6 cups fresh spinach, rinsed and dried
½ cup dried cranberries
½ cup walnut halves
1 tomato, sliced
1 pound top round steak, thinly sliced
1 pinch salt
1 pinch ground black pepper

Steps:

  • Arrange spinach on a large plate. Sprinkle with cranberries and walnuts, and arrange tomato slices on top. Set aside.
  • In a non-stick skillet (or a regular skillet coated with non-stick spray) cook steak over medium heat until no pink remains and steak is thoroughly cooked.
  • Arrange cooked steak over salad. Sprinkle salt and pepper on top, and drizzle with your favorite dressing. Note: I suggest using a light flavored dressing. Citrus dressings taste especially good on this salad!

4 beef flank steaks (about 1 pound each)
1 bottle (16 ounces) Italian salad dressing, divided
1-1/4 cups uncooked wild rice
2 packages (6 ounces each) fresh baby spinach
1/2 pound fresh mushrooms, sliced
1 large red onion, thinly sliced
1 pint grape tomatoes, halved
1 package (2-1/2 ounces) slivered almonds, toasted

Steps:

  • Place steaks in a shallow dish; add 3/4 cup salad dressing and turn to coat. Cover and refrigerate overnight. Prepare the rice according to package directions. In a bowl, combine rice with 1/2 cup salad dressing. Cover and refrigerate overnight., Drain steaks, discarding marinade. Grill steaks, uncovered, over medium heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes. Thinly slice against the grain; cool to room temperature. , To serve, arrange spinach on a large platter. Top with the rice, mushrooms, onion, tomatoes and steak. Sprinkle with almonds; drizzle with remaining salad dressing.

2 cups cubed butternut squash
3 tablespoons slivered almonds
1 tablespoon extra virgin olive oil
1/2 teaspoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (if you like a little heat)
8 ounces flank steak
Balsamic dressing
1 bunch spinach, washed and stems removed
1 small red onion, cut into thin rounds
Parmesan cheese, sliced into very thin strips

Steps:

  • Marinate the steak in 1/4 cup of the balsamic dressing for at least 1 hour.
  • Preheat the oven to 350°F.
  • Combine the squash, almonds, salt, chili powder, coriander, cayenne and olive oil in a bowl and toss to combine and coat the squash. Roast the squash mixture for 20-25 minutes or until the squash is soft, stirring every few minutes to prevent the almonds from burning.
  • Towards the end of roasting the squash, prepare the steak: Heat a ribbed cast iron pan or griddle (ribbed isn't necessary but it makes nice grill marks) over medium high heat. Once hot, spray with vegetable spray and add the marinated steak. Sear on both sides until cooked to desired doneness. Transfer the steak to a cutting board and let rest for a couple of minutes. Use a sharp knife to cut the steak into very thin slices.
  • Assemble the spinach leaves on the plates, top with some of the butternut squash mixture, lay some steak slices on top, add some red onion slices, drizzle with balsamic dressing and sprinkle with Parmesan cheese. Serve immediately.

1/3 cup fresh lime juice
2 teaspoons lime zest
2 cloves garlic, minced
1 teaspoon chipotle pepper, chopped
3/4 cup canola oil
2 tablespoons chopped cilantro
1 (2 to 3 pound) flank steak
1 cup dried black beans, soaked overnight with one change of water
2 cloves garlic, smashed
Salt and freshly ground black pepper
2 bunches arugula, rinsed and dried
2 cups corn relish, recipe follows
1/2 bunch cilantro, leaves picked, rinsed, and dried
6 cups cooked kernels (about 10 to 12 ears of corn)
2 cups diced onion
1 cup diced red bell pepper
1 cup diced green bell pepper
3/4 cup chopped celery
1 1/2 cups packed light brown sugar
2 tablespoons salt
2 tablespoons dry mustard
2 teaspoons mustard seed
2 teaspoons turmeric
1 1/2 teaspoons celery seed
1/4 teaspoon cayenne pepper
3 cups cider vinegar

Steps:

  • Whisk together all of the marinade ingredients. Trim the steak of fat. Score both sides of flank steak in a criss-cross. Put the steak in a deep dish or sealable plastic bag and pour in the marinade. Marinate the flank steak in the refrigerator for 6 to 8 hours before grilling.
  • Cook beans in cold water with 2 cloves of garlic. Add salt, about 10 minutes before the beans are done. They should be tender but not mushy.
  • Preheat the grill for 20 minutes. Bring the steak to room temperature.
  • Season the flank steak with salt and pepper. Grill 1 to 2 minutes each side. Allow to sit 15 minutes before slicing it. Arrange the arugula with the beans over top. Then place thinly sliced flank steak and corn relish over top. Garnish with the cilantro leaves.
  • Combine all ingredients in a preserving pan. Bring the mixture to a boil over medium heat, stirring occasionally. Simmer mixture for about 30 minutes until it has thickened slightly. Ladle boiling hot relish into hot, sterilized pint jars leaving 1/4-inch headspace. Seal the jars with new 2 piece lids then process for 15 minutes in a boiling bath. Cool and label jars. Allow to mellow for a couple of weeks before serving.

