PAINFULLY HABANERO WINGS

VERY spicy wings, I made it through three before having to give up. I created this recipe for a friend who can eat whole habaneros without flinching, so be warned!

6 habanero peppers
5 -7 piquin chilies
3 garlic cloves
1 teaspoon red chili pepper flakes
1/4 cup honey
1/2 cup tomato paste
12 chicken wings

Steps:

  • Remove the stems from the habaneros, but leave the seeds in the peppers. Blend habaneros, piquins, garlic and chili flakes in blender until a nice puree. Mix puree with the honey and tomato paste. You can brush the blend directly on to the wings and then bake, or put wings in bag with sauce, shake, and let marinate in the fridge for a few hours or overnight. When you are ready to bake wings, preheat oven to 375 degrees, place on greased baking sheet, and cook until slightly crispy - I prefer at around 45 minutes.
  • Do NOT touch your eyes after handling any of these peppers or puree or the wings themselves without washing thoroughly! Wearing gloves during preparation is a good idea also, especially if you have cuts on your hands. I love spicy food, and only made it through three of these before having to give up. These are exceptionally spicy, and eat at your own risk!
  • If you make these and find that they're too spicy, try eating some sliced ripe banana. It helps ease the burn much better than water.

2/3 cup butter
2 large habanero peppers, chopped and seeded
1 tablespoon garlic
1 3/4 tablespoons vinegar
1/2 lemon
1 3/4 cups hot sauce

1 1/2 lbs chicken wings (I get Foster Farms )
5 habanero peppers, finely minced
4 tablespoons butter
1 large onion, Chopped
5 garlic cloves, Minced
2 small limes (for about a tsp of very finely minced lime skin and all the juice and the soft pulp)
1/3 cup honey
Frank's red hot sauce

Steps:

  • I make the Dragon Wing sauce the day before, and fridge it overnight. Gives it a chance to meld.
  • Sauce:.
  • Take care when finely mincing the Habeneros (use gloves or a plastic bag to cover your hands). After cutting them open, you can scrape out the pith and seeds for a little less fire.
  • Saute the onions on medium heat in half the butter till translucent. Add in the garlic, habaneros and the rest of the butter. Saute for about 5 more minutes. In the meantime, slice off some of the skin of the limes, and super finely mince. Add all the lime juice and softer parts of the lime pulp and the minced lime zest. Let this simmer until it is thick (5 more minutes). Now add in the honey, and let this simmer until it gets thick again (about 5-10 minutes).
  • Now put in small food processor and saucify it. Fridge it overnight.
  • When making the wings, do it however you prefer. Bake 20 mintues at 500 degrees, or deep fry em first then bake. If you like, before baking, mix the dragon wing sauce with equal parts Franks. Franks lends a nice color and some flavor, and dilutes the fire of the Dragon sauce.
