HERB AND GOAT CHEESE TOASTS



Herb and Goat Cheese Toasts image

1 baguette, sliced
8 ounces fresh goat cheese
12 blades fresh chives
2 sprigs fresh rosemary, leaves stripped from stem
1/4 cup flat-leaf parsley, 2 handfuls of leaves
Coarse black pepper
1 crusty roll, sliced thin on an angle
2 ounces fresh goat cheese, 2 buttons
1 tablespoon fresh chopped parsley
3 blades chives
1/2 a sprig of rosemary, stripped

Steps:

  • Arrange sliced baguette or sliced crusty roll rounds on a cookie sheet or broiler pan. Toast under hot broiler until lightly golden on each side. Remove toasts from broiler and arrange on a serving plate. Remove goat cheese log or buttons from packaging and set on cutting board. Chop and combine fresh chives, rosemary and parsley. Add coarse black pepper to the herb mixture. Roll goat cheese in the herbs to coat evenly. Set goat cheese alongside toasts. Using a spreader or butter knife, spread herbed cheese on warm toasts.

1 8-ounce French-bread baguette
8 ounces soft fresh goat cheese
1/4 cup honey
1/2 cup chopped toasted walnuts
1/2 tablespoon chopped fresh rosemary

Steps:

  • Preheat oven to 350°F. Cut eighteen 1/4-inch diagonal slices from baguette. Spread goat cheese on each slice. Arrange in single layer on rimmed baking sheet. Bake until edges are slightly golden and cheese softens, about 10 minutes. Set aside on sheet. Heat honey in small saucepan over medium heat until warm, about 2 minutes. Sprinkle toasts with walnuts, then rosemary. Drizzle with honey and serve.

An easy holiday appetizer, this goat cheese crostini features walnuts, rosemary and a drizzle of honey.

1 baguette
8 oz. goat cheese
1/4 cup honey
1/2 cup walnuts (pecan or hazelnuts (*you can chop or leave larger, or a bit of both))
1/2 tablespoon fresh rosemary (finely chopped)

Steps:

  • Preheat oven to 350°F.
  • Toast the walnuts: Lay walnuts on a baking sheet. Roast in 350° F. oven, until they start to brown and you can smell the toasted nut scent, 7 to 10 minutes. Remove and set aside to cool.
  • Cut eighteen 1/4-inch diagonal slices from baguette. Spread goat cheese on top of each slice. Arrange the pieces in a single layer on a rimmed baking sheet. Bake until edges of the bread are slightly golden and the cheese has softened, about 10-15 minutes.
  • While these are baking, chop the nuts and the rosemary and place honey in a small saucepan over low heat to warm (*You could also put into a glass container and microwave to warm).
  • When toasts are done, sprinkle with chopped walnuts (or place one larger piece) and then sprinkle with rosemary. Heat honey in small saucepan over medium heat until warm, about 2 minutes. Sprinkle toasts with walnuts, then rosemary. Place warmed honey in a small jar or bowl and serve with your toasts for guests to drizzle honey over before they eat.

whole-grain bread, 4 slices, each about 2 1/2 by 5 inches (6 by 13 cm), lightly toasted
fresh goat cheese, 3 oz (90 g), at room temperature
walnuts, 1/4 cup (1 oz/30 g) coarsely chopped
roasted walnut oil, 1 tsp
sea salt and freshly cracked black pepper
honey, for drizzling
fresh thyme leaves, 1/2 tsp

Steps:

  • Preheat the oven or toaster oven to 375°F (190°C). Arrange the toasts on a small rimmed baking sheet. Spread the toast slices evenly with the goat 1 cheese, and sprinkle with the walnuts, dividing them evenly. Drizzle 1/4 tsp of the walnut oil over each toast. Bake until the walnuts are toasted and the cheese is warm, about 5 minutes.
  • Transfer the toasts to plates and season with salt and pepper. Drizzle each toast with honey, then sprinkle with the thyme leaves and serve.

1 loaf French baguette, sliced into 36 1/2 inch segments
3 tablespoons olive oil
8 ounces soft fresh goat cheese
4 ounces cream cheese
2 teaspoons Italian parsley, finely chopped
2 teaspoons thyme leaves, finely chopped
2 teaspoons lemon peel, finely grated

Steps:

  • Preheat oven to 375 degrees F.
  • Arrange the bread slices on a large baking sheet.
  • Brush olive oil over the bread slices.
  • Bake until pale golden and crisp, about 15 minutes.
  • Blend goat cheese and cream cheese in a food processor until smooth and creamy.
  • Add parsley, thyme and lemon peel; pulsing to blend.
  • Season with salt and pepper to taste.
  • Place in a serving dish along side the toast and brushetta mix.