Extra-virgin olive oil, for brushing
Kosher salt and freshly ground pepper
1 1/2 tablespoons unsalted butter
1/2 onion, finely chopped
1 1/2 tablespoons all-purpose flour
1 1/2 cups whole milk
2 10-ounce packages frozen chopped spinach, thawed and squeezed dry
3/4 cup grated parmesan cheese
1/2 teaspoon grated lemon zest
1/4 teaspoon freshly grated nutmeg

Steps:

  • Heat a grill pan over medium-high heat. Pat the steak dry and brush lightly with olive oil. Season with 11/2 teaspoons salt and 2 to 3 teaspoons pepper. Cook, turning once, 10 to 13 minutes total for medium rare. Transfer the steak to a cutting board to rest, about 10 minutes.
  • Meanwhile, melt the butter in a medium saucepan over medium heat. Add the onion and cook until softened, about 5 minutes. Add the flour and cook, stirring, 1 minute. Remove from the heat and gradually whisk in the milk. Return to medium heat and simmer, whisking, until slightly thickened, about 2 minutes.
  • Stir in the spinach, 1/4 cup water, 1/2 cup parmesan, the lemon zest and nutmeg and cook, stirring occasionally, until the sauce thickens and the spinach is tender, about 10 minutes. Thin with water, if needed. Stir in the remaining 1/4 cup parmesan and salt to taste.
  • Thinly slice the steak and serve with the spinach.

2 packages (10 ounces each) frozen leaf spinach, thawed
1/4 cup fresh parsley, chopped
1/4 cup grated Asiago cheese
2 tablespoons capers, rinsed and drained
2 tablespoons balsamic vinegar
1 garlic clove, minced
1/4 teaspoon red-pepper flakes
Coarse salt and ground pepper
1 small flank steak (1 pound)
1 teaspoon olive oil

Steps:

  • Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil; set aside. Place spinach in a clean kitchen towel, and squeeze out as much liquid as possible.
  • In a medium bowl, combine spinach, parsley, cheese, capers, vinegar, garlic, and red-pepper flakes. Season with salt and pepper; toss to combine. Cut and open steak.
  • Cut several 12-inch pieces of kitchen twine; space evenly underneath steak. Spread spinach mixture down center of meat (see opposite). Roll steak over mixture, pressing firmly to compact the filling as much as possible; tie twine to secure roll. Cut roll in half crosswise. Place halves, seam side down, on prepared baking sheet; rub with oil, and season with salt and pepper.
  • Broil until browned, 8 to 10 minutes for medium-rare; let rest, loosely covered with foil, 10 minutes. Remove string, and slice steak into 1/2-inch rounds.

3 cups Baby Spinach
1/3 cup chopped onion
1 garlic clove
1 1/2 cups grated cheese (Parmesan, mozzarella, and asiago)
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1 (1 1/2-2 lb) flank steaks
1/2 cup A.1. Original Sauce or 1/2 cup barbecue sauce

Steps:

  • Preheat oven to 425 degrees.
  • In a food processor, pulse the spinach, onions, and garlic. Add the cheeses, oregano, salt and pepper and pulse until just combined.
  • Butterfly the steak and open it like a book. The steak should be about 1/2 inch thick. Spread the spinach and cheese mixture to within about 1 inch of the edges. Roll up the steak jelly roll style and tie at 2 inch intervals with kitchen twine.
  • Add about 2 tablespoons of olive oil to an ovenproof saute pan over medium high heat. Saute the steak in the pan until brown on all sides, about 8 - 10 minutes.
  • Brush the steak with the A-1 Steak Sauce and transfer to the oven. Roast for about 15 minutes.
  • Turn the steak over, baste again with the sauce and roast an additional 10 minutes or until 125 - 130 degrees for medium rare. Remove from pan and place on a cutting board. Tent with foil and let rest for about 5 - 10 minutes.
  • Slice in rounds with a sharp knife and serve.
