Steps:
- Place a large skillet filled with 2 inches of water over high heat; cover and bring to a boil.
- Whisk the first four ingredients together in a small bowl to make a vinaigrette.
- Cut four 10x12 inch pieces of aluminum foil.
- Place 1/2 cup corn and 1/2 cup edamame in the center of each piece of foil.
- Top each pile of corn and edamame with 5 shrimp.
- Drizzle shrimp with vinaigrette and top with scallions.
- Season with salt and pepper.
- Fold up each piece of foil to form a packet, making sure to seal.
- Place packets in a bamboo steamer and set steamer in skillet with the boiling water.
- Reduce the heat to low, cover, and steam for 13 minutes or until shrimp are thoroughly cooked. (Rotate packets halfway through cooking time.).
- Carefully open packets to release steam.
- Sprinkle with basil and serve.

LIANG MU DI (CHINESE STIR-FRIED CORN AND EDAMAME)
The name of this dish means "two plots of land", and evokes the image of a field of corn and a field of soybeans growing side by side. Growing up in Iowa, this was the reality of the landscape around me, but it wasn't until I moved to China that I encountered this simple vegetable dish that brings the two together. This is standard fare in the parts of China where I've lived. Steps:
- If using fresh corn and edamame, parboil for a couple of minutes. Drain water.
- If using frozen, and cooking in a western kitchen, I recommend thawing the corn and edamame before stir-frying. Outside of China, I don't find burners with enough heat to stir-fry something that's frozen. (Even in Chinese homes, where the gas flame typically wraps half-way up the side of the wok, people say they can't get good results like the restaurants do because their burners aren't hot enough. If there's no danger of setting your sleeve on fire or singeing the hair on the back of your hand, stir-fry conditions are less than ideal.).
- Wash and dice bell pepper.
- Heat wok over highest heat until smoking.
- Add oil and swirl in pan to coat pan and heat oil.
- Throw in bell pepper and stir fry briefly.
- Add corn and edamame. Stir to coat with oil.
- Add salt and pepper and stir.
- Add chicken broth, if using, pouring along the side of the wok, so that it heats as it goes inches.
- Stir-fry until vegetables are heated through.
- Serve as part of a Chinese meal with rice, soup, and other dishes.
STEAMED SHRIMP OR SHRIMP COCKTAIL
A beginner's recipe! If you are just starting to cook and seafood befuddles you, here is a great place to start! You can eat these hot or, you can shock them in ice water and eat them with sauce (see my shrimp sauce recipe) as tasty shrimp cocktail. It is a very basic recipe.

- Pour all ingredients (except shrimp) into a large saucepan. Make sure to first squeeze the juice from the lemons into the mix and then throw the rinds right in there too.
- Bring the liquid to a rolling boil over high heat. Dump in the shrimp and cover the pan with a tight lid.
- After the shrimp have again begun to boil, allow them to go for two minutes, then, stir the shrimp briefly and replace the lid. Boil for three more minutes (shrimp should boil for five minutes, all total).
- Drain and place the shrimp into a large bowl of ice water if you want shrimp cocktail (or just serve them hot).
- If serving as shrimp cocktail, you can go ahead and peel the shrimp after they're cold, or, you can let your guests do it themselves at the table.
- Note: If you overcook shrimp, you will make them rubbery.

- Cook rice, according to package instructions. Meanwhile, in a large nonstick skillet, heat oil over medium-high. Add shrimp and garlic and cook, stirring occasionally, 4 minutes. Add edamame and scallion whites and cook until shrimp are opaque and garlic is golden, about 3 minutes. Add scallion greens and lime juice and cook 1 minute. Season to taste with salt and pepper; serve with rice and lime wedges, if desired.

SHRIMP AND EDAMAME DUMPLINGS
I love dumplings. This meat-free version is very tasty. You can add a drop or two of half and half to the food processor with the edamame, if you have some, or one tablespoon of olive oil to make the mix a bit creamier. Substitute different fillings if you like. I've used ground pork instead of shrimp and edamame, and I recently made an all-veggie version with edamame, spinach, bok choy and mushrooms. Soooooo goooooood. If you use pork or other meat, you may need to increase the steam time (after you add the water to the pan) and additional minute or two. Shrimp cooks faster than meat!

