ROASTED APPLE PIES WITH WHIPPED CREAM

- Special equipment: a 3-inch round cookie cutter
- Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with a silpat or parchment paper sprayed with vegetable cooking spray.
- Unroll the pie crust out on a work surface. Using a 3-inch round cookie cutter, cut out 8 disks of pastry. Arrange the pastry disks on the prepared baking sheet. Using the tines of a fork, prick the pastry all over. Bake until brown and crispy, 8 to 10 minutes. Remove to a wire rack to cool completely, about 10 minutes.
- Slice the bottom of the apples to create an even surface for cutting. Slice each apple into 6 (1/2-inch) slices. Cut each apple slice in half and remove any seeds or pieces of core. In a medium bowl, mix together the sugar and 1 tablespoon cinnamon. Add the apple slices and toss until coated. Shake off any excess mixture. Arrange the apple slices on the same baking sheet in a single layer. Bake until dark brown, about 12 to 15 minutes. Remove from the oven and let cool for 15 minutes.
- In a medium bowl, using an electric hand mixer, beat the cream until thick, about 1 minute. Add the powdered sugar and continue to beat until the cream is very thick.
- To assemble the pies: Place the pastry disks on a work surface. Divide the cooked apple slices among 4 of the disks. Dollop about 2 tablespoons of the cream on top of the apples and cover with the remaining disks.
- Transfer the apple pies to dessert plates, dust with cinnamon and serve immediately.
LEMON MASCARPONE CREAM PIE

- Grease an 8 or 9 inch pie pan and preheat oven to 325°F (163°C). 2
- . Combine graham cracker crumbs, sugar and melted butter in a medium bowl and mix until combined.
- . Press the crumb mixture evenly into the bottom and up the sides of the pie pan, then bake for 8-10 minutes. Set aside to cool.
- . In a medium bowl combine the sweetened condensed milk, lemon juice and lemon zest then set aside.
- . In another large bowl, add the heavy whipping cream and powdered sugar. Whip on high speed until very stiff peaks form.
- . Add the mascarpone cheese to the whipped cream and whip on medium speed just until combined, then continue gently folding together until well combined.
- . Add about 1/3 of the lemon mixture to the whipped cream and gently fold to combine.
- . Add the remaining lemon mixture and gently fold to combine.
- . Add a little yellow icing color or food coloring, if desired.
- 0. Add the filling mixture to the cooled pie crust and refrigerate until firm, 4-5 hours.
- 1. To make the lemon whipped cream, add all four ingredients to a mixer bowl and whip until stiff peaks form.
- 2. Top the pie with some lemon slices and mint leaves and pipe swirls of whipped cream around the edge.
- 3. Refrigerate until ready to serve.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch springform pan with parchment paper or grease with butter.
- Combine graham cracker crumbs and butter in a large bowl to create a grainy mixture. Reserve 1/4 cup and distribute remaining crust evenly onto the base of the prepared springform pan. Set aside.
- Combine apple slices, brown sugar, cinnamon, and nutmeg in a bowl and toss to coat. Set aside.
- Combine cream cheese, mascarpone cheese, sugar, and vanilla extract in a large bowl and mix using an electric mixer. Add eggs 1 at a time. Beat until well integrated, 2 to 3 minutes. Pour filling into the crust-lined pan and smooth using a spatula.
- Arrange apple slices on top of filling in a circular "deck of cards" arrangement. Sprinkle reserved crust mixture on top.

- Combine all crust ingredients and press on bottom and sides of greased 9-inch pie plate.
- Bake crust 10 minutes at 350 degrees, and cool on rack.
- For filling, melt 2 T butter over medium heat in large skillet; stir in brown sugar, lemon juice, and cinnamon.
- Stir in apples and cook uncovered over medium heat for 25 minutes (or until apples are very tender), stirring occasionally.
- When finished cooking apple mixture, cool 15 minutes.
- Meanwhile, beat cheese, sugar, and amaretto with electric mixer on medium speed for 30 seconds, until light and fluffy.
- In separate bowl beat whipping cream until soft peaks form, and beat into cheese mixture on low speed until combined.
- Alternate layers of apple and cheese mixtures in crust, making four layers and ending with the cheese mixture.

- CRUST:.
- In a large bowl, combine the flour, sugar, and salt. Using a pastry cutter, cut in the butter and shortening. Drizzle the water and vinegar into the flour mixture and combine with hands until a dough is formed. Divide dough in half and shape into a flat disc. Refrigerate for 2-3 hours.
- Preheat oven to 450 degrees. When ready to bake, roll out one dough and line 9" pie plate. For this particular pie, Line with foil and add pie weights. Bake for 15 minutes. Remove from oven; remove foil and weights. Reduce oven temperature to 375 and bake for about 10 minutes. Remove from oven and let cool.
- APPLE-MASCARPONE FILLING:.
- Peel, core, and slice apples. Place apples in large bowl and drizzle lemon juice over apples. In a large saucepan, over medium heat, stir the apples, sugar, cornstarch, salt, and cinnamon. Cook until apples are just slightly soft and juices have thickened. Remove from heat and stir in vanilla extract and almond extract. Set aside. In a large bowl, whisk the egg, cream, and mascarpone. Mix until smooth and well combined. Set aside.
- ALMOND TOPPING:.
- In a medium bowl, combine the marzipan, flour, and butter. Add almonds; combine until topping is crumbly. Set aside.
- TO BAKE PIE:.
- Preheat oven to 375 degrees.
- Spoon apples into partially baked pie crust- lined pie plate. Pour mascarpone cream filling over apples. Tent loosely and bake for 25-30 minutes until filling is almost set. Remove from oven and sprinkle marzipan topping. Return to oven and bake for an additional 10-12 minutes, until topping is lightly browned. Let sit for 3-4 hours before slicing.
TOM'S MOM'S APPLE PIE

