Sauteed Chicken Breast with Roasted Grapes and Onions image

Here, I've paired a savory grape compote with sauteed boneless, skinless chicken, which is low in saturated fat and an excellent source of protein. But it would also be a good match for pork tenderloin or chicken sausage. Leftover roasted grapes are tasty spooned onto rye crackers spread with goat cheese or ricotta -- lunch for the adult set.

1 pound mixed small red and green grapes (halved, if large)
1 small red onion, quartered lengthwise and cut crosswise into 1/4-inch pieces
4 sprigs fresh rosemary, plus extra, for garnish
2 teaspoons balsamic vinegar
2 tablespoons olive oil
Coarse salt and freshly ground black pepper
1 1/2 pounds boneless skinless chicken breasts
1/2 cup dry white wine
1 tablespoon unsalted butter, cold

Steps:

  • Preheat the oven to 450 degrees F. On a rimmed baking sheet, toss the grapes and onion with the rosemary sprigs, balsamic vinegar, 2 teaspoons oil, 1/8 teaspoon salt and 1/4 teaspoon pepper. Roast, turning once halfway through, 20 to 25 minutes.
  • Meanwhile, cut the chicken breasts in half horizontally. Put a piece of chicken between 2 sheets of plastic wrap and pound with the smooth side of a mallet until the chicken is 1/4- to 1/2-inch thick. Repeat with the remaining pieces of chicken. Sprinkle all the chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • In a large nonstick skillet, heat the remaining 4 teaspoons oil over medium-high heat. Cook the chicken until golden-brown and cooked through, 3 to 4 minutes per side. Remove and keep warm.
  • Add the wine to the skillet; cook over high heat until reduced by three-quarters, about 2 minutes. Remove from the heat and let cool 1 minute. Add the butter and swirl until the butter is melted, about 30 seconds. Spoon the sauce onto 4 plates and add the chicken, then top with roasted grapes and red onions. Garnish with additional rosemary and serve immediately.

1/4 cup all-purpose flour
4 boneless skinless chicken breast halves
4 tablespoons butter, divided
1 tablespoon shallot, minced
1 cup red seedless grapes, halved
1/4 cup dry fruity white wine
2 tablespoons heavy cream
1 teaspoon fresh tarragon, chopped

Steps:

  • Remove tenders from chicken breasts and save for another use.
  • Pound chicken breasts to 1/4 inch thickness.
  • Place flour in a dish.
  • Sprinkle chicken with salt and pepper; dredge in the flour to coat.
  • Melt 2 tablespoons butter in large skillet over medium high heat; add chicken and saute until cooked through, about 2 minutes per side.
  • Transfer to platter; tent with foil.
  • Melt remaining butter in same skillet over medium high heat; add shallots and grapes. Saute for 2 minutes.
  • Add wine; bring to a boil, stirring up any browned bits from the bottom of the pan and cook.
  • Add cream; bring to a simmer.
  • Stir in the tarragon and season with salt and pepper.
  • Spoon sauce over chicken and serve immediately.

Posting for Britain ZWT6. This was found on All British Food.com. Everyday chicken takes on a note of luxury, in this pretty dish with its garnish of seedless green grapes. The creamy sauce is well flavoured with lemon and herbs, and the recipe is ready in little more than 30 minutes from start to finish. I don't care for rosemary so thats why I added fresh herb of choice.

1 tablespoon butter
1 tablespoon vegetable oil
1 lb chicken breast (boneless, skinned)
1/2 cup chicken stock
1 lemon (lemon zest and juice of 1 lemon)
1 teaspoon fresh rosemary (or fresh herb of choice)
salt and pepper
5 fluid ounces half-and-half cream
8 ounces green grapes, halved and seedless

Steps:

  • Heat the butter and oil in a large frying pan, add the chicken and cook quickly until lightly browned on both sides.
  • Reduce the heat and add the stock, lemon rind and juice and rosemary. Season to taste, cover and simmer gently for about 10 minutes, until the chicken is tender.
  • Remove the chicken from the pan, cover and keep warm. Boil the cooking juices to reduce a little. Add the chicken, cream and grapes and heat through gently, then adjust seasoning.
  • Serve with noodles or boiled rice.

