasoned veggies are a healthy family favorite!

1 pound skinless boneless chicken breasts, (cut into 1-inch cubes)
2 bell peppers, (chopped (I used 1 red bell pepper and 1 yellow bell pepper))
1 large zucchini, (sliced or chopped)
1 small yellow onion, (thinly sliced)
3 cloves garlic, (minced)
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt, (or to taste)
¼ teaspoon fresh ground black pepper, (or to taste)
crushed red pepper flakes, (for serving, optional)
chopped fresh parsley, (for garnish)

Steps:

  • Preheat oven to 450˚F.
  • Cut out 4 sheets of foil, each measuring about 12"x12". Set aside.
  • In a large mixing bowl combine the chopped chicken, peppers, zucchini, onion, and garlic.
  • To the chicken mixture add olive oil, paprika, Italian Seasoning, garlic powder, onion powder, salt, and pepper; mix well until thoroughly combined.
  • Spoon mixture evenly onto the 4 foil sheets.
  • Fold all sides of the foil over the ingredients and seal it closed.
  • Transfer the foil packs to a large baking sheet and cook for 20 to 25 minutes, or until chicken is cooked through and veggies are tender. Chicken is cooked through when internal temperature registers at 165˚F.
  • Remove from oven.
  • Carefully poke a hole in the top of the packets, to let some of the steam out. Open the packets away from your face because of the remaining steam inside.
  • Taste for salt and pepper, and adjust accordingly.
  • Garnish with pepper flakes, if using, and chopped parsley.
  • Serve.

2 reynolds aluminum foil, packets
2 boneless skinless chicken breast halves
2/3 cup fat-free Italian salad dressing, divided
1 teaspoon dried basil
2 cups frozen broccoli, cauliflower and carrots
2 tablespoons grated parmesan cheese
pasta, of your choice

Steps:

  • Preheat oven to 450 degrees.
  • Place one chicken breast in each packet topped with Italian dressing.
  • Sprinkle basil and Parmesan cheese on top of dressing.
  • Arrange vegetables on top of chicken.
  • Secure end of packet; leaving room for the heat to circulate.
  • Bake 20 to 25 minutes on a cookie sheet.
  • While chicken is cooking, cook pasta according to package direction.
  • Cut a slit in packet to let heat escape before removing chicken.
  • Place chicken and vegetables on top of pasta.
  • Can sprinkle more Parmesan cheese on top.

non-stick cooking spray
6 chicken breast halves, skinned and boned, trimmed
1 1/2 cups canned spaghetti sauce
1 lb zucchini, trimmed and thinly sliced
1 (11 ounce) can corn, drained
1 (7 ounce) can sliced mushrooms, drained
1 1/2 cups shredded part-skim mozzarella cheese

Steps:

  • Heat the oven to 450°F Tear off six sheets of aluminum foil, measuring approximately 12 x 18 inches. Coat a sheet of foil with a light coating of cooking spray and place a chicken breast on one half, about 3 inches from the center. Top the chicken with 1/4 cup sauce, then 1/2 cup zucchini, scant 1/4 cup corn, 2 tablespoons mushrooms and 1/4 cup cheese. Fold the foil over and roll up the edges, sealing securely. Carefully place 3 packets on each of 2 baking sheets. Bake for 30 minutes. Remove from the oven and let stand a few minutes before opening. Slide the contents of each packet onto a plate and serve.

3/4 cup grated parmesan cheese
2 tablespoons garlic salt
1 teaspoon paprika

1 onion, cut into eights

Steps:

  • Preheat grill or oven to 450°F.
  • Place a foil bag in a 1 inch pan.
  • Mix water and flour and add to bag.
  • Mix cheese and spices; sprinkle half over chicken.
  • Place in bag in an even layer.

Cooking doesn't get much easier than this tasty recipe submitted by Teresa Stough of Augusta, Georgia. An aluminum foil "boat" holds a chicken breast, rice, veggies and seasonings for baking. There's little cleanup and no leftovers.

2 tablespoons uncooked instant rice
1 bone-in chicken breast half
1/4 cup sliced carrot
2 onion slices, separated into rings
1/4 cup julienned green and sweet red pepper
1 tablespoon water
1 tablespoon Worcestershire sauce
2 to 3 teaspoons soy sauce
1 tablespoon butter

Steps:

  • Place rice in the center of a piece of heavy-duty foil (about 14 in. square); top with chicken and vegetables. Combine the water, Worcestershire sauce and soy sauce; pour over vegetables. Dot with butter. Fold foil around the chicken and vegetables and seal tightly., Place in a baking pan. Bake at 350° for 65-75 minutes or until chicken juices run clear. 2 cups frozen green beans or 1 (15 ounce) can green beans, drained
1 (14 1/2 ounce) can diced tomatoes with onion and garlic
2 teaspoons dried oregano
1 teaspoon salt
1/4 teaspoon pepper
1 (4 ounce) package feta cheese

Steps:

  • Tear heavy duty foil into four (12 X 18 inch) pieces.
  • Cut chicken into strips.
  • Combine chicken,green beans, tomatoes, oregano, salt, and pepper.
  • Center 1/4 of chicken mixture on each sheet of foil.
  • Bring up sides of foil and double fold. Double fold ends to form a packet, leaving room for heat to circulate. Repeat to make 4 packets.
