ROASTED DILL SALMON

Roasted Dill Salmon image

This oven-roasted salmon is adapted from the cookbook "Bottom of the Pot: Persian Recipes and Stories" (Flatiron, 2018) by Naz Deravian. The dish comes from Ms. Deravian's stepmother, who likes to combine her native Japanese ingredients with Iranian ones like pomegranate molasses. Get a quick pot of rice started as the salmon marinates and you can have dinner prepped in less than 20 minutes. Serve with sheveed polo (Iranian dill rice) and make sure to drizzle plenty of the pan juices over the salmon and rice.

Provided by Naz Deravian

Categories     dinner, quick, seafood, main course

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 11

1 1/2 pounds skin-on, center-cut salmon fillet
1 1/4 teaspoons kosher salt
1/2 teaspoon black pepper
1/4 cup fresh lime juice or Seville orange juice, plus additional wedges, for serving
2 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons maple syrup
1 tablespoon dried dill or 3 tablespoons chopped fresh dill
1 large garlic clove, crushed
1/4 teaspoon ground turmeric
1/8 teaspoon ground saffron (optional)

Steps:

  • Heat the oven to 425 degrees with the rack in the center position. Choose a baking sheet or baking dish that fits the salmon snugly (so the juices don't disperse and burn) and line it with parchment paper. Place the salmon skin-side down on the baking sheet and season well with salt and pepper.
  • Combine the rest of the ingredients in a small bowl and spoon over the salmon. If you have time, flip the salmon and let marinate directly on the baking sheet, flesh-side down, for 15 minutes.
  • Roast the salmon skin-side down until cooked through to your liking, 9 to 12 minutes. Serve with extra lime or orange wedges, and drizzle the pan juices over the salmon and rice.

PESTO SALMON

Pesto Salmon image

Sheet pan pesto salmon with tomatoes is perfect for fast, healthy dinners. The salmon is tender and flaky and the pesto makes it taste fresh!

Provided by Erin Clarke / Well Plated

Categories     Dinner

Time 45m

Number Of Ingredients 8

4 (6-ounce) salmon fillets (skin on)
3/4 teaspoon kosher salt (divided, plus additional for serving)
1/2 teaspoon ground black pepper (divided)
6 tablespoons DeLallo Simply Pesto Traditional Basil (divided)
2 pints cherry or grape tomatoes (left whole)
1 small red onion (thinly sliced)
Squeeze of fresh lemon juice (for serving)
Chopped fresh basil (optional for serving)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 400 degrees F. Generously coat a large rimmed baking sheet with nonstick spray.
  • Place the cherry tomatoes and red onion in a large bowl. Add 2 tablespoons pesto, 1/4 teaspoon kosher salt, and ¼ teaspoon black pepper. Toss to coat, then spread into a single layer on the prepared baking sheet.
  • Bake the tomatoes and onion for 10 minutes, then remove from the oven and with a spatula, stir them around a little to promote even cooking, then return to the oven for 10 additional minutes.
  • Meanwhile, pat the salmon fillets dry. Sprinkle with ½ teaspoon salt and 1/4 teaspoon black pepper. Spread 1 tablespoon of the remaining pesto over each fillet.
  • Rub the pesto on with your fingers or the back of a small spoon as needed. Make sure each fillet is completely covered in pesto.
  • Remove the sheet pan from the oven and move the tomatoes and onions to the outsides to make space for the salmon in the center. Arrange the salmon fillets down the center of the baking sheet, skin-side down.
  • Return the pan to the oven and bake the pesto salmon until the fish flakes easily with a fork and reaches an internal temperature of 145 degrees F, about 16 to 20 minutes.*
  • Sprinkle the salmon with a pinch of additional kosher salt and squeeze lemon over the top. Top with fresh basil as desired. Enjoy!

