Time 15m

Yield 4 servings

Number Of Ingredients 5

Kosher salt
3 large bunches spinach, washed and trimmed
3 cloves garlic, chopped
Extra-virgin olive oil, for sauteing and serving
Freshly ground black pepper

2 tablespoons olive oil
3 garlic cloves (minced)
salt and pepper (to taste)

  • Cover the pan for a minute to let it steam, then stir again. Repeat this process until the spinach is wilted down, about 5 minutes later.
  • Season with salt and pepper, then serve.

Time 10m

Yield 6 servings

Number Of Ingredients 8

1 1/2 pounds baby spinach leaves
2 tablespoons good olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter

This Sautéed Spinach with Garlic and Lemon is one of the quickest, easiest vegetable side dishes you'll ever make. A delicious way to boost your menu with fiber and nutrients.

Provided by Valerie Brunmeier

Categories     Side Dish     Vegetable

Time 10m

Number Of Ingredients 6

2 tablespoons extra virgin olive oil
2 teaspoons minced garlic
1 pound baby spinach
½ lemon (juiced)
salt and freshly ground black pepper (to taste)
crushed red pepper flakes (optional)

Steps:

  • Add the olive oil to a large, deep skillet and place over MEDIUM heat. Add the garlic and cook, stirring, for a minute or two or just until fragrant. Reduce heat a little, if needed, to avoid burning the garlic.
  • Add the spinach, a handful at a time, packing it down into the pan with your hand. It will be a great big mound but will cook down quickly. Use tongs to move the spinach around and toss it in the garlic olive oil. Cover the skillet briefly, 30 seconds or so, just until the spinach begins to cook down. Remove the cover and toss again. Remove from the heat just as soon as the spinach is mostly wilted. Pour off excess liquid from the bottom of the skillet, if needed. Season with salt and pepper, to taste and add the lemon juice. • You’ll need a large skillet with a lid. Spread the oil out to coat the bottom of the skillet (I use cast iron). Place the garlic in the skillet, spreading it into an even layer. Turn the heat up to medium and as soon as the oil starts to sizzle, turn it down to medium-low and let the garlic soften for 5 minutes or so, turning the heat down further if it looks like it starts to brown.
  • Add the spinach in a big heap. Pour in 1 tablespoon of water and cover the pot. Turn the heat up to medium and let the spinach steam for about 5 minutes, undisturbed. Remove the cover and gently stir the leaves, pressing down on any that aren’t wilted. Don’t toss the leaves because you want the garlic to remain in contact with the oil on the bottom of the pan so it will soften and get sweet and mellow.
  • Continue to cook the spinach, uncovered, for another few minutes, until the spinach is completely soft and wilted. Season with salt and pepper, to taste.

  • Finely dice or slice the garlic. Heat up a skillet or frying pan. Add some cooking spray or vegetable oil if you’re not using a non-stick pan.
  • Add the garlic to the pan, and saute for about 30 seconds. This helps remove some of the bitter taste from the garlic, and makes it milder and more pleasant to eat.

  • Wash the spinach by soaking in water to allow any remaining grains of soil to fall off the leaves. Pick the spinach up OUT of the water; if you dump out the water with the spinach, the soil will just end up back on the leaves. Rinse the leaves and set aside.
  • Add garlic and cook for about a minute, stirring frequently and keeping an eye on it to make sure it doesn't burn. If it starts to brown quickly, turn down the heat.
  • Fill the pan with as much spinach as it will hold (the remaining water on the leaves will cause the oil to pop if it's too hot; be prepared to cover the pan with a lid if needed), and stir gingerly (tongs help with this). As the spinach wilts and more space becomes available, add more spinach and stir until all of the spinach is in the pan.