- For the pie crust: Place the flour, granulated sugar and salt in a food processor. Pulse once or twice to evenly incorporate. Add the butter and lard and pulse until the fat is broken down into pea-size pieces, 5 to 6 pulses. Add the cider vinegar and 1 tablespoon of the cold water and pulse to combine. Continue adding a tablespoon of water at a time and pulsing after each addition until the dough just comes together (you may not need the full 1/3 cup water). Remove the dough from the food processor and form a third of the dough (about 9 ounces) into a disk. Form the remaining two-thirds of the dough (about 1 pound) into another disk. Wrap the disks in plastic wrap and refrigerate at least 2 hours or up to overnight.
- Position an oven rack in the lower third of the oven and preheat to 425 degrees F.
- Remove the dough disks from the refrigerator and let sit at room temperature for 10 to 20 minutes to take the chill off.
- For the filling: Combine the brown sugar, granulated sugar, cornstarch, cinnamon, salt, ginger and nutmeg in a small bowl. Set aside.
- Put the apple slices in a large bowl and stir in the sugar mixture and orange juice. Mix to combine.
- Dust a clean work surface with flour and roll out the larger disk of dough into a 13-inch round. Transfer to a 10-inch pie dish. Pour the apple filling into the shell and then evenly distribute the butter pieces over the apples. Roll out the second disk of dough into an approximately 11-by-10-inch rectangle. Cut the dough into six strips, about 11 inches long by 1 1/4 inches thick.
- Form a lattice top by laying 3 parallel dough strips vertically across the pie. Fold the middle strip of dough in half back over itself and lay one piece of dough horizontally across the middle of the pie, perpendicular to the other dough strips. Fold the original strip of dough back down. Next, lift the other two strips of dough and fold them back over themselves. Lay another strip of dough perpendicular to the folded-over dough pieces. Fold those pieces back down and repeat on the other side with the remaining piece of dough. Trim the dough around the edges of the pie dish so there is no more than a 1/2-inch overhang.
- Fold the bottom crust up and over the edges of the lattice top and crimp the edges together between your forefingers and thumbs. Place the pie on a baking sheet and transfer to the oven. Bake for 20 minutes. Remove the pie from the oven and cover the edges with foil or a pie crust shield. Return to the oven and continue to bake until the filling begins to bubble, another 35 to 40 minutes. Let cool at least 1 hour.
- For the mascarpone whipped cream: Combine the mascarpone, cream and confectioners' sugar in the bowl of a stand mixer fitted with a whisk attachment. Beat on high speed until the mixture forms soft peaks and is thick. Serve immediately or store in the refrigerator until ready to serve. (This can be made the day before.)
- Cut the pie into slices and top with the mascarpone whipped cream.

- 1. For Filling: 1- Heat medium sauce pan over medium heat. 2- Once pan is hot melt butter completely in pan. 3- Add apples and coat with butter 4- Add pinch of salt 5- Add cinnamon, stir. 6- Apples will begin to sweat out their juice, in a measuring cup pour 1 1/2 cups of the reduced liquid out and set aside for later. 7- Add vanilla and lemon juice and stir. 8- Add 1 cup sugar, stir once then allow apples to sweat on medium heat. Stir occasionally until apples are tender. 9- Take mascarpone out of fridge and let it come to room temperature. Do not add to apples, set aside for later use.
- 2. Drizzle Preparation: 1-Heat medium sauce pan to medium heat. 2-Add reduced liquid and heat back through. 3-Add 1 cup sugar, stir once. 4-Bring heat to medium high and let simmer uncovered for 10-15 minutes. Do not set to high or let go to a rolling- boil, you will burn your sugar. (YUCK!) 5-Lower heat and add butter, stir and take off heat. 6-Allow caramel to thicken as it cools. 7-Use immediately (do budget your time for this) Side note: Never over stir a caramel. The sugar will crystallize, and you'll lose the creamy texture you are shooting for.
- 3. Assembly!!! 1-Preheat oven to 350'F 2- Flour a clean counter top or board. Roll out puff pastry and cut into 6 inch squares. 3- Spoon a tablespoon of mascarpone in the center of each pastry square. 4-Spoon 1 1/2 tablespoons of cooked apples onto each pastry square. 5-wet the edges of each pastry square with warm water and fold over and press edges together. 6-Use fork to seal edges securely. 7-take a sharp knife and cut two vent holes in each pastry, not too deep, just pierce the surface. 8-Lay out pastries onto cookie sheet. 9-Bake for about 40 minutes, or until golden. 10-Drizzle caramel across the top of each pastry for garnish!