3/4 lb seedless black grapes or 1/4 lb red seedless grapes, stemmed
3/4 lb green seedless grape, stemmed
4 tablespoons unsalted butter (cold)
4 -6 boneless skinless chicken breast halves
kosher salt & freshly ground black pepper
1/4 cup fresh chives, minced for garnish

Steps:

  • Preheat oven to 375 degrees F and line a rimmed baking sheet with parchment paper.
  • Put half the grapes on the prepared pan and roast for an hour, turning halfway through (they will become wrinkled and golden).
  • Meanwhile, puree remaining grapes in a blender until smooth; strain out the liquid and discard skins.
  • In a large skillet, melt half the butter over medium high heat.
  • Season chicken with salt and pepper, then brown on both sides, reducing the heat, if necessary, to prevent burning, about 4 minutes per side.
  • Add grape puree and simmer until chicken is cooked through and the liquid is syrupy, about 5 minutes.
  • Remove chicken to a serving platter and keep warm.
  • Whisk remaining butter into liquid in skillet and cook about a minute; add roasted grapes and heat through.
  • Pour sauce over chicken; garnish with chives.

6 boneless skinless chicken breasts
1/4 cup butter
2 tablespoons dry vermouth
2 tablespoons fresh lemon juice
2 teaspoons grated lemon peel
3/4 cup whipping cream
1/2 cup chicken broth, low-salt
1/2 cup parmesan cheese, freshly grated
chopped fresh parsley
lemon wedge (optional)

Steps:

  • Using mallet, lightly pound chicken between sheets of plastic wrap to 1/2-inch thickness. Season chicken with salt & pepper.
  • Melt butter in heavy large skillet over medium-high heat. Add chicken to skillet and saute just until cooked through, about 3 minutes per side. Transfer chicken to platter; cover with foil and keep warm.
  • Pour butter from skillet. Add vermouth, lemon juice and lemon peel to same skillet; boil 1 minute, scraping up brown bits.
  • Add cream, broth and any juices accumulated from chicken; boil until reduced to sauce consistency, about 8 minutes.
  • Mix in 1/4 cup Parmesan. Season sauce with salt and pepper.
  • Pour sauce around chicken. Sprinkle with remaining Parmesan and parsley. Garnish with lemon if desired.

3 teaspoons chopped fresh tarragon
3 tablespoons butter
1 shallot, chopped
2/3 cup small red seedless grapes
1/2 cup dry white wine
1/2 cup whipping cream

Steps:

  • Place chicken breasts between wax paper and pound to even 1/2 inch thickness.
  • Peel off paper adnd sprinkle with 1 teaspoon of tarragon and salt and pepper to taste.
  • Melt butter in skillet over medium-high heat.
  • Add chicken and saute until brown and cooked through, about 4 minutes on each side.
  • Transfer to plate and keep warm.
  • Add shallot and remaining tarragon to drippings in skillet.
  • Saute over medium-high heat until shallot begins to soften, about 2 mintues.
  • Add grapes, wine and cream and bring to a boil until sauce thickens enough to coat spoon, about 5 minutes.
  • Spoon sauce over chicken and enjoy.

One of my all-time favourites from my mom's cookbook. Easy to prepare and great to freeze. Not an award-winning health recipe but sometimes you need something that's not P.C. Best served with rice.

2 lbs boneless skinless chicken breasts
1/2 cup all-purpose flour
1 cup chicken broth
1 -2 cup grapes, sliced in half (I prefer red but any color will do)
1 1/2 cups whipping cream
2 ounces red port wine (vintage character or LBV, not tawny unless you like it sweeter)
1/4 cup cooking oil

Steps:

  • Cut chicken breasts into bite sized chunks.
  • Cut grapes into halves.
  • Whip cream lightly, until fluffy but still liquid (well aerated I call it).
  • Place a large, deep skillet over high heat (I use a 5.5L (1.5 gal) skillet).
  • Add cooking oil to skillet.
  • Pour flour into a mixing bowl.
  • Add chicken pieces to mixing bowl and hand toss until well covered in flour - make sure you do this just before cooking, otherwise the flower makes a great glue :).
  • Pour the chicken into a strainer and toss to get rid of excess flour.
  • Brown chicken in skillet on high heat until golden on all sides (10 min) stirring continuously.
  • Add boiling chicken broth to skillet, leaving the heat on high for rapid boiling.
  • Reduce broth until there's no more than a covering on the chicken (5 min).
  • Reduce heat to medium.
  • Add whipped cream and port wine, stir until well mixed.
  • Bring to a boil and let simmer for 5-10 min, stirring occasionally.
  • Add the grapes for the last 2 minutes.
  • Serve over rice.
