This Stir Fry Pork with Snow Peas and Mushrooms is easy to make and makes a tasty entrée. Marinated sliced pork, stir fried with a mix of snow peas and button mushrooms - what's not to like!

Number Of Ingredients 7

1 lb pork, thinly sliced (you can buy pork and do this yourself, or you can also often find pre-sliced pork in the hot pot section of Asian supermarkets)
3 tbsp soy sauce
2 tsp cornstarch
1 tbsp sesame oil
3 cloves of garlic, chopped
2 cups sliced mushrooms
1 cup snow peas

Steps:

  • Combine pork and marinade/sauce ingredients (soy sauce, cornstarch, sesame oil) in a large bowl or zip lock bag. If you are about to cook it, let it marinade at the very least 15-30 minutes. If you are making this ahead, cover and refrigerate for 30 minutes before cooking.
  • In a large nonstick cooking pan or wok, heat cooking oil over medium-high heat. When the oil is hot, add garlic, and let it heat up for about half a minute.
  • Then add the pork, and stir fry until mostly browned. Remove pork and garlic from pan.
  • Add snow peas and mushrooms in to cooking pan. Stir fry everything together for about another 2-3 minutes.
  • Add the pork and garlic from earlier back in to pan, and stir fry another 1-2 minutes or until pork is cooked thoroughly and the veggies have softened (but not soggy! It's yummier when there's still a little crunch to it).
  • Remove from heat and serve!

Steps:

  • Heat oil in wok or large skillet on high heat. Add meat; stir-fry 1 min.
  • Add next 5 ingredients; stir-fry on medium-high heat 3 to 5 min. or until meat is lightly browned. Add dressing and soy sauce; stir-fry 2 min. or until meat is done and vegetables are crisp-tender.
  • Top with nuts and onions. Serve over rice.

1 tablespoon grated fresh ginger
2 tablespoons soya sauce
1 tablespoon sherry wine (don't use cooking sherry)
1 lb pork fillet, thinly sliced
2 tablespoons peanut oil
3/4 lb button mushroom, quartered
1/2 lb snow peas, trimmed
1/2 small red cabbage, trimmed & shredded (about 1 lb)
2 tablespoons water

Steps:

  • Mix the ginger, soya sauce and sherry in a medium bowl.
  • Add the pork to the bowl and stir to completely coat the pork.
  • Cover the bowl with plastic wrap and refrigerate for at least one hour to marinade the pork.
  • Heat 2 teaspoons oil in a wok over high heat until hot, add half the pork and stir fry for several minutes until the pork is tender.
  • Remove pork from wok and set aside.
  • Repeat using another 2 teaspoons oil and remaining pork.
  • Remove pork from wok and set aside.
  • Heat the remaining oil in the wok and add the mushrooms, snow peas and red cabbage and stir fry for several minutes.
  • Add the water, cover and cook until the vegetables are just tender.
  • Add the pork to the wok and stir fry for several minutes or until heated through.
  • Serve with steamed or fried rice.

1 pound snap peas, ends snapped and veiny strings removed, rinsed and drained
1 tablespoon minced garlic
2 tablespoons rice wine or sake
1/2 teaspoon salt, or to taste
1/2 pound shiitake mushrooms, stems trimmed and lightly rinsed
1/2 pound oyster mushrooms, stems trimmed and lightly rinsed (If unavailable, substitute shiitake mushrooms.)
1/2 pound cremini mushrooms, stems trimmed and lightly rinsed
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
3 1/2 tablespoons good quality oyster sauce
1 1/2 tablespoons rice wine or sake
1 1/4 teaspoons sugar
1/2 teaspoon toasted sesame oil
1/2 cup chicken broth or water
1 teaspoon cornstarch
2 1/2 teaspoons canola or corn oil

Steps:

  • With a sharp knife, cut the mushrooms on the diagonal into quarters, depending on the size. Prepare the seasonings and set by the stove.
  • Heat a wok or a heavy skillet until very hot, add 1 teaspoon of oil and heat until hot. Add the snap peas, minced garlic, rice wine or sake, and salt, and toss lightly over high heat for about 1 1/2 minutes until the peas are just tender (snow peas will take slightly less time.) Remove from the pan and arrange around the outside of the serving plate.
  • Reheat the pan and the remaining oil until very hot. Add the Seasonings and stir-fry about 10 seconds until fragrant. Add the mushrooms and toss lightly with a spatula or shovel over high heat for about 1 minute. Add the sauce and toss lightly to thicken, stirring constantly to prevent lumps. Arrange the mushrooms inside the snow peas on the serving platter. Serve immediately.

I have always had an aversion to the stir-fry. For me it has seemed a technique that sounds easier than it is. Everyone is always impressed that a stir-fried dish takes so little time to cook, but I saw endless chopping followed by frenzied last-minute activity at the stove that I felt unsuited for. I am a clumsy person, and there simply isn't a wok large enough for me to do a stir-fry and not end up with half the ingredients over all the burners. The recipe that won me over was this pork and mushroom dish. Marinating the pork keeps it wonderfully tender and makes the dish deeply flavorsome. And slicing mushrooms is never an effortful activity. Many Chinese cooks add a cornstarch paste at the end of cooking to create a binding sauce, but I love this one starch-free and light. You get depth but sprightliness.

1 pound pork tenderloin
1/4 cup oyster sauce
2 tablespoons plus 1/4 cup dry sherry or Chinese cooking wine
2 teaspoons sesame oil
1 clove garlic, minced
1/8 teaspoon hot red pepper flakes
1 1/2 teaspoons corn or canola oil
4 scallions, trimmed, halved lengthwise and cut into 2-inch pieces
1 cup baby corn, each cob halved crosswise
1 1/2 cups sugar snap peas
2 cups sliced bok choy
1 cup sliced oyster mushrooms
1 cup sliced shiitake mushrooms
3 cups bean sprouts
2 tablespoons finely chopped cilantro

Steps:

  • Slice pork into strips about 2 inches long, 1 inch wide and 1/4 inch thick. Place in a bowl or sealable plastic bag, and add oyster sauce, 2 tablespoons sherry, sesame oil, garlic and red pepper flakes. Stir to coat well. Cover or seal, and allow to marinate at room temperature for 3 hours, or in refrigerator up to 24 hours.
  • Place a large wok or skillet over high heat, and add oil. Allow pan to heat for 1 to 2 minutes, then add pork and marinade. Toss meat until seared and no longer pink. Add scallions, corn and sugar snaps. Stir until sugar snaps turn bright green, about 1 minute.
  • Add bok choy and mushrooms, and stir constantly for about 1 minute. Add bean sprouts and remaining 1/4 cup sherry. Continue to stir until wine is almost evaporated. Transfer to a large platter, sprinkle with cilantro, and serve immediately.

  • Heat a wok or large nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately. Add 1 1/2 tablespoons peanut oil, swirling wok to coat evenly, then stir-fry 1 teaspoon ginger, 1 teaspoon garlic, and 1/4 teaspoon pepper flakes until fragrant, about 5 seconds. Add bell pepper and stir-fry 2 minutes. Add snow peas and cashews and stir-fry until snow peas are crisp-tender, 1 to 2 minutes. Transfer vegetables to a bowl.
  • Heat remaining 1 1/2 tablespoons peanut oil in wok until just smoking, then stir-fry remaining ginger, garlic, and pepper flakes until fragrant, about 5 seconds. Add pork and stir-fry, separating strips, until browned and barely cooked through, 2 to 3 minutes. Add vegetables and sweetened soy sauce, then stir-fry until vegetables are just heated through, about 1 minute more.