- Place a steamer insert into a saucepan and fill with water to just below the bottom of the insert. Bring the water to a boil. Add the edamame, place a cover on the saucepan, and steam until just tender, 2 to 6.
- Place steamed edamame in a food processor; blend until smooth. Transfer edamame puree to a large bowl.
- Stir the shrimp, bok choy, egg white, ginger, soy sauce, 1 tablespoon sesame oil, garlic, and salt into the edamame puree.
- Pour about 2 tablespoons water in a dish.
- Scoop about 1 teaspoon of the shrimp mixture onto the center of a dumpling wrapper.
- Wet the edge of the wrapper with water, then fold over to create a half-moon shape; pinch edge to seal.
- Place the finished dumpling on a lightly floured baking sheet and cover with a damp towel; repeat with remaining wrappers.
- Working in batches of 6 to 8 dumplings, heat about 1 tablespoon peanut oil in a large skillet over medium heat. Pan-fry dumplings until crispy on one side, about 2 minutes.
- Flip dumplings and cook for 1 more minute. Add 1/4 cup water to the skillet and cover.
- Steam dumplings until shrimp are bright pink and no longer transparent in the center, about 4 minutes more. Repeat with remaining dumplings.
- For the dipping sauce: Whisk low-sodium soy sauce, sesame oil, green onion, sugar, rice vinegar, and red pepper flakes together in a shallow bowl until sugar has dissolved.

- Combine wine, ginger, onions, soy sauce and sesame oil in a medium bowl.
- Add shrimp; toss to coat.
- Cover; refrigerate 30 minutes.
- Heat 1 inch of water to boil in a large pot.
- Line steamer tray with blanched cabbage leaves.
- Arrange shrimp on top, letting marinade cling to them.
- Carefully lower steamer tray over boiling water; cover.
- Steam 3-5 minutes, depending on size.
- Heat broth and cilantro to boil in a small saucepan.
- Place shrimp in serving bowl.
- Pour hot broth over shrimp.
- *Toblanch cabbage leaves, drop in boiling water for about 10 seconds, then rinse under cold water.
- Drain on paper towels.

SHRIMP WITH CREAMED CORN AND FETA
Fresh summer corn kernels, simmered with feta cheese and a little cream, make a buttery bed for shrimp sautéed in a tomato and bell pepper sauce. Think of it as a lighter, sweeter and wholly inauthentic take on shrimp and grits. If you crave this out of corn season, feel free to use frozen kernels instead.

- In a large bowl, toss shrimp with salt and garlic and let rest in the refrigerator until needed (up to 2 hours).
- In a medium saucepan, melt 1 tablespoon butter with the cream over medium heat. Add corn, cover, reduce heat to medium-low, and cook, stirring once or twice, until the corn is very soft, 10 to 15 minutes. If all the moisture evaporates before the corn is soft, add a few teaspoons water to the pan.
- Using an immersion blender or regular blender, blend corn mixture until you get a chunky purée. Mix in feta, black pepper and salt to taste. Cover and keep warm until needed.
- In a large skillet, heat oil over medium-high heat. Add onion and pepper and sauté until pale golden and soft, 7 minutes. Add tomatoes, a large pinch of salt, and a tablespoon or two of water if the pan looks dry, and sauté until the tomatoes break down and turn saucelike, about 8 minutes.
- Add shrimp, lemon juice and Worcestershire and hot sauces. Sauté until the shrimp are pink and cooked through, 2 to 4 minutes. Stir remaining butter into pan and add more salt, if needed.
- Serve corn topped with shrimp and plenty of crumbled feta. Garnish with cilantro and basil.

- In a medium mixing bowl whisk together the fresh lime juice, low sodium soy sauce, red chili garlic sauce and vegetable broth. Set aside.
- In a large skillet heat the 2 Tablespoons olive oil over medium high heat. Add the ginger and garlic and sauté for 2 minutes, until the garlic is fragrant.
- Add the shrimp and cook for 3 minutes, until the shrimp turn pink. Set the shrimp aside in a bowl leaving the leftover oil in the skillet.
- In the same skillet add an additional 1 Tablespoon of olive oil over to the skillet and heat over medium high heat. Add the bell pepper and green beans and sauté for 3 minutes. Add the edamame and sugar snap peas. Continue to sauté until the vegetables are cooked, but still crisp, about 3 minutes.
