Our garden produced an abundance of potatoes so we eat them often. This recipe is a refreshing change from fried or mashed potatoes. My children love the almond topping. It truly tastes as good as it looks.

1-1/2 pounds potatoes, peeled and quartered
1 small onion, chopped
2 tablespoons butter
2 eggs
3/4 cup heavy whipping cream, warmed
1/2 cup ground almonds
1/2 teaspoon salt
Dash ground nutmeg
1/2 cup shredded cheddar cheese
1/4 cup slivered almonds

Steps:

  • Cook potatoes in boiling water until tender, about 15 minutes; drain and place in a bowl. , In a skillet, saute onion in butter until tender; add to potatoes. On low speed, beat in eggs, one at a time, until smooth. Beat in cream (the mixture will be thin). Add the ground almonds, salt and nutmeg. , Spoon into a greased 1-1/2-qt. baking dish. Sprinkle with cheese and almonds. Bake, uncovered, at 400° for 20 minutes or until heated through.

6 Yukon Gold potatoes
3 tablespoons butter, or more to taste
3 tablespoons all-purpose flour
1 bay leaf
2 cups Almond Breeze Original OR any Almond Breeze Almond-Cashew Blend
1 clove garlic, sliced
1 teaspoon ground nutmeg
2 teaspoons fresh thyme leaves
½ cup grated Parmesan cheese
1 cup vegetable stock
Salt and pepper to taste
Cooking spray
1 cup shredded Cheddar cheese

Steps:

  • Thinly slice 6 Yukon potatoes (we used a mandoline for an even consistent cut).
  • In a saucepan, melt butter on medium heat. Add in flour and whisk until smooth. Add bay leaf and begin to add the Almond Breeze while constantly stirring with a whisk. Add garlic, nutmeg, and thyme. Mix in Parmesan cheese and vegetable stock and bring the mixture to a simmer to thicken. Salt and pepper to taste. Remove bay leaf and remove almond milk mixture from heat.
  • Preheat oven to 375 degrees F. Grease your casserole dish with a nonstick spray.
  • Lay half of the sliced potatoes on the bottom of the casserole dish. Pour half of the Almond Breeze mixture over the the potatoes. Repeat the process until you have a second layer. Spread the Cheddar on top and place casserole dish into the oven. Bake for 45 minutes or until potatoes are tender and fully cooked.

3/4 pound russet (baking) potatoes, peeled and cut into 1-inch pieces
1/2 cup sliced almonds
1/2 cup coarse fresh white bread crumbs
3 garlic cloves
1/2 cup water
3 to 4 teaspoons fresh lemon juice, divided
2/3 cup extra-virgin olive oil, warmed
Accompaniment: crackers

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Cover potatoes with water in a small pot and season well with salt, then simmer until tender, about 15 minutes.
  • While potatoes cook, toast almonds and bread crumbs separately in oven until pale golden, 8 to 10 minutes, then cool.
  • With motor running, drop garlic into a food processor and chop. Add nuts and bread crumbs and finely grind. Pulse in water, 3/4 teaspoon salt, and 1 tablespoon lemon juice.
  • Drain potatoes and coarsely mash with fork, then add to processor with oil and pulse to combine. Add lemon juice to taste and thin with a little water if desired.

Slow-roasting sweet potatoes in coconut oil and spices gives them a rich flavor and delicately crisp texture on their exterior while they turn velvety within. Don't be tempted to take them out of the oven early. As Steven D., a reader, wrote in the notes of the recipe upon which this one is based: "The potatoes are soft after a half hour or so, but then the crusts harden in the second half hour, giving them the delicious texture that makes the dish unique." Adding fried eggs, a smoky yogurt sauce and crunchy almonds turns a sweet potato side dish into a satisfying, meatless meal. And if you don't have coconut oil on hand, you can use olive or another cooking oil, though the potatoes won't have the same texture.

2 pounds sweet potatoes, peeled or unpeeled, and cut into 1/2-inch chunks
3/4 teaspoon fine sea or table salt, plus more as needed
3/4 teaspoon garam masala, Baharat, curry powder or another spice mix
1/2 teaspoon smoked paprika, plus more as needed
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper, plus more as needed
3 to 5 thyme sprigs
1/2 cup plain Greek yogurt
1 small garlic clove, finely grated, passed through a press or minced
Eggs, for frying, as many as you like
1/2 cup chopped Marcona or salted, roasted almonds
Soft herbs, such as parsley, mint or cilantro, for serving

Steps:

  • Heat oven to 350 degrees. Melt 2 tablespoons coconut oil in a small saucepan over low heat or in the microwave. In a large bowl, toss together sweet potatoes, melted coconut oil, salt, spice mix, smoked paprika, cumin, black pepper and thyme.
  • Spread the potatoes in an even layer on a large rimmed baking sheet.
  • Roast, stirring and flipping the potatoes occasionally, until soft and caramelized, about 1 hour.
  • As the potatoes roast, place yogurt in a small bowl. Stir in garlic, a large pinch or two of smoked paprika, and salt and black pepper to taste.
  • In a large skillet, add remaining 1 tablespoon of coconut oil over medium-high heat and let it heat up for 20 to 30 seconds. Crack eggs into skillet and season with salt. Cook until the whites have set with crispy edges and the yolks are still runny, about 2 to 3 minutes (or cook the eggs for a few minutes longer for a medium or firm yolk, if you prefer).
  • To serve, spoon sweet potatoes onto individual plates and top with yogurt sauce and almonds. Place eggs on top, and sprinkle with paprika and herbs. Serve immediately.

1/2 lb sugar (Personally, I'd use Stevia to flavor, but you wouldn't need much!)
8 ounces almonds
1 cup milk

Steps:

  • Cook the sweet potatoes (with peel) for 40 minutes on a medium flame. When they're ready, remove the pot from the flame, peel and press them using a strainer.
  • Put it in a pot and pour the milk. Mix it well. Cook on a low flame and add the sugar. (it will be 40 minutes, more or less).
  • When it's ready, remove from the flame and add the peeled almonds (ground, if you want), beating some minutes until the sweet potato and the almonds get well mixed.

20 cloves garlic, unpeeled
3/4 cup, plus 2 teaspoons, extra-virgin olive oil
4 Idaho potatoes (about 1 1/2 pounds), peeled and quartered
5 tablespoons slivered, toasted almonds (about 1 ounce)
6 tablespoons red-wine vinegar
2 tablespoons finely chopped parsley
Kosher salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 400 degrees. Place a large sheet of aluminum foil on the counter. Put the garlic cloves on the foil and drizzle with 2 teaspoons of oil. Toss to coat. Wrap the foil around the garlic and bake until the garlic is very soft, about 45 minutes. When cool enough to handle, squeeze out the garlic into a small bowl and set aside.
  • Place the potatoes in a medium-size pot and just cover with cold, salted water. Bring to a boil over high heat, then lower and simmer until very tender, about 17 minutes.
  • Drain the potatoes, transfer to a large bowl and set aside to cool.
  • Mash together the potatoes, garlic and almonds with a fork. Beat in the vinegar, parsley and the remaining 3/4cup oil until well mixed. Season with salt and pepper. Spread on bread or serve as a complement to roasted meats or fried fish.
