5 cups torn red leaf lettuce
1 large red apple, chopped
1 large green apple, chopped
1 cup (4 ounces) crumbled Gorgonzola cheese
1/2 cup chopped walnuts, toasted
1/3 cup thinly sliced red onion
1/3 cup dried cranberries
CIDER VINAIGRETTE:
3/4 cup apple cider or juice
3 tablespoons cider vinegar
2 teaspoons honey
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup walnut oil or canola oil

Steps:

  • In a salad bowl, combine the first eight ingredients., In a small bowl, whisk the cider, vinegar, honey, salt and pepper; gradually whisk in oil. Drizzle over salad; toss to coat. Serve immediately.

8 cups chopped red leaf lettuce, about 1 large head
1 medium apple, cored and thinly sliced (I used Gala apple)
1/4 cup thinly sliced red onions
3/4 cup walnut halves, toasted + roughly chopped
1/3 cup crumbled feta cheese
1/3 cup extra-virgin olive oil
2 Tbsp. balsamic vinegar
1 Tbsp. Dijon mustard
2 tsp. honey or maple syrup
Kosher salt and fresh ground black pepper

Steps:

  • in a small bowl, combine the olive oil, balsamic vinegar, mustard, and honey. Whisk until blended. Season with salt and pepper, to taste.
  • in a large bowl combine the lettuce, apples, red onions, walnuts, and feta. Drizzle with desired amount of vinaigrette and serve immediately. You'll have leftover vinaigrette, which can be refrigerated in an airtight container for at least one week, if not more.

cheese crumbles ( I use a sharp cheddar)
⅓ cup olive oil
¼ cup balsamic vinegar
2 tbsp sugar
2 clove garlic (finely chopped)
1 tsp mustard

Steps:

  • Slice apples
  • Place lettuce in bowl, top with cheese, walnuts and apples
  • Place olive oil, balsamic vinegar, sugar, garlic, mustard in small container with lid (I use a small mason jar with lid) and mix well.

¼ cup cranberries
¼ cup balsamic vinegar
1 cup red onion, chopped

2 skinless boneless chicken breast halves (about 1 pound)
2 tablespoons fresh lemon juice
1 1/2 teaspoons mild honey
2 tablespoons finely chopped shallot
5 tablespoons olive oil
1/3 cup finely diced Granny Smith apple
1 small head Boston or Bibb lettuce (1/4 pound), leaves separated and left whole
1 cup seedless red grapes, halved if desired
1/2 cup walnuts (4 ounces), toasted
1 celery rib, thinly sliced

Steps:

  • Bring 2 inches of water with 2 teaspoons salt to a boil in a 2-quart heavy saucepan. Add chicken and poach at a bare simmer, partially covered, until just cooked through, 12 to 14 minutes.
  • While chicken poaches, whisk together lemon juice, honey, and 1/2 teaspoon salt in a bowl until honey and salt have dissolved. Whisk in shallot and oil, then whisk in apple.
  • Divide lettuce, grapes, walnuts, and celery between 2 plates and drizzle with half of vinaigrette. Slice chicken and put on top of salads, then drizzle with remaining vinaigrette.
