I've always loved the taste of Cheddar cheese with bacon, and I thought caramelized onions would be an interesting addition to this flavor combination.

6 medium onions, thinly sliced (4 cups)
2 tablespoons olive or vegetable oil
2 tablespoons butter or margarine
1 package (16 ounces) fettuccine
1/2 pound sliced bacon
1 1/2 cups whipping (heavy) cream
2 cups shredded Cheddar cheese (8 ounces)

Steps:

  • Place onions, oil and butter in 3-quart microwavable casserole. Microwave uncovered on Medium-High (70%) 20 to 30 minutes, stirring occasionally, until onions are golden brown. Drain onions.
  • Meanwhile, cook and drain fettuccine as directed on package. Cook bacon in 10-inch skillet over low heat, turning occasionally, until crisp; drain on paper towels. Chop bacon into small pieces.
  • Heat whipping cream to boiling in 2-quart saucepan. Mix in 1 cup of the cheese and the onions. Pour over fettuccine; toss to coat. Top with remaining 1 cup cheese; sprinkle with bacon.

2 oz smoked bacon (55g (streaky, approx 2 rashers))
1 onion (small)
1 1/4 cups cooked spaetzle (170g (see other recipe, or use a small pasta))
1/2 cup gruyere (10g, finely rated, or other similar hard cheese)
2-3 chives (, finely chopped)

Steps:

  • Cut the bacon in to thin slices and finely slice the onions. Warm a small skillet over a medium heat and add the bacon.
  • After a couple of minutes, it should start to render some fat. At this point, add the onions. Continue to cook, stirring now and then, until the bacon is starting to crisp and the onions are turning a caramelized brown. This will take probably 25min or so. Don't let them burn - reduce the heat if you need to and if you are short on fat, add a little but there should be enough from the bacon.
  • Once the onions are nicely brown, add the spaetzle and cook another minute or two. Add the cheese, mix through, then serve with the chives sprinkled on top.

1 red onion, diced
½ tablespoon olive oil
¼ teaspoon salt
5 thin bacon slices, chopped
1 frozen pastry sheet, thawed in refrigerator overnight
2 Tablespoons chives, chopped
2 eggs
1 egg, beaten

Steps:

  • Pre-heat oven to 375°F (190C). Lay out the onions on a parchment lined baking sheet, drizzle .5 tbs olive oil and season with ¼ tsp salt. Mix to coat onions then spread out the onions into a thin layer. Cover with foil and bake for 25 minutes.
  • Remove from the oven and remove the foil cover. Toss onions around a bit then gather them to form a flat even layer. Besure not to leave any stray onions as they will burn in the oven. Increase oven temp to 425°F (218C) bake for 30 minutes, mixing half way through. If onions have not caramelized after 30 minutes (they will turn dark brown) mix the onion again and return to the oven for another 10 minutes.
  • Meanwhile, place bacon slices on a sheet of foil. Spread them out evenly. Fold in the sizes of the foil to avoid any rendered fat from leaking out. Place in the oven with the onions for 15 minutes then take it out and discard rendered fat.
  • Cool onion and bacon components before assemblings the galette. Turn oven to 400°F. Cut the puff pastry in half to make two rectangles. Divide and spoon the caramelized onions onto each pasty sheet along with the bacon. Fold in the sides of the pastry, then push the onion and bacon towards the edge of the pastry to make a well for the eggs. Carefully crack the eggs in the well you made. Brush the pastry with egg wash then bake for 15 minutes at 400°F. To serve, season with salt and pepper, garnish with chives and serve hot!

Surprising and delicious and so inexpensive! I love this because it uses ingredients we always keep on hand. You can make the sauce rich with cream or skinny with skim milk. The recipe doubles well and makes a different brunch and even children seem to like it. I got it from a 24-year-old Sunset book on country French cooking, where it was called Oeufs a la Tripe, I think because all those onions in cream sauce look like creamed tripe. I changed the name, needless to say.

