Vietnamese BBQ Shrimp Vermicelli Recipe (Bun Tom Heo Nuong) Recipe - (4.7/5) image

BBQ Shrimp Marinade:
8 oz rice sticks
12 medium-sized shrimp, shelled (but leave tail intact) and deveined
3 lettuce leaves, thinly cut
1/2 small cucumber, cut into thin strips
1 cup fresh bean sprouts
1/2 small carrot, peeled and cut into thin strips
Some cilantro leaves, coarsely chopped
Some mint leaves, coarsely chopped
Some perilla leaves, coarsely chopped (optional)
Some Thai basil leaves, coarsely chopped (optional)
3 tablespoons roasted peanuts, coarsely ground
1 teaspoon fish sauce
3 heavy dashes black pepper powder
A pinch of turmeric powder
Nuoc Cham (Fish Sauce or Vietnamese Dipping Sauce) Recipe
1/4 cup fish sauce
1/2 cup warm water
1/4 cup sugar + 1 tablespoon sugar (if you like it sweeter)
3 tablespoon lime juice
Method:
Add fish sauce, water, sugar and lime juice in a small bowl and mix well. Make sure the sugar is completely dissolved.

Steps:

  • Cook the rice sticks according to the package instructions. Rinse with cold water thoroughly after cooking, drain in a colander and set aside. Marinate the shrimp with all the ingredients in the BBQ Shrimp Marinade for 30 minutes. Prepare and cut all the vegetables and herbs. Fire up your BBQ pit and grill the shrimp until they are properly cooked. Divide the rice sticks, vegetables and herbs into 3 portions and transfer them into 3 bowls. (The rice sticks should sit on top of the vegetables and herbs). Transfer 4 shrimps into each serving, sprinkle some ground peanuts, and pour some nuoc cham (fish sauce) into the noodles. Serve immediately. Nuoc Cham (Fish Sauce or Vietnamese Dipping Sauce) Recipe Ingredients: 1/4 cup fish sauce 1/2 cup warm water 1/4 cup sugar + 1 tablespoon sugar (if you like it sweeter) 3 tablespoon lime juice Method: Add fish sauce, water, sugar and lime juice in a small bowl and mix well. Make sure the sugar is completely dissolved. Cook's Notes: 1.To jazz up the taste, add some garlic chili sauce and mix well with the fish sauce (nuoc cham) before serving. 2.For the nuoc cham recipe, different brand of fish sauce tastes differently, so adjust the sugar, warm water level to your liking. If it's too salty or strong for your taste, add more water and sugar. 3.For fish sauce, I recommend 3 Crabs brand Fish Sauce.

Bun thit nuong, BBQ pork with rice vermicelli, is a dish commonly found in American Vietnamese restaurants and is one of my favorite meals. I finally decided to try making it myself and discovered this recipe, making a few tweaks to suit my own tastes.

1 lb pork shoulder, sliced thin
1 tablespoon diced garlic
2 tablespoons oyster sauce
1/4 cup sugar
1/4 cup sake
1/4 cup fish sauce
1/4 cup oil
1/2 teaspoon five-spice powder
fresh ground pepper
1/2 cup fish sauce
1/2 cup sugar
1 cup hot water
1 teaspoon crushed garlic
1 -2 Thai chile
1 slice lime
4 cups rice vermicelli
2 cups iceberg lettuce, chopped
2 cups bean sprouts
1 cup mint, chopped
1 cup cilantro, chopped
1 carrot, julienned
1 cucumber, julienned
1/2 cup chopped peanuts
hoisin sauce, to taste

Steps:

  • Mix all thit nuong ingredients together. Refrigerate and marinate for at least half an hour.
  • While meat is marinading, mix nuoc mam ingredients together, stirring until sugar is completely dissolved. Set aside.
  • Boil vermicelli according to package directions, draining once cooked through.
  • Remove pork from the fridge and cook using desired method. Grilling over an open flame is best, but I usually cook it on the stove over medium-high heat, then broil it in the oven for a few minutes.
  • In individual serving bowls, place vermicelli, vegetables, and herbs. Top with pork and chopped peanuts. Drizzle nuoc cham and hoisin sauce on top, as desired. Dig in and enjoy!
  • Notes: Chicken, shrimp, or even tofu make wonderful substitutions for pork in this recipe.
  • Use as many or as few of the suggested vegetables and herbs as desired (or even make your own additions!).

1 lb large shrimp, peeled and deveined
wooden skewer
1 small onion, minced,rinced under cold water,and drained
2 cloves garlic, minced
1 teaspoon vegetable oil
1 -2 dash fish sauce
1 lime, juice of
1 teaspoon fresh ground pepper
1/2 teaspoon sea salt
1/2 teaspoon fish sauce
1/2 teaspoon sugar

Steps:

  • Mix the onion, garlic, oil, and fish sauce in a bowl large enough to hold the shrimp.
  • Add the shrimp, toss to coat evenly, and marinate, covered, at room temperature for 30 minutes.
  • Soak the wooden skewers in water for 20-30 minutes.
  • Prepare grill or preheat broiler.
  • To prepare the dip, mix together the lime juice, pepper, salt, fish sauce, and sugar, in a small bowl, mixing well; adjust seasonings to taste (add a little water or sugar if dip seems too tart).
  • Thread shrimp onto wooden skewers; lightly coat each finished skewer with oil or cooking spray, and place on grill over medium coals or heat (or place on pan under broiler), and cook approximately 5 minutes, turning once, or until shrimps are pink, firm, and slightly charred in spots.
  • Serve shrimp with the dipping sauce.
  • A good accompaniment would be steamed rice, or an Asian noodle dish.
