Steps:
- Slice the onions.
- Place a skillet over Medium heat on your stove top.
- Add the butter.
- Add the bacon grease.
- Add the onions. Stir and cook until slightly translucent, about 5 minutes.
- Wash and slice the yellow squash about ¼ inch thick.
- Add the squash to the skillet.
- Add the black pepper.
- Add the salt.
- Add the sugar.
- Stir gently to combine the ingredients.
- Cover the skillet. Reduce heat to Medium Low.
- Cook until squash are tender. About 10-15 minutes.
- Remove from heat. Serve warm.
- Enjoy!

- Preheat skillet over medium high heat. Add oil, then butter. When butter melts, add red peppers and squash. Saute 12 to 14 minutes until squash is tender. Add salt, pepper and parsley. Add chives or scallions if you would like a layer of light onion flavor on the dish as well.

- Rinse and dry squash
- Cut into ¼ inch slices; do not remove the skin; set aside
- Slice one medium - large onion; set aside
- Melt butter in skillet on medium heat
- Add sliced onion; cook for 2-3 minutes
- Add sliced squash and broth; combine
- Season with salt, pepper and sugar; cover and cook for 8-12 minutes or until it's semi-tender
- Serve with slotted spoon

YELLOW SQUASH WITH ONIONS AND PARMESAN
A simple, delicious vegetable recipe that tastes good with any grilled meat that was marinated in lemon juice. It can be done on your gas grill's side burner so you don't have to run back and forth. My family is perfectly happy with ordinary, yellow, cooking onions, but if you have Vidalias in season it will suit them very well.

- Melt butter over medium-high heat in a large, heavy skillet. (I prefer my cast iron chicken fryer).
- Sauté onions until about half-cooked if you are using fresh squash or 3/4 cooked if using frozen squash.
- Add squash and sauté until onions are finished (soft and well-browned), and squash is just barely cooked through and beginning to brown.
- Toss with parmesan. Pass pepper grinder at the table.

I hesitated to post this recipe because it is so simple. But I didn't see anything like it on recipezaar, so here it is. It uses up things that are often in abundance in the garden, and is really simple and quick...bringing out the best flavors of the vegetables.

- Wash and quarter the squash. Steam in a skillet or saucepan over water until al dente. (Time depends on the size of your squash -- usually about 4-5 minutes.).
- Heat the butter in a saucepan over medium-high heat. Saute the onions until translucent. Add the steamed squash and season with salt and pepper to taste.
SAUTéED YELLOW SQUASH WITH ONIONS
We enjoy this dish all year long and it goes well with any entrée! It is one of the ways my mother liked to prepare yellow squash for our family. The yellow color helps make a pretty plate. I have found that a combination of butter and olive oil is great for sautéing (Paula Deen agrees). Purchase small fresh squash.

- Cut squash into thin slices. Spread slices out onto paper towels. Salt and allow to "sweat". After 10 minutes blot with paper towel. Flip slices over and repeat with salt and blot after 10 minutes. This allows salt to flavor squash and releases water for better sautéing.
- In a 10 inch saucepan combine olive oil and butter. Lightly sauté onion first and set aside into small bowl.
- In same saucepan sauté squash on low heat until tender. Before removing from heat add sautéed onions and sprinkle with Lawry's seasoned salt, garlic powder and black pepper.
- Note: For best flavor use a sweet onion.

- Place oil in saute pan over medium heat.
- Add squash and onion.
- Cook and stir until crisp and tender for about 5 minutes.
- Sprinkle with whole oregano and a splash of white wine.
- Depending on how you like it, I use about half the amount of oil called for, 1/4 cup is too much for us.

- Wash and slice the squash into 1/4-inch slices discarding the stem and bud ends. Peel, half, and slice the onion into 1/4 slices.
- In a large skillet over medium heat, melt the bacon grease and add the onions. Cook for about 3 minutes. Add the squash and cook for 3 to 5 minutes. Add the chicken broth and cover. Cook for 5 to 8 minutes, stirring occasionally, or until the squash is cooked to your desired tenderness. Add salt and pepper to taste.