2 large onions
2 tablespoons butter
2 tablespoons flour
2 cups milk
salt and pepper
paprika

Steps:

  • Bring the eggs to a boil in water to cover. Boil 5 minutes, remove from heat, and let stand 20 minutes. (This technique avoids the green ring around the yolk.) Drain and peel and cut into 1/2-inch slices.
  • Slice the onions into rings. Melt the butter in a very large skillet over low heat and add the onions. Salt them lightly, stir to coat with butter, cover the pan and cook for about 10 miutes. Stir, cover, and cook for about 10 minutes longer, stirring occasionally. Uncover and let most of the liquid cook away. Onions should be very tender and browned.
  • Sprinkle flour over the onions and stir until no dry flour is visible. Whisk in the milk and cook, stirring or whisking, until thickened, about 4 minutes. Salt and pepper to taste. Stir in the sliced eggs and heat through.
  • TO SERVE TO GUESTS -- sprinkle with chopped fresh parsley and/or paprika, because this dish is a little bland-looking. ADVANCE PREP -- the eggs can be boiled and refrigerated up to 3 days in advance. The onions can be caramelized 3 days in advance and refrigerated.

16 ounces bacon
2 cups caramelized onions (3 large onions)
2 tablespoons butter
3/4 cup mayo
3/4 cup sour cream
2 cups shredded Provolone cheese (divided)
1 teaspoon garlic powder
fresh ground pepper (to taste)
salt

Steps:

  • Preheat oven to 375 degrees.
  • Slice 3 large onions into strips and caramelize with butter in a skillet set over medium heat for 30-45 minutes, or until tender and sticky. Once finished, deglaze the pan with 1/4 up of liquid* while scraping the bottom to losen any cooked on fond. Cook until the liquid evaporates.
  • Cut bacon into 1" chunks and cook until crisp, set aside.
  • Boil pasta in salted water, one minute shy of al dente. (~10 minutes, but refer to package instruction)
  • In large bowl combine mayo, sour cream, garlic powder and pepper in a bowl and stir to combine.
  • Add bacon, 1 cup of Provolone cheese and caramelized onions and stir further.
  • Finally mix in noodles.
  • Pour pasta and sauce into a lasagna pan, sprinkle with remaining 1 cup of cheese and bake uncovered in oven for 20 minutes.
  • Turn broiler on for final 2-5 minutes and broil till cheese is browning slightly, monitoring closely.

This has been in our family for as long as I remember. It is truly "comfort" food to me! Easy recipe for those nights when you are too tired to cook a whole dinner, just add a salad or green veggie, and you have a nutritious meal!

1/2 lb pasta, of your choice (I like thin spaghetti, angel hair or 1/2 lb elbow macaroni)
6 eggs
1/4 cup butter (or more to taste. Butter tastes better than margarine, but you may use margarine)

Steps:

  • Cook pasta to al dente, according to package directions.
  • Drain well.
  • Add butter to pan, and allow to melt.
  • Return drained pasta and mix well with butter.
  • In a separate bowl, beat eggs well.
  • Add the eggs to pan, and mix well.
  • Return to med heat, and stir CONTINUOUSLY, scraping egg from bottom, until eggs are scrambled well and cling to pasta. This step goes very quickly, so watch pot closely.
  • Serve immediately.
  • To easily clean pan, rinse with COLD water. Empty pan of water, and add a generous portion of SALT, and a dot of dish detergent to pan. Scrub with a scrubbie under cold water until clean. Finish by running under hot water or place pan in dishwasher to disinfect.

2 tbsp. butter
1 ½ tsp. sea salt
½ tsp. freshly ground black pepper

  • 1. Melt the butter in a medium pan and slowly sauté the onions over very low heat.
  • 2. Add the sugar (if necessary, add a little bit of water)
  • 3. Cook until the onions are completely softened and caramelized. The best way to caramelize onions in a pan; Cook for 5 minutes, stirring occasionally. When the onions begin to turn a brownish color, turn heat to low and cook the onions for 25-30 minutes, stirring occasionally. Once they are a dark, deep brown and sticky with caramelization, they're done!
  • 4. Make 4 wells among the onions.
  • 5. Break an egg into each well, and season with sea salt and freshly ground black pepper.
  • 6. Cover the pan with a lid and cook until the whites are done to your liking and the yolks are still runny.
  • 7. Garnish with a sprinkle of sumac and enjoy.

I came up with this simple, wonderful recipe through trial and error. It really hits the spot and only take minutes to make. My whole family loves it - even my picky 5 year old! So quick, so easy! Garnish with grated Parmesan cheese.
