1 pound calf's liver, cut into 1/2 inch thick pieces
1 1/2 cups whole milk
4 tablespoons unsalted butter
2 medium onions, thinly sliced
1/2 cup all-purpose flour
Coarse salt and freshly ground pepper
2 tablespoons sunflower or other neutral-tasting oil, plus more as needed
4 fresh sage sprigs, thinly sliced

Steps:

  • Place liver in a nonreactive (ceramic or glass) bowl and pour milk over. Refrigerate, covered, 5 to 6 hours.
  • In a large skillet, heat 2 tablespoons butter over medium-high heat. When butter is shimmering, add onions. Cook, stirring occasionally, until softened and translucent, 5 to 10 minutes. Reduce heat to medium-low and continue to cook, stirring more frequently until onions are very soft and brown, 30 to 40 minutes more.
  • Drain liver and discard milk. Pat liver dry with paper towels.
  • Spread flour on a plate and season with salt and pepper. Thoroughly coat liver with the flour mixture, shaking off excess.
  • Heat a large (13-inch) saute pan over medium heat and add remaining 2 tablespoons butter and the oil and heat until shimmering. Cook (in batches, if necessary, to avoid crowding pan) until liver is firm (but not hard) and browned on the outside but still slightly pink in the center, 1 to 2 minutes per side. Repeat with remaining liver, adding more oil to the pan as necessary. Add sage and cook for 1 minute more.
  • Divide liver among plates and top with onions.

2 pounds calf's liver, cut into 6 pieces
1 cup whole milk
8 bacon slices, cut into 1/2-inch pieces
3 tablespoons unsalted butter
2 large onions, thinly sliced
3/4 cup all-purpose flour
1 teaspoon Essence, recipe follows
1 teaspoon salt
1/2 teaspoon black pepper
1 cup dry sherry
1 tablespoon beef broth
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large glass baking dish, add liver and milk and let soak for 20 minutes.
  • In a large skillet over medium heat, add bacon and butter and cook until fat has rendered, about 6 minutes. Transfer bacon to paper towels to drain and reserve 3 tablespoons fat in skillet. Reserve remaining fat.
  • Cook onions with salt and pepper, to taste, in bacon fat in skillet over moderate heat for 10 minutes or until caramelized. Transfer onions to a bowl and add bacon. Set aside.
  • Pat liver dry and discard milk. In a large zip-top bag, add flour, Essence, salt and pepper. Working in batches, add liver and shake to coat. Set aside on baking sheet until ready to cook.
  • Add 2 tablespoons reserved bacon fat to skillet over high heat and add liver; cook for 2 to 3 minutes on each side. Turn liver over, remove pan from heat, add sherry and beef broth, return pan to heat and shake and flambe. Cook on second side for about 2 minutes or until cooked through. Serve liver with pan sauce, topped with onions and bacon.
  • Combine all ingredients thoroughly.

2 thick slices bacon (2 ounces), cut into 1-inch pieces
1 large onion, thinly sliced
1 to 2 tablespoons extra virgin olive oil, more as needed
1 small head radicchio, halved, cored and thinly sliced
Kosher salt
freshly ground black pepper
1 teaspoon honey
1/2 teaspoon red wine vinegar
1 1/2 pounds calf's liver, sliced 1/4-inch thick
Chopped parsley, for garnish (optional)
Cooked polenta, for serving (optional)

Steps:

  • In a large skillet, sauté bacon and onion until both are well browned and onions are tender, about 10 minutes. If pan starts to dry out, add a tablespoon of olive oil.
  • Add radicchio and a large pinch of salt and pepper and continue to sauté until radicchio is very tender, about 5 minutes longer. Stir in the honey and vinegar, then transfer mixture to a serving platter and cover loosely with foil to keep warm.
  • Wipe out skillet and add a tablespoon of oil. While it heats, season liver with salt and pepper. Add liver to pan, in batches if necessary, and sauté for about 2 minutes a side over high heat. (Add more oil to pan between batches if necessary.) Liver is done when it is golden on surface but still pink on inside. As pieces cook, transfer them to serving platter on top of radicchio mixture. Garnish with parsley and serve over polenta if desired.

1 cup whole milk
8 bacon slices, halved crosswise
3 medium onions, halved lengthwise, then cut lengthwise into 1/4-inch slices

Steps:

  • Soak liver in milk in a bowl 20 minutes.
  • While liver is soaking, cook bacon in a 12-inch nonstick skillet over moderate heat, turning over occasionally, until crisp. Transfer bacon to paper towels to drain and reserve 2 1/2 tablespoons fat in skillet, transferring remaining fat to a small bowl.
  • Cook onions with salt and pepper to taste in fat in skillet over moderate heat, stirring frequently, until golden brown, 12 to 15 minutes. Transfer onions to a bowl and add bacon. Keep warm, covered.

