1 (8 ounce) package cream cheese
1 cup salsa
2 cups chopped cooked chicken breast meat
1 (15.5 ounce) can pinto beans, drained
6 (6 inch) flour tortillas
2 cups shredded Colby-Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small saucepan over medium heat, combine the cream cheese and salsa. Cook, stirring until melted and well blended. Stir in chicken and pinto beans. Fill tortillas with the mixture, roll and place into the prepared baking dish. Spread cheese over the top. Cover with aluminum foil.
  • Bake for 30 minutes, or until heated through. Garnish with your favorite toppings such as lettuce and tomatoes, or sour cream.

1 small red onion, halved
1 1/2 pounds tomatillos, husked and rinsed
1 to 2 serrano chile peppers, stemmed and seeded
1/2 cup low-sodium chicken broth
Kosher salt
Pinch of sugar
8 corn tortillas
3 cups shredded rotisserie chicken
2 1/2 cups shredded mozzarella and/or Monterey Jack cheese
1/3 cup fresh cilantro
2 tablespoons extra-virgin olive oil, plus more for greasing
3/4 cup crumbled queso fresco or feta cheese

Steps:

  • Preheat the broiler. Slice half of the onion into thin rings and set aside. Place the other onion half, tomatillos and serranos on a foil-lined baking sheet and broil until the vegetables are soft and slightly brown, 7 to 10 minutes, turning as needed. Transfer the vegetables and any liquid to a blender, add the broth and puree. Season with 1/2 teaspoon salt and the sugar.
  • Meanwhile, stack the tortillas, wrap in a damp paper towel and microwave just until warm and soft, 1 minute; keep covered. Toss the chicken with 2 cups shredded cheese in a bowl. Spoon a portion of the chicken mixture down the middle of each tortilla. Add a few cilantro leaves and roll up. Place the enchiladas side by side in a lightly oiled 9-by-13-inch baking dish and brush with the 2 tablespoons olive oil. Broil until crisp and golden, 3 minutes.
  • Pour the tomatillo sauce over the enchiladas and top with the remaining 1/2 cup shredded cheese. Return to the oven and broil until the cheese is bubbly and golden brown, 3 to 5 minutes. Garnish with the onion rings, queso fresco and any remaining cilantro.

1 can enchilada sauce, 19 ounces (535 grams)
5 tortillas

Steps:

  • Heat the oven to 350°F (180°C).
  • Combine the chicken, corn, enchilada sauce (leave ¼ cup for topping and base), and ¼ cup (25 G) cheese in a bowl
  • Pour thin layer of enchilada sauce into a pan.

We loved these easy chicken enchiladas. The recipe is simple enough to follow without too many added ingredients. Adjust the taco seasoning to suit your taste buds. Once baked, the chicken enchiladas are moist and flavorful with ooey gooey cheese on top. The flavor of these enchiladas was all that we could hope for. Try with corn tortillas too.

1 pound(s) boneless, skinless, chicken breast or tenderloins
1 can(s) tomatoes and chiles (10 oz)
- taco seasoning mix, to taste
8 - flour tortillas
2 cup(s) shredded cheese (cheddar or Mexican blend)
1 clove(s) garlic, minced
1/4 cup(s) cilantro, fresh, chopped
1-2 can(s) enchilada sauce (10 oz)

Steps:

  • Turn on a skillet to med-med high heat. Spray with non-stick spray.
  • Brown chicken for about 2-3 minutes on each side. Then add a minced clove of garlic, tomatoes and chiles (with juice), taco seasoning, and cilantro. Cover, and simmer until chicken is cooked through and juice reduces.
  • Turn off the heat and shred the chicken. (I leave it in the pan, saves a dish, and keeps it warm.)
  • Warm tortillas enough so they will roll. Place 1/8 chicken mixture, and 1 Tbsp shredded cheese on each tortilla and roll.
  • Place seam side down in a baking dish sprayed with non-stick spray. Pour enchilada sauce over the enchiladas (add as much or little as you'd like). Top with remaining cheese.
  • Bake at 350 for 30 min. Garnish if you like, with some fresh chopped green onion, and some black olives. Serve with salsa and sour cream.

I love this recipe you can use chicken or substitute beef. Its great either way! To save myself time on making chicken I buy the pre-seasoned shredded chicken or seasoned ground beef. If I don't buy premade stuff, i always season my meat.

