3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt

2 lb beef boneless country-style ribs
2 tablespoons olive or vegetable oil
6 medium carrots, cut into 2-inch pieces
2 medium stalks celery, chopped (1 cup)
1 large onion, chopped (1 cup)
2 large cloves garlic, finely chopped

Steps:

  • Heat oven to 350°F.
  • In 13x9-inch glass baking dish, mix broth, wine, tomato sauce, thyme and marjoram.
  • In heavy-duty resealable plastic food-storage bag, place flour, salt and pepper; shake to mix. Add ribs; shake to coat. In baking dish, beat excess flour mixture (about 1 tablespoon) into tomato sauce mixture, using wire whisk.
  • In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Cook ribs in oil about 5 minutes, turning once, until brown. Place ribs in baking dish; turn to coat with sauce mixture. Add remaining 1 tablespoon oil to skillet; increase heat to high. Cook carrots, celery, onion and garlic in oil 3 minutes, stirring frequently.
  • Add carrot mixture to ribs and sauce. Cover tightly with foil. Bake 1 hour 30 minutes to 2 hours or until ribs are tender.

My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

5 pounds bone-in country style pork ribs
kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 tablespoons canola oil
2 medium yellow onions (, sliced 3/8" thick)
3/4 cup ketchup
3/4 cup water
1/2 cup granulated sugar
1/3 cup dry sherry wine
2 tablespoons apple cider vinegar
1 1/2 tablespoons soy sauce
1 1/2 tablespoons Worcestershire sauce
2 cloves garlic (, pressed or minced)
1 teaspoon kosher salt
3/4 teaspoon paprika
3/4 teaspoon chili powder

Steps:

  • Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
  • Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
  • Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
  • While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
  • Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
  • Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
  • Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

Savory Golden Country Ribs with Guacamole: Carnitas con Guacamole image

2 1/2 pounds thick, meaty, pork country ribs
2 pounds lard (or enough to cover the meat)
1/4 cup water
1 lime, zest removed with a vegetable peeler in wide strips
Course salt, about 1/2 teaspoon
Water to cover the meat
1/2 teaspoon salt, plus a little course salt for sprinkling on before serving
About 2 cups Chunky Guacamole, recipe follows, with all it's garnishes (cheese, radish roses, cilantro, etc.)

Steps:

  • Trim off all but a thin layer of fat from the pork.
  • The slow-fry method: Melt the lard in a large (4-quart), heavy saucepan over medium-low heat. When it has melted but is not yet very hot, add the pork, water and lime zest. Cook with the lard at a gentle simmer, turning the pork occasionally, for about 40 minutes, until it is barely tender. Raise the heat to medium-high. If all of the water hasn't yet evaporated, the lard will come to a rolling boil, which will eventually diminish into small bubbles as the water evaporates. After the change occurs, the carnitas will need about 10 minutes to brown. Watch them carefully and remove when they are a light golden brown. Drain on paper towels and sprinkle with salt.
  • The boil-then-fry method: Place the meat in a single layer in a wide, heavy saucepan, add enough water to cover the meat by 1/2-inch, measure in the salt, and set over medium heat. Simmer, partially covered, turning the pork occasionally, until the meat is barely tender, about 40 minutes. Uncover, raise the heat to medium-high, and quickly boil away the liquid.
  • When you hear the meat begin to fry in its own rendered lard (once the water is gone), turn the heat down to between medium and medium-low. Let the pork fry, turning frequently, until evenly browned, about 30 minutes. Remove the ribs from the pan, drain on paper towels, and sprinkle with a little salt.
  • While the meat is cooking, prepare the guacamole, scoop it into a serving bowl and garnish. Serve the crispy ribs on a warm serving platter and pass the guacamole to eat along with them. Or cut the meat off the bones and roll with the guacamole into tacos.
  • 1/2 small onion, very finely chopped
  • 2 to 3 serranos or 1 to 2 jalapenos, stemmed, seeded and very finely chopped
  • 1 ripe, medium-large tomato, cored and very finely chopped, optional
  • 1 clove garlic, peeled and very finely chopped, optional
  • 10 sprigs fresh cilantro, chopped, optional
  • 3 ripe, medium-size avocados
  • Salt, about 1/2 teaspoon
  • 1/2 lime, juiced, optional
  • Additional chopped onion, fresh cilantro, radish slices or roses, and/or a little crumbled Mexican queso fresco or other fresh cheese like feta or farmer's cheese, for garnish
  • In a medium-size bowl, mix the finely chopped onion and chiles with the optional tomato, garlic, and cilantro.
  • Close to the time you are going to serve, halve the avocados lengthwise by cutting from the stem to flower ends, around the pits. Twist the avocado halves in opposite directions to loosen the meat from pits, then scoop out the pits, and reserve. Scrape the avocado pulp from the skins and add it to the bowl.
  • Using your hand or a spoon, roughly mash the avocado while mixing in the other ingredients, making a course, thick mass. Flavor with salt, then enough lime juice to add a little zing, if you wish. Return the pits to the guacamole and cover with a sheet of plastic wrap pressed directly onto the surface of the mixture. Set aside for a few minutes to let the flavors blend.
  • The guacamole is very attractive in a pottery bowl or Mexican mortar, sprinkle with chopped onion, cilantro, radish slices and/or queso fresco (cheese); radish roses really dress it up.
  • Yield: about 3 cups, serving 6 as an appetizer, 12 to 15 as a dip

Tender fall off the bone ribs. I found this recipe at Obesity Help. The recipe was posted by hear_me_roar. My family really liked these ribs. My ribs just fell apart when I picked them out of the crockpot. My ribs were done in 6 hours. When I made this ribs I used 3 pounds pounds of boneless ribs. I used sliced regular onions for the scallions. I used regular molasses for blackstrap molasses. I used apple cider vinegar for white wine vinegar. I used canola oil for sesame oil. I used minced garlic for the garlic clove.

