SAVOURY BAKED STUFFED APPLES

Savoury Baked Stuffed Apples image

This is not a dessert - but a yummy side to accompany the traditional turkey or even a pork roast. Ever so slightly adapted to include my favourite stuffing aromatic - sage!

Provided by evelynathens

Categories     Christmas

Time 1h35m

Yield 6 serving(s)

Number Of Ingredients 10

7 fuji apples
1 tablespoon olive oil
8 ounces mild sausage, casing removed
1 celery, finely chopped
1 small red onion, finely chopped
1 teaspoon chopped fresh thyme
1/2 teaspoon rubbed sage (optional)
2 tablespoons chopped fresh flat-leaf parsley
4 cups bread cubes, each 1/2-inch square, toasted
salt & freshly ground black pepper, to taste

Steps:

  • Preheat an oven to 375°F.
  • Peel, core and chop 1 apple into 1/3-inch pieces. Set aside.
  • Cut one-fourth off the top of the remaining apples and discard the tops. Using a melon baller or a spoon, hollow out the apples, leaving 1/3 inch of the flesh on the inside. Set aside.
  • In a large sauté pan over medium-high heat, warm the olive oil. Add the sausage and cook, stirring occasionally and breaking up the sausage with a wooden spoon, until browned, 3 to 5 minutes. Using a slotted spoon, transfer the sausage to a large bowl.
  • In the same pan, combine the celery, onion and chopped apple and sauté until tender, 3 to 5 minutes. Add the celery mixture, the thyme, sage, parsley and bread cubes to the bowl with the sausage, season with salt and pepper and stir to combine. Spoon the stuffing into the apples, packing it lightly. Arrange the apples in a baking dish and cover with aluminum foil.
  • Bake for 45 minutes, then remove the foil and continue baking until the apples are tender and the stuffing is golden on top, 15 to 20 minutes more. Serve immediately.

SAVORY APPLE RECIPES TO MAKE THIS FALL | WELL+GOOD

From wellandgood.com
  • Fall harvest salad. One of the easiest ways to make use of your apple haul (without having to bake something), is by slicing one up and adding it to your salad.
  • Apple thyme tart. Not all apple tarts have to be sweet. Pair your fruit with Gruyere cheese, yellow onion, thyme, and Dijon mustard and you have a very different baked good on your hands.
  • Apple and fennel stuffed mushrooms. Having some friends over? Chop your apples and use them as an unexpected ingredient in stuffed mini portabello mushrooms.
  • Brie stuffed with piloncillo-carmelized apples. Yes, it's another apples and cheese pairing—this time using warm, gooey brie. The apples are caramelized with piloncillo (a raw form of pure cane sugar that is commonly used in Mexican cooking), butter, thyme, and rosemary.
  • Apple cheddar pizza. Even if you have pizza night once a week, chances are you haven't made an apple pizza yet. So fun, right? Yellow onion, cheddar cheese, walnuts, and a touch of maple syrup are the recommended other toppings here, but just like any other type of pizza, it's totally customizable so feel free to add or omit ingredients depending on your dietary preferences.
  • Apple spinach salad. This salad only takes 15 minutes to make, so it's a great weekday lunch option. Besides the apple and onion, the other ingredients don't require any chopping whatsoever.
  • Sweet potato and apple tart. Now *this* is an impressive apple tart. The savory star of the show is sweet potatoes, found in abundance during the fall.
  • Instant Pot Indian apple chutney. This Indian apple chutney is loaded with anti-inflammatory spices: cumin, fennel, turmeric, ginger, and cayenne are just a few of them.
  • Spiced rice pilaf with apples. Apples can be incorporated right into rice dishes too, as with this pilaf. The key is incorporating warming spices like allspice and cinnamon with a few strong savory ingredients like thyme, onion, and red pepper flakes.
  • Apple sweet potato hash. One-skillet hash makes a great breakfast or dinner. Eggs ensure there's plenty of protein while sweet potatoes and apples cover the fiber base.
