Garlic Sautéed Spinach image

A super quick side that's good for you and tastes fabulous. It always amazes me how much spinach wilts - so this is a great way to consume ALOT of good nutrition with just a few bites! A terrific side for meaty mains. Try a classic steakhouse dinner with Prime Rib or steak, Paris Mash and this Sautéed Spinach!

Categories     Side

Time 9m

Number Of Ingredients 4

2 bunches spinach ((Note 1))
1 tbsp olive oil
2 garlic cloves (, finely chopped)
Salt and pepper

Steps:

  • Trim the stem from the leaves, then wash the leaves very well (spinach often holds a lot of dirt).
  • Shake off excess water but do not dry (water droplets helps steam-cook the spinach).
  • Heat oil in a large skillet over medium high heat. Add garlic and cook for 20 seconds until it becomes light golden and smells amazing.
  • Add spinach, then use tongs or 2 wooden spoons to toss until the spinach wilts - about 2 minutes. I like mine just wilted.
  • Remove from heat immediately and sprinkle with salt and pepper and toss once more.
  • Transfer to serving platter and serve.

GARLIC SAUTEED SPINACH

Garlic Sauteed Spinach image

Dinner couldn't be simpler with Ina Garten's Garlic Sauteed Spinach recipe from Barefoot Contessa on Food Network. It's an easy, go-to side dish for your table.

Provided by Ina Garten

Categories     side-dish

Time 10m

Yield 6 servings

Number Of Ingredients 8

1 1/2 pounds baby spinach leaves
2 tablespoons good olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
Lemon
Sea or kosher salt, optional

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
  • In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

SAUTéED SPINACH WITH GARLIC AND LEMON

Sautéed Spinach with Garlic and Lemon image

This Sautéed Spinach with Garlic and Lemon is one of the quickest, easiest vegetable side dishes you'll ever make. A delicious way to boost your menu with fiber and nutrients.

Provided by Valerie Brunmeier

Categories     Side Dish     Vegetable

Time 10m

Number Of Ingredients 6

2 tablespoons extra virgin olive oil
2 teaspoons minced garlic
1 pound baby spinach
½ lemon (juiced)
salt and freshly ground black pepper (to taste)
crushed red pepper flakes (optional)

Steps:

  • Add the olive oil to a large, deep skillet and place over MEDIUM heat. Add the garlic and cook, stirring, for a minute or two or just until fragrant. Reduce heat a little, if needed, to avoid burning the garlic.
  • Add the spinach, a handful at a time, packing it down into the pan with your hand. It will be a great big mound but will cook down quickly. Use tongs to move the spinach around and toss it in the garlic olive oil. Cover the skillet briefly, 30 seconds or so, just until the spinach begins to cook down. Remove the cover and toss again. Remove from the heat just as soon as the spinach is mostly wilted. Pour off excess liquid from the bottom of the skillet, if needed. Season with salt and pepper, to taste and add the lemon juice. Toss well to combine. Sprinkle with a little crushed red pepper flakes, if desired, and serve immediately.

  • Wash the spinach by soaking in water to allow any remaining grains of soil to fall off the leaves. Pick the spinach up OUT of the water; if you dump out the water with the spinach, the soil will just end up back on the leaves. Rinse the leaves and set aside.
  • Add garlic and cook for about a minute, stirring frequently and keeping an eye on it to make sure it doesn't burn. If it starts to brown quickly, turn down the heat.

As the spinach wilts and more space becomes available, add more spinach and stir until all of the spinach is in the pan.
