CHICKEN AND VEGGIE PACKETS
This recipe works well in the oven, in a covered grill or over a campfire! The veggies and chicken steam in their own juices. The best part - it's only 0 (zero) WW points!

Steps:
- 1. While partially frozen, slice the breast in half the long way OR pound the breast until it's uniformity thin, then cut into two pieces.
- 2. Put each piece of chicken in the center of a 12 inch square of heavy duty foil. Sprinkle each with half of Italian herbs. Divide veggies between both packets. Sprinkle on garlic powder, salt and pepper.
- 3. Close foil packets tightly. Put on baking sheet in 375ºF oven for half hour. Let sit for 5 minutes before opening.

- Preheat oven to 450˚F.
- Cut out 4 sheets of foil, each measuring about 12"x12". Set aside.
- In a large mixing bowl combine the chopped chicken, peppers, zucchini, onion, and garlic.
- To the chicken mixture add olive oil, paprika, Italian Seasoning, garlic powder, onion powder, salt, and pepper; mix well until thoroughly combined.
- Spoon mixture evenly onto the 4 foil sheets.
- Fold all sides of the foil over the ingredients and seal it closed.
- Transfer the foil packs to a large baking sheet and cook for 20 to 25 minutes, or until chicken is cooked through and veggies are tender. Chicken is cooked through when internal temperature registers at 165˚F.
- Remove from oven.
- Carefully poke a hole in the top of the packets, to let some of the steam out. Open the packets away from your face because of the remaining steam inside.
- Taste for salt and pepper, and adjust accordingly.
- Garnish with pepper flakes, if using, and chopped parsley.
- Serve.

Steps:
- Preheat oven to 450 degrees.
- Place one chicken breast in each packet topped with Italian dressing.
- Sprinkle basil and Parmesan cheese on top of dressing.
- Arrange vegetables on top of chicken.
- Secure end of packet; leaving room for the heat to circulate.
- Bake 20 to 25 minutes on a cookie sheet.
- While chicken is cooking, cook pasta according to package direction.
- Cut a slit in packet to let heat escape before removing chicken.
- Place chicken and vegetables on top of pasta.
- Can sprinkle more Parmesan cheese on top.

- Heat the oven to 450°F Tear off six sheets of aluminum foil, measuring approximately 12 x 18 inches. Coat a sheet of foil with a light coating of cooking spray and place a chicken breast on one half, about 3 inches from the center. Top the chicken with 1/4 cup sauce, then 1/2 cup zucchini, scant 1/4 cup corn, 2 tablespoons mushrooms and 1/4 cup cheese. Fold the foil over and roll up the edges, sealing securely. Carefully place 3 packets on each of 2 baking sheets. Bake for 30 minutes. Remove from the oven and let stand a few minutes before opening. Slide the contents of each packet onto a plate and serve.

- Place a foil bag in a 1 inch pan.
- Mix water and flour and add to bag.
- Mix cheese and spices; sprinkle half over chicken.
- Place in bag in an even layer.
- Mix vegetables with remaining spice mixture; arrange on top of chicken.
- Double fold open end of bag.
- Slide bag onto grill or place in oven.

- Tear heavy duty foil into four (12 X 18 inch) pieces.
- Cut chicken into strips.
- Combine chicken,green beans, tomatoes, oregano, salt, and pepper.
- Center 1/4 of chicken mixture on each sheet of foil.