  • Heat corn or canola oil in large sauce pan; stir in flour and chil powder; cook for 1 minute.

  • Filling.
  • Heat oven to 350°F.
  • Prepare enchilada sauce below.
  • In a medium bowl, mix chicken, green onions, 1/2 cup cheddar, 1/2 cup monterey jack, sour cream, chiles, and cilantro.
  • Stir in 1/2 cup enchilada sauce.
  • Season with salt and pepper, set aside, heat 1/2 inch corn or canola oil in large pan.
  • Fry tortillas, one at a time until soft (10 seconds per side).
  • Drain on paper towels, spray 9"x 13" baking dish with non-stick cooking spray.
  • Spread small amount of sauce in bottom of dish.
  • Spread 2 heaping tablespoons of chicken mixture in each tortilla& roll up.
  • Place seam side down, side by side in prepared dish.
  • Pour remaining sauce over, top with remaining cheeses and bake until bubbling, 15-20 minutes.
  • Garnish with extra sour cream, sliced green onions and chipped cilantro.

8 flour tortillas (I used an organic whole wheat low cal, low fat brand)
10 ounces boneless chicken breasts (1 1/2 boneless breasts shredded)
1 (10 ounce) can red enchilada sauce (I used Old El Paso HOT enchilada sauce)
3/4 cup reduced-fat cheddar cheese (shredded, reserve 1/4 for topping)
1/2 cup colby-monterey jack cheese (shredded)
3 tablespoons goat cheese (soft)
1 (4 ounce) can green chilies (don't drain)
1/2 cup fat free sour cream
1/2 teaspoon kosher salt
1/4 teaspoon cracked black pepper

Steps:

  • Preheat oven to 350.
  • Cook chicken breasts on grill (outdoor or Foreman)- Let sit till it's cool enough to shred.
  • In a med size mixing bowl, Mix the shredded 1 1/2 to 2 chicken breasts and put in bowl with green chilies, goat cheese, cheddar, colby/jack, salt and pepper, and sour cream. Divvy up into 8 equal, separate piles. Set aside
  • Pour 3/4 cup enchilada sauce in bottom of 9x13 metal nonstick pan. Take 1 tortilla and dip one side (basically just lay it totally flat) in the sauce inside the pan. Spread 1 'pile' evenly down middle of tort and roll tightly, placing seem side down. Repeat with 7 remaining.
  • Pour remaining sauce evenly over top and finish with reserved 1/4 cup cheddar.
  • Bake in 375 preheated oven for 20-25 min or until sauce in bottom of pan is bubbling and the enchiladas are cooked through.
  • Garnish with sour cream and green onion if desired.

My sister Shawn is famous for these enchiladas, and her husband Rob makes the killer margaritas to match. My husband and I like them with Sangria. It's the ideal entree for dinner guests because it can be completely prepared in advance. You can substitute whatever meat you have...ground chicken or turkey, steak, shredded pork, Krab, etc. as well as any creamed soups. I was even out of sour cream and substituted fat free cottage cheese which worked fine. Be creative and please share your ideas here!

1 lb chicken breast
1/2 yellow onion
4 cups cheese, shredded (whatever kind you like, I usually used a reduced fat Mexican blend inside and pepper jack for the to)
1 (4 -8 ounce) can diced green chilies
2 (10 3/4 ounce) cans 98% fat-free cream of chicken soup
1 (16 ounce) package light sour cream
8 -10 flour tortillas
1 (1 1/4 ounce) package taco seasoning mix (HOT is best!)
1 tablespoon poultry seasoning (Paul Prudhomme's)

Steps:

  • Cook chicken with poultry seasoning.
  • Cool completely.
  • Shred chicken in food processor. (Steps #1-3 can be done the day before assembling enchiladas.).
  • Saute onion in a saucepan.
  • Add chicken, 1/2 of the green chilis and taco seasoning and cook for two minutes.
  • Remove from heat and add two cups cheese.
  • Prepare sauce in a medium bowl: combine soup, sour cream and the other half can of green chilis.
  • In a 9 x 13 pan, place 1 cup of sauce.
  • Place 1/8 to 1/10 of chicken mixture in each flour tortilla and roll up and place in pan with seams down.
  • Pour remaining sauce over enchiladas and sprinkle top with remaining two cups cheese. (Steps #1-10 can all be done in advance and keep pan in refrigerator ready to cook.).
  • Bake at 375 degrees for 20-25 minutes.