Country-style ribs are not really ribs in the true sense, they are meatier and often are boneless. But the end results are just as delicious! These are good served with a tossed green or Caesar salad and Recipe #113186.

4 -5 lbs country-style spareribs
1 tablespoon olive oil
2 (5/8 ounce) packets Italian salad dressing mix (I use Good Season's Zesty Italian)
1 cup brown sugar, firmly packed
1 cup apple cider vinegar
3/4 cup catsup
2 tablespoons honey
1 (12 ounce) jar chili sauce
2 tablespoons Worcestershire sauce
2 tablespoons lemon juice
1/2 teaspoon dry mustard
1 minced garlic clove
1 tablespoon frank's hot sauce (more or less to taste)

Steps:

  • Preheat oven to 325°F.
  • Place spare ribs in a large bowl or gallon size zip-lock bag.
  • Add olive oil and zesty Italian dressing packets.
  • Mix well. Refrigerate and marinade for at least 1 hour. (You can leave it in the marinade over night if you want).
  • Microwave on high for 10-15 minutes, or until ribs are brown, but not cooked through. I microwave them in the bag but you can put them in a microwave safe dish if you prefer. (I use a freezer bag which is thicker and holds up to the heat. I open the seal to vent and place it in a bowl or on a plate - just in case - but have never had a problem).
  • While ribs are in microwave, combine the remaining ingredients in a medium saucepan and cook over medium heat until well dissolved and heated through.
  • Remove ribs from bag and place in a deep 9 x 13 pan that has been prepared with non-stick cooking spray.
  • Pour sauce over ribs, covering evenly.
  • Bake for 1 hour, until ribs are cooked through.
  • Baste occasionally, if desired.
  • NOTE:***These can also be cooked on the grill with delicious results, just baste them frequently and watch them carefully so they do not burn.

This is barbecue belt cooking all the way. I don't care if you're in Austin, Texas, or Manhattan, New York-if ribs are on the menu, you've got to roll up your shirt sleeves and have a big stack of napkins ready. This dish has New Yorkers doing just that when it makes its weekly appearance at Bar Americain. Racks of meaty ribs are dressed up with a smoky spice rub for extra flavor. The rich barbecue sauce, spiked with the molasseslike flavor of bourbon, will leave even the most refined diners licking their fingers. It wouldn't be proper barbecue without some corn bread to mop up every last delicious bit of flavor from the plate, and I like to serve this dish with a savory tomato one.

4 cups hickory or oak wood chips
1/4 cup ground ancho chile
2 tablespoons smoked sweet Spanish paprika
2 tablespoons freshly ground black pepper
2 tablespoons dry mustard

1 tablespoon ground cumin
2 teaspoons ground chile de árbol
2 racks country pork ribs (12 ribs each), membrane removed

Steps:

  • Soak the wood chips in water for at least 30 minutes. Drain well.
  • Stir together the ground ancho, paprika, black pepper, dry mustard, salt, coriander, oregano, cumin, and ground chile de árbol in a small bowl.
  • Brush both sides of the racks with the oil and rub liberally with the spice mixture. Wrap in plastic and refrigerate for at least 12 hours and up to 24 hours. Remove the ribs from the refrigerator 45 minutesbefore smoking to allow them to come to room temperature.
  • Stuff several sheets of newspaper in the bottom of a charcoal chimney starter. Fill the chimney to the top with charcoal. Remove the top rack from your grill. Place the chimney on the lower rack. Light the newspaper and let the charcoal burn until the coals are gray on the outside, about 20 minutes.
  • Open the bottom vent on the grill. Turn out the hot charcoal onto one side of the bottom rack. Using a metal spatula, spread the charcoal to cover approximately one-third of the rack and then scatter half of the soaked wood chips over the charcoal.
  • Return the top rack to the grill. Place an oven thermometer to one side of the rack to allow you to monitor the temperature of the grill, which should stay between 250°F and 300°F at all times. (Check the temperature every 10 minutes.)
  • Place the ribs on the rack to the side of the coals, not directly over them, and cover the grill. Pour one-quarter of the bourbon barbecue sauce into a separate container and set aside. Cook, turning the ribs and basting them with the rest of the barbecue sauce every 20 minutes, until the meat is very tender when pierced with a knife, about 1 1/2 hours. After the first 30 minutes of cooking, light additional charcoal as before, placing the chimney starter on a heatproof surface. When the temperature in the grill drops below 250°F, use oven mitts to lift off the top rack with the ribs in place and set on a heatproof surface. Using tongs, add hot charcoal from the chimney starter to the bottom rack and then scatter the remaining wood chips on top. Return the rack of ribs and cover the grill with the lid.
  • Transfer the ribs to a baking sheet; brush with the reserved barbecue sauce and let stand for 10 minutes. Cut the meat between the bones to separate the ribs and serve with the tomato corn bread.