3/4 cup flour
1/2 cup vegetable oil
2 medium onions, sliced

Steps:

  • Cut liver in small serving size pieces.
  • Salt and pepper pieces.
  • In a 12 inch skillet heat vegetable oil.
  • Make sure it is good and hot (I use medium high).
  • Lightly roll pieces in flour.
  • Saute in hot oil till brown on one side, turn and brown the other side.
  • About 4 minutes per side.
  • Remove from skillet and keep warm.
  • Add onions to skillet and fry about 5 minutes till crisp tender.
  • Put onions over liver and serve.

4 black mission figs, cut into1/4 inch disks
1/2 cup Chinese vinegar
1/2 cup balsamic vinegar

  • Pre-heat hot a large, thick skillet. Season the liver with salt and green peppercorn. Add 1 1/2 tablespoons of butter and sear the liver until brown on both sides, about 8-10 minutes. I prefer my liver medium. Place livers on warm plates. Place skillet back on the heat, add shallots and brown, about 3-5 minutes. Season with salt and black pepper. Add figs and sautee for 1 minute. Deglaze with the vinegars and reduce by 50%. Whisk in butter and check for seasoning. Reserve in a water bath.

4 ounces smoked bacon
1 tablespoon butter
1 yellow onion

1 tablespoon maytag blue cheese
1 handful arugula

  • Heat olive oil in medium skillet over medium high heat. Lightly flour liver and place in pan and sear for 5 seconds and flip. Add arugula and garlic and quickly saute Deglaze with balsamic vinegar and serve over onion tart, recipe follows.
  • For the Tart: Render diced bacon until crispy. Add butter, onion, rosemary and cook until tender. Season with salt and pepper. Roll out dough and plate filling in middle and top with blue cheese. Fold over edges and bake in a preheated 500 degree oven until golden brown, approximately 10 to 12 minutes. Serve with calves liver.

6 tablespoons (3/4 stick) unsalted butter
3 small onions, thinly sliced across width

Steps:

  • Fry bacon until crisp. Drain on paper towels and reserve.
  • Melt 4 tablespoons butter in a medium skillet over moderate heat. Cook shallots with salt until soft and nearly golden, about 3 minutes. Add cooked bacon, stirring briefly to rewarm. Add vinegar, turn the heat to high and reduce by half. Add stock and reduce again by half. Break remaining butter into small pieces and whisk into sauce until smooth. Whisk in mustard and remove from heat.

3 tablespoons sherry vinegar
3 tablespoons chicken broth
2 tablespoons chopped flat-leaf parsley

Steps:

  • 1. Cook bacon in a large skillet over medium heat until crisp but not burned. Using a slotted spoon, remove bacon to paper towels to drain. Set aside, covered with foil to keep warm.
  • 2. In the same skillet, cook the onions over medium heat until wilted and golden, stirring occasionally, about 20 minutes. Remove with a slotted spoon to a bowl, cover and keep warm.

6 thin slices calf's liver, about 1 1/2 pounds
Salt to taste, if desired
Freshly ground pepper to taste
2 tablespoons olive oil
2 cups thinly sliced onions
1/4 cup corn oil
3 tablespoons butter
1/3 cup drained capers
1 tablespoon red wine vinegar
2 tablespoons finely chopped parsley

Steps:

  • Trim away and discard any tough membranes in the liver slices. Cut the slices into thin strips about a quarter of an inch wide. Sprinkle with salt and pepper and set aside.
  • Heat the olive oil in a small heavy skillet and add the onions. Cook, stirring often, over moderately high heat about 10 minutes or until onions are golden brown. Reduce heat as necessary. Do not allow the onions to burn or they will be bitter.
  • When the onions are almost ready, heat a wide, heavy skillet and add two tablespoons of the corn oil. When hot and almost smoking, add half of the liver strips. Cook over high heat, turning the liver pieces so that they cook evenly. Cook about three minutes. Scoop out the pieces and transfer them to a warm serving dish.
  • Heat the remaining two tablespoons of corn oil. When it is very hot, add remaining liver strips. Cook as before. Remove the liver and add to the initial batch.
  • Pour off all fat from the skillet and wipe it out thoroughly. Return the skillet to the heat and add the butter and capers. Cook, shaking the skillet and stirring, about one minute. Add the liver and onions. Stir to blend well.
  • Cook until thoroughly hot. Sprinkle with the vinegar and toss about 15 seconds. Add salt and pepper to taste. Sprinkle with chopp edparsley and serve.

4 tablespoons olive oil
1 cup thinly sliced onion
1/4 teaspoon dried sage
1 lb calf liver, cut crosswise into 1/4 inch strips
kosher salt
fresh ground black pepper
2 tablespoons white wine vinegar
2 tablespoons italian flat leaf parsley, finely chopped

Steps:

  • Heat 2 tablespoons olive oil in a heavy 8 or 10 inch skillet.
  • Add onions and cook over moderate heat, for 7-8 minutes, stirring frequently.
  • Stir in the sage, cook 2-3 minutes longer, until the onions are limp and lightly colored.
  • Set aside, off heat.
  • Pat the liver strips dry with paper towels and season them with salt and a few grindings of pepper.
  • In another large heavy skillet, heat the remaining 2 tablespoons of oil until a light haze forms over it.
  • Drop in the liver strips and saute them, turning frequently, for 2 or 3 minutes, or until they are lightly browned on all sides.
  • Stir in the onions and cook with the liver for 1 or 2 minutes.
  • Transfer the liver and onions to a heated platter.
  • Immediately pour the white wine vinegar into the skillet and deglaze.
  • Pour the sauce over the liver and onions and sprinkle with the chopped parsely.
  • Serve immediately.