1/2 cupdill lemon pesto
1 to 2 tablespoons hot water

Steps:

PAN SEARED SALMON WITH LEMON BASIL PESTO

Pan Seared Salmon With Lemon Basil Pesto image

This is a salmon fillet served with a fresh pesto on top. You could use a store-bought pesto if you like, but homemade is so much better and so easy to do.

Provided by threeovens

Categories     Very Low Carbs

Time 20m

Yield 2 fillets, 2 serving(s)

Number Of Ingredients 10

1/4 cup pine nuts, lightly toasted
1 cup fresh basil leaf, packed
2 garlic cloves, minced
1/4 cup olive oil
1/4 cup parmesan cheese, freshly grated
1 pinch crushed red pepper flakes (I use a generous pinch)
1 tablespoon fresh lemon juice
kosher salt & freshly ground black pepper
12 ounces salmon fillets (2, 6-oz each)
cooking spray

Steps:

  • Heat a dry skillet, over medium heat, and lightly toast pine nuts (gently toss and shake pan occasionally); then place in a food processor.
  • To the food processor, add basil and garlic; pulse just to combine.
  • With processor running, drizzle in olive oil, and process, scraping down sides once or twice with a rubber spatula, to desired consistency (I like it sort of chunky).
  • Add in Parmesan cheese, red pepper flakes, lemon juice, and salt and pepper to taste; pulse to combine; set aside.
  • Wipe the salmon dry with paper towels (to allow a nice sear), then season lightly with salt and pepper.
  • Heat the skillet, over medium-high heat, then spray with cooking spray.
  • Cook salmon about 4 minutes per side or to desired doneness (I like it a little pinkish in the center since it will continue cooking a little when removed from the pan).
  • Serve salmon with pesto spooned over top.
  • Can also be served at room temperature.

SALMON WITH LEMON AND DILL

Salmon with Lemon and Dill image

This is a wonderful (and easy) recipe I got from my Aunt. The flavors of lemon and dill really complement the fish. I like to use wild Alaskan salmon for this recipe, but any salmon will work. I usually don't measure, so these are all estimates. Play with the ingredients to suit your own tastes!

  • While the oven preheats, in a shallow dish stir together 4 cups room temperature water and 3 tablespoons kosher salt until it dissolves. Place the salmon in the water and wait for 15 minutes (this should be about the time it takes to preheat).
  • Rub the bottom of a baking dish with olive oil. Pat each piece of salmon dry and place it on the pan. Sprinkle the salmon with 1/8 teaspoon kosher salt for each of the 4 fillets and fresh ground pepper. Cover pan with foil and bake the salmon for 10 minutes. Then remove the foil bake again for 3 to 6 minutes, depending on thickness, until just tender and pink at the center (the internal temperature should be between 125 to 130 degrees Fahrenheit in the center). A 1-inch thick fillet should cook in about 15 minutes total.
  • When the salmon is done, spoon the pesto over the salmon. Sprinkle it with chopped pine nuts and if desired, a bit of lemon zest. Serve immediately. (Leftovers can be stored refrigerated for 3 to 4 days.)

  • Preheat the oven to broil with a rack at the very top. If you know your oven broils very hot, as some do, lower the rack one notch. Line a baking tray with parchment paper.
  • Place the sunflower seeds, basil leaves, dill, olive oil, lemon juice, green onion and garlic in a small blender. ( A Magic Bullet works great.) Blend until everything is smooth and creamy. Pour the pesto into a small bowl and stir though the mayo. Season to taste with sea salt. If you’d like, you can thin the pesto with a little water to make it more drizzle-able.
  • Lay the broccoli on the prepared baking sheet. Drizzle with the oil and sprinkle over the sea salt and put it in your oven on the top rack. Let it roast for 10 minutes, or until it is dark and crispy. It will smell like it is burning a little, this is ok!
  • Heat the oil in a non-stick frying pan over medium-high heat. Season the skin of the salmon fillets with a little pinch of salt and pepper and put them in the pan, skin side down. Let them sear for 3 minutes, or until the skin has begun to get crispy.