1/2 cup virgin olive oil
2 large onions, thinly sliced
1/4 lb thinly sliced pancetta
1 cup red wine vinegar
1/2 cup sugar
1 cup dry red wine
12 baby turnips, with tops halved
1 lb calf liver, cut into 1/4-inch thick slices
2 cups Wondra Flour, seasoned with salt and pepper
1/2 cup dry white wine
1/4 cup balsamic vinegar
1/4 cup finely chopped flat leaf parsley

Steps:

  • Preheat the oven to 400°F.
  • In a large skillet, heat 1/4 cup of the olive oil over medium heat.
  • Add the onions and cook slowly until caramelized.
  • Use a slotted spoon and remove to a bowl.
  • Place the pancetta on a baking sheet and cook in the oven until crisp, 12 to 15 minutes.
  • Transfer to paper towels to drain.
  • Combine the vinegar, sugar and wine in a 6-quart saucepan and bring to a boil.
  • Add the turnips and cook for 5 minutes, or until tender.
  • Remove the turnips and drain.
  • In a clean skillet, heat the remaining 1/4 cup of olive oil.
  • Dredge the liver in the seasoned flour, and add half of the slices to the skillet.
  • Cook the liver, undisturbed, over moderately high heat until dark brown, 3 to 4 minutes.
  • Transfer to a platter.
  • Add the balsamic vinegar and caramelized onions to the skillet and bring to a boil, then reduce the heat and simmer for 3 minutes.
  • Return the liver to the skillet and cook for a minute, then add the parsley.
  • Transfer the liver and sauce to a platter, top with the pancetta and turnip halves and serve.
  • Serve with brown rice and biscuits.

Steps:

  • Heat 1 tablespoon of the olive oil in a nonstick skillet. Add the onions, salt and pepper. Cook over medium heat for about 4 minutes, stirring and tossing until lightly browned and tender. Drain and set aside.
  • Blend the flour with salt and pepper and dredge the liver slices on all sides in the mixture. Shake off the excess.
  • Heat the remaining 1 tablespoon of oil in a nonstick skillet large enough to hold the liver slices in one layer. Add the liver and cook over high heat on one side (2 minutes for thin slices; a minute longer for thicker slices). Turn the liver and cook 2 minutes more or according to taste. Transfer the liver to a heated platter.
  • Add the butter to the skillet over medium-high heat. Add the capers and cook 1 minute, stirring. Add the cooked onions, stirring well with a wooden spatula. Add the vinegar and parsley. Blend well, swirling. Pour over the liver and serve immediately.

3 tablespoons of olive oil
1 large onion, sliced
1 clove garlic, minced
1 teaspoon fresh thyme leaves
1 teaspoon fresh rosemary leaves
Coarse salt and freshly ground pepper to taste
2 apples, peeled, cored and cut in slices 1-inch thick
2 tablespoons unsalted butter
3/4 pound calf's liver, trimmed of gristle and sliced into 1 1/2-inch strips
1/2 cup white wine

Steps:

  • Heat two tablespoons of olive oil in a large frying pan. Add onion and cook it slowly over low heat, uncovered, with garlic, thyme, rosemary, salt and pepper. The onion should take about 45 minutes to become tender and almost caramelized. Do not let it burn.
  • Meanwhile, saute apples in butter until lightly brown. Set aside and keep warm.
  • Remove the onion from frying pan and keep warm. Add remaining olive oil (a little more if necessary) and saute liver quickly on both sides (about three minutes altogether) in order for it to be pink. Add the wine and over high heat scrape up the cooking juices. Put liver onto a serving dish with onions and top with apple. Serve immediately.

1/4 cup canola oil
2 onions, sliced
1 red pepper, sliced
1 lb beef liver or 1 lb calf liver
1/2 cup whole wheat flour
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Steps:

  • Remove all visible membranes from liver.
  • Slice liver into thin strips.
  • Set aside.
  • In a heavy frying pan, heat one tbsp of the oil on medium, saute onions and red pepper for about 5 minutes.
  • Remove from pan and keep warm.
  • Combine flour and herbs.
  • Dredge liver in flour mixture.
  • Heat remaining oil in same frying pan on medium-high.
  • Saute liver slices quickly for about 3 minutes or until brown on the outside but still pink inside.
  • DO NOT OVERCOOK.
  • Add cooked vegetables to pan.
  • Stir to combine.
  • Serve immediately.
